THE BEST TOFU SCRAMBLE
If you like a softly scrambled egg on toast, you're going to love this soft-scrambled tofu recipe. The secret is the addition of Indian black salt (also known as kala namak or black lava salt), which has an egglike flavor and is available online or at specialty food stores. Because it is lower in sodium, we round out the dish with a little kosher salt too. We like our scramble on toast but it would also make a great filling for a vegan breakfast burrito.

- Gently wrap the tofu in a clean kitchen towel or a double layer of paper towels to blot out excess moisture. Place the tofu in a medium bowl. Add the black salt and turmeric and stir well with a fork, crumbling the tofu and fully combining the spices.
- Melt the vegan butter in a medium nonstick pan over medium-high heat, swirling the pan to coat evenly. Add the tofu mixture and spread it out evenly in the pan using a rubber spatula. Season with a pinch of kosher salt and a few grinds of pepper and cook undisturbed until the edges begin to turn yellow from the turmeric and some moisture is bubbling up, about 1 minute 30 seconds.
- Gently stir the scramble, folding the cooked side over and redistributing the tofu to allow it to cook in an even layer. Continue to cook, stirring every 1 minute 30 seconds, until most of the moisture is evaporated and the tofu is the consistency of custardy scrambled eggs, 7 to 9 minutes. As it simmers, more liquid will bubble up and then it will dry out and the scramble will turn a uniform pale yellow color.
- Meanwhile, toast the bread. Divide the scramble between the bread slices and top each with half the vegan cheese.
TOFU SCRAMBLE
This vegan egg scramble is made using tofu and seasonings like nutritional yeast, Kala Namak salt, and paprika. You can add your favorite veggies for some added nutritional benefit and tastiness.

- Drain the tofu, then break it apart using your hands or a couple of forks, until it resembles egg scramble.
- Mix together the tofu, nutritional yeast, garlic, onion, Kala Namak, turmeric, paprika, and pepper. Let sit for 5 minutes to let the flavors sink in.
- On medium-low heat, sauté tofu until hot, about 8-10 minutes. I use a nonstick pan to cook my scramble, so I don't find oil is necessary, but you can cook in 2 teaspoons of oil.

DELICIOUS SCRAMBLED TOFU
I adapted this from a friend's recipe. My family requests this a lot for breakfast. Tastes great on toast or by itself. I LOVE avocado and find it tastes great sliced on toast with the scrambled tofu.

- In a skillet mix tofu and everything except the tomatoes together well. Heat for 5 to 8 minutes.
- Add the tomatoes and then continue heating until thoroughly heated (about 5 to 8 minutes more.

YUMMY TOFU SALSA SCRAMBLER
Ready, Set, Cook! Special Edition Contest Entry: I am not a vegan or vegetarian, but I love this dish. It can be done any time of the day and is very filling. Super high protein and very healthy! This has been adapted from the original one I posted, but anything can be added for more goodness. If you do not have the tofu mix use Fantastic World Foods Vegetarian Nature's Burger 1/4 cup.

- Chop peppers, spinach and green onions.
- Cook Simply Potatoes in a large frying pan with non-stick butter spray under medium/low heat.
- Add pepper and cumin.
- Put tofu in bowl and mush with fork till everything is in crumbles You want it to resembled a scrambled look so maybe 1/2 or more of each cube size.
- Add in Tofu Scramble seasoning and continue cutting and mixing.
- Add mixture to frying pan with potatoes. Raise heat to med/high.
- Microwave sausage links as instructed on box and cut/mince into little tiny pieces and put into frying pan.
- Add salsa and cook until you start seeing a golden brown. About 5-10 minutes.

- Microwave sausage links as instructed on box and cut into little tiny pieces and put into frying pan.

- Heat oil in a large skillet. Saute onion 2 minutes over medium high heat, then turn heat to medium add garlic and other veggies. Lightly salt. Sauté until al dente, turning heat down if necessary and/or covering.
- Once veggies are just tender, make a well in the center of the pan and add the tofu, and saute it back at medium heat. If the tofu sticks – instead of adding more oil- try letting it form a golden crust, before trying to flip it, and use a metal spatula. (When something “browns” in a pan, it will naturally detach from the pan.)
- Season tofu with salt, pepper and turmeric. When tofu is starting to have some crispy edges, fold it into the veggies, and taste. If it tastes bland, it most likely needs a little salt and I like to add a very tiny drizzle of Bragg’s liquid aminos or soy sauce. ( Use a light hand).
- Many people like to add nutritional yeast for a rich, cheesy flavor- so feel free to add teaspoon or two if so inclined.
