A delicious, classic chicken dish -- lightly coated chicken breasts braised with Marsala wine and mushrooms. Easy and ideal for both a quick weeknight entree AND serving to company.

¼ cup all-purpose flour for coating
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon dried oregano
4 skinless, boneless chicken breast halves - pounded 1/4 inch thick
4 tablespoons butter
4 tablespoons olive oil
1 cup sliced mushrooms
½ cup Marsala wine
¼ cup cooking sherry

Steps:

  • In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture.
  • In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.

4 - boneless chicken breasts
1/4 cup(s) all purpose flour
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/2 teaspoon(s) dried basil
1 package(s) sliced mushrooms
3 tablespoon(s) butter
3 tablespoon(s) olive oil
1/2 cup(s) marsala wine
1/2 cup(s) chicken stock
1/2 cup(s) heavy whipping cream

Steps:

  • Start by combining the flour, salt, pepper and basil into a sallow dish to coat the chicken in, mix well.
  • Heat Oil and Butter in a heavy non-stick skillet over medium heat.
  • Coat Chicken in flour mixture. Make sure that the whole chicken is covered.
  • Add Chicken to the skillet and cook chicken until lightly browned on first side, about 2 to 3 minutes. Turn the chicken over and add the mushrooms around the chicken. Cook about 2 minutes longer, until lightly browned and stir the mushrooms.
  • Add the Marsala wine to the pan. Reduce heat to medium-low; cover and simmer for 10 minutes.
  • While the chicken and sauce is simmering, make pasta (I prefer linguini) to make with the chicken marsala. Once you are done making the pasta, rinse out, add some olive oil, a little bit of butter and viola!

4 boneless skinless chicken breasts
1 bottle Italian salad dressing
1 cup flour
1/4 cup margarine
1/2 cup chicken broth
1/2 cup marsala or 1/2 cup other white wine
1 lb sliced mushrooms
1/2 cup chopped fresh parsley
pepper
garlic powder
italian seasoning
paprika
1/4 cup olive oil

Steps:

  • Marinate chicken in Italian dressing several hours or overnight.
  • In large bowl or zip-lock bag, combine flour, pepper, garlic powder,Italian seasoning and paprika.
  • Remove chicken from marinade and coat with flour mixture.
  • In large non stick skillet, heat margarine and olive oil until hot.
  • Brown chicken and transfer to baking dish and set aside for a few minutes.
  • Deglaze same skillet with the wine and chicken stock and bring to hard boil.
  • Add sliced mushrooms and cook for a few minutes.
  • Pour over chicken and sprinkle with fresh, chopped parsley.
  • Bake in 450 degrees oven for 15 minutes.
  • Eat with your favorite pasta and ENJOY!

4 fresh boneless chicken breasts
4 tablespoons unsalted butter
1 garlic clove
1/4 lb sliced mushrooms
1 fresh lemon
1 teaspoon salt
1/2 teaspoon black pepper
1/2 tablespoon dried basil
16 ounces linguine
1/2 cup marsala wine
1/2 cup white flour
4 tablespoons grated parmesan cheese

Steps:

  • Cook linguine according to directions on he box.
  • Rinse boneless chicken breasts. Remove any skin.
  • Melt the butter in a 10 inch frying pan on low heat.
  • Put flour on a plate an coat all sides of the breast with flour. Repeat for all pieces of chicken.
  • Add chicken breasts to frying pan and increase heat to medium.
  • Season chicken with half of the salt, pepper and basil.
  • Cook for 4 to 5 minutes then flip.
  • Season chicken with the rest of the salt, pepper and basil.
  • Add the garlic and mushrooms and Marsala wine and 1 tsp of lemon juice.
  • Spoon 1 tp of Parmesan cheese onto each chicken breast. Cover and cook another 4 to 5 minutes or until cheese in melted.
  • Plate the linguine as a bed for the chicken. Place chicken on top of the linguine. Spoon the mushrooms over the chicken.

6 tablespoons butter
3 -4 shallots
1 teaspoon garlic
1 cup marsala wine
sliced mushrooms
flour

Steps:

  • Coat Chicken lightly in flour.
  • Melt butter in skillet.
  • Add chicken.
  • Chop up 3-4 Shallots.
  • When you turn the chicken add the shallots and garlic to the tops of the chicken.
  • When chicken is done add Marsala wine cook for 5 minutes.
  • Add mushrooms and cook for an additional 5 minutes.
