Cheesy Chicken Casserole has pasta in a creamy cheesy sauce baked until golden and bubbly.

3 cups shell noodles (uncooked )
3 tablespoons butter
⅓ cup red bell pepper (diced)
1 onion (finely diced)
½ teaspoon seasoning salt
1 teaspoon chili powder
10 ¾ ounces cream of chicken soup (condensed)
1 ⅓ cups milk
3 cups sharp cheddar cheese (shredded, divided)
⅓ cup parmesan cheese (shredded)
4 ounces mild green chiles
3 cups cooked chicken

Steps:

  • Heat oven to 375°F.
  • Cook shells al dente according to package directions.
  • Cook onion and red bell pepper in butter until tender, about 5 minutes. Stir in salt and chili powder.
  • In a large bowl combine soup, onion mixture, milk and 2 cups cheddar cheese and parmesan cheese. Mix well. Stir in chicken, pasta and green chiles.
  • Spread into a 9x13 casserole dish. Top with remaining cheese.
  • Bake 30-35 minutes or until hot and bubbly.

This recipe is simple to put together, and it serves one hungry person, or two folks with a side salad. It includes ingredients that you probably have in the cupboards, so you will not need to go out to the store. So, you ready... Let's get into the kitchen.

PLAN/PURCHASE
1 Tbsp grapeseed oil, or another non-flavored variety
1 large chicken thigh, skin on, bone in
1/2 tsp cajun spice
1/4 tsp white or black pepper, freshly ground
1/4 tsp garlic powder
1/4 c mayonnaise or greek yogurt
1/4 c parmesan cheese, freshly grated
1 oz cheddar cheese, sharp variety, freshly

Steps:

  • 1. PREP/PREPARE
  • 2. Use whatever chicken that you have on hand; dark meat, white meat, or a combination. Then pan cook, or bake, dice or shred.
  • 3. I used Greek yogurt; however, you could just as easily use plain mayonnaise.
  • 4. The spices used represent what I thought would make a good combination, and were items I had on hand.
  • 5. Gather your ingredients (mise en place).
  • 6. Optional Step: Pull the skin off the chicken before cooking, then chop up, fry in a bit of oil until crispy, and reserve. When the chicken comes out of the oven, sprinkle them on top before serving. They are called cracklings, and they are yummy good.
  • 7. Sprinkle the chicken with some salt and pepper and add the oil to a pan over medium heat. Cook the chicken, turning several times, until the internal temperature reaches 160f (71c).
  • 8. Remove chicken from the pan, and chop.
  • 9. Place a rack in the middle position and preheat the oven to 375f (190c).
  • 10. Add the remaining ingredients, except the cheddar cheese, to a bowl, and fold together with the chopped chicken.
  • 11. Place the mixture into an ovenproof dish, and top with the shredded cheddar cheese.
  • 12. Place into the preheated oven, and bake until the cooked through, and the cheese is beginning to brown, about 25 - 30 minutes.
  • 13. Allow to rest for 5 - 7 minutes before serving.
  • 14. PLATE/PRESENT
  • 15. Sprinkle with the cracklings, if using, and serve with some crusty bread. Enjoy.
  • 16. Keep the faith, and keep cooking.

1 package (16 oz) bow-tie (farfalle) pasta
1 can (10 3/4 oz) condensed cream of chicken soup
1 1/2 cups cubed or shredded cooked chicken
1 1/2 cups shredded white Cheddar cheese (6 oz)
1 tablespoon coarsely chopped fresh Italian (flat-leaf) parsley, if desired

Steps:

  • Heat oven to 400°F. Spray 2- to 3-quart casserole with cooking spray.
  • Cook pasta as directed on package, using minimum cook time. Drain and return to saucepan. Add soup, chicken and 1 cup of the cheese to pasta in pan; stir to combine. Spoon into casserole. Sprinkle remaining 1/2 cup cheese over top.
  • Bake uncovered 8 to 10 minutes until thoroughly heated and cheese is melted. Garnish with parsley.

Nothing like a warm casserole from the oven on a cool winter night. This is one of those recipes I created from what I had in the home after the holidays. My 3 men devoured it.

12 oz medium noodles
cooking spray, butter flavor
1 lb diced cooked chicken, i use marketday diced tenderloins
1/2 bag frozen sliced carrots thawed
1 can(s) cream of chicken soup
1/2 c low fat sour cream
6 oz sharp cheddar shredded (you can substitute low fat)
1 c cottage cheese, small curd low fat
1/4 c onion diced fine
1 tsp dill weed
3/4 c skim milk
1 small can of french fried onion
1 shredded cheddar for top

Steps:

  • 1. Spray a 9x15 or 9x13 pan with cooking spray. Preheat oven to 350
  • 2. Start the water boiling to cook noodles.
  • 3. In a large bowl,combine Chicken,carrots,Soup, Sour cream, 6 oz shredded cheese, cottage cheese, onion and dill weed in a large bowl and mix thoroughly.
  • 4. mix french fried onion and 1 cup shredded cheese together and set aside
  • 5. Cook noodles per package directions. Do not overcook.
  • 6. Drain the noodles. leave in pot and add ingredients from bowl and mix well.
  • 7. Dump into pan. Pour milk evenly over casserole and use a fork to help it filter down.
  • 8. Cover pan with foil and bake at 350 for about 40 minutes. If you use chicken which is not frozen the time will be less.
  • 9. Remove from oven. Remove foil. Spread the onion cheese mix over top and put back into the oven uncovered for 15 minutes or until it is browned on top.
  • 10. This is a hearty meal all by itself.

Everyone in my family loved am 13 and with the help of my mother it turned out GREAT! I hope you and your family enjoy! This was from my grandmother in Panama (a Spanish country above South America) which she let me try and share this with others.

2 cups sliced carrots
1 (10 3/4 ounce) can chicken broth or 1 (10 3/4 ounce) can broth, from cooked chicken
1 (1 ounce) can chopped pimiento
1/4 cup butter
1/4 cup all-purpose flour
8 ounces cheddar cheese, shredded
4 cups diced cooked chicken (about 4 chicken breasts)

Steps:

  • Bring 1 cup salted water to a boil; add fresh carrot slices.
  • Cover; simmer until not quite tender, about 15 minutes; drain.
  • Preheat oven to 375°F.
  • In a 3-quart saucepan, melt butter over medium heat.
  • Stir in flour and then add broth, stirring constantly, until mixture thickens.
  • Set 3/4 cup cheese aside.
  • Add remaining cheese into thickened soup mixture.
  • Stir until cheese melts.
  • Stir in chicken, carrots and pimento.
  • Pour into 1 1/2- quart casserole dish.
  • Sprinkle reserved cheese over top.
  • Bake for 40-35 minutes, or until hot and bubbly.

1 tablespoon butter or 1 tablespoon margarine
4 boneless skinless chicken breast halves
1 (6 ounce) box chicken flavor stuffing mix
1 (10 3/4 ounce) can mushroom soup or 1 (10 3/4 ounce) can 98% fat-free cream of mushroom soup
1/2 cup milk
1/2 cup shredded cheddar cheese
2 cups cooked vegetables

Steps:

  • Preheat oven to 350°.
  • Heat butter in medium skillet over medium-high heat. Add chicken and cook 12 to 15 minute or until no longer pink. Remove chicken, let cool a bit, then cut in chunks.
  • PrepareE stuffing in skillet according to package directions except let stand 2 minute.
  • Layer stuffing, chicken and veggies in 1 3/4 - 2 quart casserole dish. Mix soup and milk. Pour over layers. Sprinkle with cheese.
  • Cover and heat through (about an hour).
