2 Cups Oatmeal
1 Cup Flour
1/2 tsp Salt
1/2 Cup Vegetable Oil or Butter
1/4 tsp Baking Soda
1/2 Cup Brown Sugar
1/4 Cup Hot Water

Steps:

  • Preheat oven to 400 degrees and line baking sheet with parchment paper.
  • Dissolve baking soda in hot water (add a little more water if needed).
  • Combine dry ingredients with butter, then add dissolved baking soda.
  • Mold into a dough ball, then press it out onto a baking sheet. You can roll it out with a dough pin to make it thin as you want it to be (I recommend about 1/4 inch thick.)
  • Cover and chill for 10-15 minutes to firm up the dough, then remove the oatcakes and score down the middle and across to make 8-10 squares (you'll use these lines for clean cuts after it's done baking).
  • Bake for 12-15 minutes until they are golden brown. They should be crisp and crunchy, not chewy.
  • Separate the cakes along the score lines with a thin knife and then allow them to cool.
  • Enjoy with your favorite coffee or tea or add them to your day pack for some quick energy during a hike or a long road trip.

Oatcakes are a traditional teatime item in Nova Scotia. They are equally good with a cup of coffee anytime.

2 cups rolled oats/traditional oatmeal (not quick-cooking or instant)
1 cup all-purpose flour
3/4 cup brown sugar
1 1/4 teaspoons fine sea salt
1/4 teaspoon baking soda
3/4 cup shortening or butter
1/4 cup very hot or boiling water

Steps:

  • Preheat an oven to 375 F. In a large bowl, combine the oats, flour, sugar, salt, and baking soda. Add the shortening or butter and use 2 knives, a large fork, or your fingers to work the fat into the dry ingredients.
  • Pour in the hot water and stir until everything comes together into a thick, sticky dough.
  • You can roll the dough out on a well-floured surface, cut it into shapes, and set them on a large baking sheet. Or keep things simple and simply press the dough into an even 1/4-inch layer on a baking sheet. Score this large "cake" into smaller pieces: Use a knife to cut the dough into squares or rectangles or whatever shapes you like, but don't bother to separate the pieces; the pieces will bake back together but be easy to cut or break along that original cut line.
  • Bake until golden, about 12 minutes. You can take them out now for chewier oatcakes or reduce the oven temperature to 325 F and bake until lightly browned, about 10 more minutes, for crisper oatcakes.
  • When they have finished baking, if you've cut them into shapes, let them cool; if you've scored them, cut them apart while warm so they cool into squares (or rectangles or triangles or whatever you've cut them into).
  • Serve and enjoy.

Crispy and chewy, these easy oatmeal breakfast cookies are stuffed with nuts, seeds and chocolate and make a delicious breakfast treat.

1 cup (225g) butter (room temperature )
1½ cups (300g) brown sugar
2 eggs
3 cups (240g) rolled oats
1 cup (85g) desiccated coconut (unsweetened)
¾ cup (100g) flour
1 tsp baking powder
1 tsp salt
¼ cup (50g) seeds
¾ cup (100g) dried cranberries
2/3 cup (100g) dark chocolate (chopped (optional))
1 cup (100g) pecan nuts (roughly chopped )

Steps:

  • In the bowl of a freestanding mixer, cream the butter and sugar together until light and fluffy.
  • Add the eggs and beat in then scrape down the bowl with a spatula.
  • Add the oats, coconut, flour, baking powder, cinnamon, salt, seeds, cranberries, chocolate and nuts then mix until just combined.
  • Using a cookie scoop, scoop dough and place onto a lined sheet pan.
  • Place the pan in the fridge and allow to chill for 15 minutes while you preheat the oven to 180°C/320°F.
  • Remove the cookie dough from the fridge then place the dough onto two lined sheetpans/cookie sheets, a few cm's/inches apart.
  • Place in the oven and allow to bake for 10-15 minutes until golden brown and crisp around the edges.
  • Remove from the oven, then transfer to a wire rack and allow to cool completely before serving.

½ cup chopped walnuts
⅓ cup raisins
2 tablespoons ground flax seeds
1 teaspoon ground cinnamon

2 ripe bananas
2 eggs
⅓ cup unsweetened applesauce
1 tablespoon honey
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Grind 2 1/4 cups oats in a food processor to yield 2 cups ground oats. Add walnuts, raisins, flax seeds, cinnamon, baking powder, and salt. Stir in remaining 1 cup oats. Stir thoroughly with a spoon, but do not grind further.
  • Make a well in the center of the oat mixture. Add bananas, eggs, applesauce, honey, and vanilla extract. Mash together and stir in oat mixture. Drop tablespoonfuls of the cookie dough on the baking sheets.
  • Bake in the preheated oven until edges are set, about 14 minutes.

1 cup oats
½ teaspoon baking soda

1 egg
¼ cup butter
85 g maple syrup
½ cup white sugar
¼ cup brown sugar
¼ cup walnuts, chopped
¼ cup raisin
½ cup shredded coconut
1 teaspoon cinnamon

Steps:

  • Melt your butter in a microwave-safe bowl.
  • In a medium bowl, whisk together the sugar, maple syrup, egg, and the butter until well-combined.
  • In another bowl, whisk the almond flour, all purpose flour, salt, cinnamon and baking soda together.
  • Sift the dry ingredients into the wet mixture. Combine well.
