1 tablespoon oil
4 cups chopped green cabbage (about 1/2 large head)
3 large carrots (peeled and chopped)
2 ribs celery (finely chopped)
1 medium onion finely chopped
2 garlic cloves (minced)
15 oz can diced tomatoes
4 cups low sodium chicken or vegetable stock
½ teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon pepper
Freshly chopped parsley for garnish

Steps:

  • In a large pot, heat oil over medium heat. Add chopped cabbage, carrots, celery, onion, and minced garlic, and cook, stirring often, until onion is translucent, about 5 minutes.
  • Add diced tomatoes, chicken stock, thyme, salt, and pepper. Bring to a simmer, cover, and reduce heat to low.
  • Simmer, stirring occasionally, until all vegetables are tender (40-50 minutes, depending on your preferred consistency).
  • Taste and adjust seasoning if necessary. Serve warm.

2 tbsp olive oil
1 large onion , finely chopped
2 celery sticks , finely chopped
1 large carrot , finely chopped
70g smoked pancetta , diced (optional)
1 large Savoy cabbage , shredded
2 fat garlic cloves , crushed
1 heaped tsp sweet smoked paprika
1 tbsp finely chopped rosemary
1 x 400g can chopped tomatoes
1.7l hot vegetable stock
1 x 400g can chickpeas , drained and rinsed
shaved parmesan (or vegetarian alternative), to serve (optional)
crusty bread , to serve (optional)

Steps:

  • Heat the oil in a casserole pot over a low heat. Add the onion, celery and carrot, along with a generous pinch of salt, and fry gently for 15 mins, or until the veg begins to soften. If you're using pancetta, add it to the pan, turn up the heat and fry for a few mins more until turning golden brown. Tip in the cabbage and fry for 5 mins, then stir through the garlic, paprika and rosemary and cook for 1 min more.
  • Tip the chopped tomatoes and stock into the pan. Bring to a simmer, then cook, uncovered, for 30 mins, adding the chickpeas for the final 10 mins. Season generously with salt and black pepper.
  • Ladle the soup into six deep bowls. Serve with the shaved parmesan and crusty bread, if you like.

This easy cabbage soup recipe is hearty, healthy, easy to make, and tastes fantastic. Before adding to the soup, taste your ham to see how salty it is. Depending on the salt level, you may not need to add any additional salt to the soup. Taste and adjust the seasoning of the soup a few times during cooking.

3 tablespoons olive oil
2 cups chopped onion (1 medium)
2 cups chopped carrot (4 medium)
1 1/2 cups cubed lean ham steak (7.5 ounces)
1 tablespoon minced garlic (3 cloves)
1 tablespoon chopped fresh rosemary or use 1 teaspoon dried rosemary
1/2 teaspoon fresh ground black pepper
Pinch crushed red pepper flakes
8 cups chopped cabbage (1 1/2 pounds)
1 (15-ounce) can diced tomatoes with juices
6 cups low sodium chicken, ham or vegetable stock/broth, see our chicken stock recipe
2 bay leaves
Salt, to taste
3 lemon slices or more to taste

Steps:

  • Heat two tablespoons of the olive oil in a stockpot pot or Dutch oven over medium heat. Add the onions, carrots, and the ham. Cook, stirring every once and a while until the vegetables have softened and the onions are translucent; 8 to 10 minutes.
  • Add the garlic, rosemary, black pepper, and the red pepper flakes. Cook, while stirring, for one minute. Stir in the cabbage, and then pour in the canned tomatoes and their juices as well as the stock. Add the bay leaves.
  • Raise the heat to medium-high and bring the soup to a boil. Taste then adjust with salt. The ham does add some salt to the soup so you may not need a lot of additional seasoning.
  • Partially cover the pot with a lid, and then reduce the heat to maintain a low simmer. Simmer for 20 minutes or until the cabbage, and other vegetables are tender.
  • Remove the pot from the heat and remove the bay leaves. Stir in the lemon slices and the remaining tablespoon of olive oil. Taste and season with more salt and pepper. Serve.

1 (12 ounce) can tomato paste
8 cups water (use boiled cabbage water if you still have it)
3 tablespoons instant chicken bouillon
4 cups chopped cabbage
1 chopped carrot
1 medium diced onion
1 medium diced potato
3 stalks chopped celery
1 (14 ounce) can kidney beans
1 -3 tablespoon cayenne (I use 3Tbsp, I like it spicey!)
1 -2 tablespoon montreal steak spice

Steps:

  • Using a large pot, combine all ingredients and bring to a boil.
  • Reduce to low and allow to simmer for approximately 2 hours.

1 small onion

Super delicious cabbage and carrot soup for the cold autumn days - a flavorful recipe that doesn't require a lot of products.

1/4 cabbage
1 onion
600 ml vegetable broth (homemade or bio)
3 tbs olive oil
2 carrots
1/2 lemon (squeezed)
1 pinch of chili pepper
1 ts dried dill (or fresh)
Salt (to taste)
Black pepper (to taste)

Steps:

  • Peel and cut the onion. Peel and dice the carrot, then cut the cabbage into strips.
  • In a suitable pot cook the onion and carrot with some olive oil for 4-5 minutes. Add the cabbage, pour the broth and add some water. The amount of water depends on the quantity of the cabbage... and on how thick you prefer the soup.
  • Season with salt, add dill and chili pepper and let it simmer for about 40 minutes, or until the cabbage softens.
  • Finally season with lemon juice.

1 small white onion, diced

Steps:
