GOOEY S'MORES CAKE BARS

- Heat oven to 350°F. Line 9-inch square pan with nonstick foil, allowing foil to hang over sides of pan for easy removal after baking.
- In medium bowl, beat cream cheese and butter with electric mixer on medium speed until well blended. Add egg; beat well. Stir in cake mix by hand until well combined (mixture will be thick). With hands buttered or sprayed with cooking spray, press about 2 1/4 cups cake mixture in pan. Pour condensed milk on top of cake mixture. Top with crushed graham crackers, marshmallow halves and half of the chocolate pieces. Drop remaining cake mixture by spoonfuls on top.
- Bake 32 to 35 minutes or until marshmallows are golden brown and cake mixture is set on top. Remove from oven to cooling rack; cool 15 minutes. Top with remaining chocolate pieces. Cool completely, at least 2 1/2 hours. Cut into 4 rows by 4 rows.

- In a saucepan on low heat, combine marshmallows and milk. Cook until marshmallows are melted, and mixture starts to boil. Remove from heat.
- In a large bowl, beat cream cheese until smooth. Stir in egg yolk. Fold in 1/3 of the melted marshmallow mixture, then quickly fold in remaining marshmallow until no streaks remain. Stir in lemon juice.
- In a large bowl, beat cream until soft peaks form. Fold the whipped cream into the cream cheese mixture until no streaks remain. Spread into graham crust. Refrigerate for 3 hours.

- In a large bowl, combine the first six ingredients. In a small bowl, whisk the egg whites, soy milk, applesauce and oil. Stir into dry ingredients just until moistened. Transfer to a 13x9-in. baking pan coated with cooking spray., Bake at 350° for 12-15 minutes or until a toothpick inserted in the center comes out clean. Sprinkle with marshmallows. - Heat oven to 350°F.
- Grease and flour 13x9-inch pan.
- In medium bowl combine flour, graham cracker crumbs, baking powder, baking soda and salt; mix well; set aside.
- In large bowl, beat brown sugar, shortening and eggs until well blended.
- Add dry ingredients and milk; mix at low speed 1 minute.
- Stir in 2/3 cup of the chocolate chips.
- Spread batter evenly in greased and floured pan.
- Bake at 350°F for 25 to 35 minutes until toothpick inserted in center comes out clean.
- Cool 15 minutes.
- Meanwhile, melt remaining 1/3 cup chocolate chips in small saucepan over low heat.
- Spoon teaspoonfuls of marshmallow creme onto top of warm cake; carefully spread with knife dipped in hot water.
