DELICIOUS BAKED CHICKEN

Very moist chicken. Serve with a cheesy side if desired. Being from the South, I serve this with garlic cheese grits! (Note: For a slight variation in taste, you can use lemon flavored oil.)

4 bone-in chicken breast halves, with skin
1 tablespoon olive oil
1 pinch garlic powder
salt and pepper to taste
¾ cup Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rub each chicken breast with olive oil, then place in a lightly greased 9x13 inch baking dish. Season with garlic powder, salt and pepper to taste. Pour Worcestershire sauce over each breast. Cover dish with aluminum foil and bake in the preheated oven for 45 minutes. Check chicken and remove cover if desired. Bake for another 15 minutes.

4 skinless, boneless chicken breast halves
¼ cup all-purpose flour
½ teaspoon salt
ground black pepper to taste
1 tablespoon olive oil
1 ½ teaspoons butter
½ cup sliced fresh mushrooms
4 green onions, chopped
1 clove garlic, finely minced
⅓ cup unsweetened apple juice
2 tablespoons lemon juice
1 teaspoon white sugar

Steps:

  • Pound the chicken breast halves flat and to about 1/2 inch thick. Cut the flattened chicken breasts into several large pieces.
  • Place the flour, salt, and pepper into a plastic bag, and drop the chicken pieces into the bag. Shake gently to coat the chicken thoroughly with flour mixture.
  • Preheat an oven to 325 degrees F (165 degrees C). Grease an 8x8 inch baking dish.
  • Heat the olive oil and butter in a large skillet over medium heat, and brown the coated chicken pieces on each side until golden brown, about 5 minutes per side. Place the chicken pieces into the prepared baking dish, leaving the oil and butter in the skillet. Cook and stir the mushrooms, green onions, and garlic in the hot skillet until the mushrooms give up their juice and start to brown, about 10 minutes. Spread the cooked vegetables over the chicken pieces.
  • Pour the apple juice, lemon juice, and sugar into the skillet, stir to dissolve the sugar, and bring the mixture to a boil. Pour the sauce over the chicken and vegetables, cover the baking dish with foil, and bake in the preheated oven until the sauce has reduced and the chicken has absorbed the sauce, about 1 hour.

6 chicken drumsticks, bone-in, skin removed
1/4 cup fresh lemon juice
2 tablespoons brown sugar
1 tablespoon vegetable oil
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon garam masala
1/2 teaspoon ground ginger
1/2 teaspoon turmeric
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
2 large Vidalia onions, peeled, quartered and thinly slice
1/4 cup raisins
2 tablespoons rum
Preheat the oven to 350 degrees F.

Steps:

  • Wash the chicken and pat dry. In a baking dish large enough to hold the chicken in 1 layer, mix together the lemon juice, brown sugar, oil, garlic, paprika, garam masala, ginger, turmeric, a pinch of salt and a few grinds of black pepper. Add the chicken and toss to coat. Arrange the chicken in a single layer in the baking dish. Cover the dish with aluminum foil and transfer to the oven. Bake until the chicken reaches 150 degrees F on an instant-read thermometer, about 35 minutes.
  • While the chicken bakes, warm the butter in a pan over medium-low heat. Add the onions and a pinch of salt. Saute, cooking slowly, until the onions are golden brown and caramelized, about 20 minutes. Stir in the raisins and rum, and use a wooden spoon to loosen any onion bits from the bottom of the pan. Cook until the alcohol evaporates, leaving just the rum scented flavor, about 2 minutes, then remove the pan from the heat. When the chicken reaches 150 degrees F, spoon the onion-raisin mixture over the chicken. Raise the oven temperature to 400 degrees F, then return chicken to the oven and bake for 10 minutes more, uncovered. The chicken will be fully cooked when it reaches 160 degrees F. Transfer to a serving platter and serve warm or cold.

4 chicken breasts
3 tablespoons extra virgin olive oil
8 ounces button mushrooms, sliced
2 garlic cloves, minced
9 ounces spinach
1 cup chicken broth
12 ounces roasted peppers, drained and chopped
1 cup mozzarella cheese, shredded
salt, to taste
ground black pepper, to taste
15 ounces roasted garlic alfredo sauce

Steps:

  • Preheat oven to 375°. Coat a 9x13-inch baking dish with cooking spray.
  • Rinse chicken and pat dry with paper towels. Use a sharp paring knife to gently cut each breast in half lengthwise, without cutting all the way through, to make a pocket.
  • In a skillet, heat olive oil over medium-high heat, then add mushrooms. Sauté about 5 minutes or until mushrooms have softened and are beginning to brown. Add garlic and spinach and cook 1-2 minutes, stirring, until garlic is fragrant. Add white wine, and cook about 7 more minutes, or until most of the liquid has evaporated, turning the spinach with tongs to wilt. Remove from heat and stir in the roasted peppers and mozzarella cheese. Season to taste with salt and pepper.
  • To assemble: Season the chicken breasts with salt and pepper. Lay the chicken breast flat so that the "pocket" is open, and then fill each piece with ¼ of the stuffing mixture. Fold over the pocket and use 2-3 toothpicks per breast to secure the sides.
  • Place chicken breasts in prepared baking dish. Pour the roasted garlic alfredo sauce over the chicken and bake, uncovered, for 30-35 minutes or until the internal temperature reaches 165° when checked inside the thickest portion. Let stand for 5 minutes, gently remove the toothpicks and serve.

1/4 cup flour
2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon thyme, dried
3 -4 lbs cut up chicken, skin on
1/4 cup butter, melted
4 green onions, chopped
1/2 cup mushroom, sliced
2 tablespoons lemon juice, fresh
1 teaspoon sugar
1 teaspoon salt
1/3 cup apple juice

Steps:

  • Preheat oven to 325°F.
  • Mix flour, salt, pepper and thyme in a plastic bag. Shake chicken to coat well.
  • In a frying pan, brown chicken in butter. Remove chicken and place in a casserole dish. Add onions and mushrooms to the frying pan; cover and simmer for 3 minutes. Pour the onions, mushrooms and butter over the chicken.
  • Mix together the lemon juice, sugar, salt and apple juice. Pour over the chicken.
  • Bake for 1 hour at 325°F.

4 boneless skinless chicken breast halves
1 (6 ounce) package stove top stuffing mix for chicken
1 1/2 cups italian-style breadcrumbs
1 (10 3/4 ounce) can campbell's cream of chicken with herbs condensed soup
1 cup milk
2 eggs, beaten
1/4 cup olive oil
1/4 cup plus 2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 1/4 cups water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Boil water and 1/4 cup butter in medium saucepan. Stir in contents of Stuffing Mix pouch; cover. Remove from heat. Let stand 5 minutes. Fluff with fork and set aside.
  • Combine bread crumbs, salt, pepper and garlic powder. Place beaten eggs and bread crumbs in two shallow plates or bowls.
  • Rinse chicken and pat dry. Slice each breast lengthwise to create a pocket. Stuff each breast generously with stuffing. Dip into beaten eggs, then into bread crumbs.
  • Preheat large skillet with olive oil and 2 tablespoons butter. Fry breasts on both sides over medium-high heat until golden brown, about two minutes each side. Transfer to a lightly-greased 9x13 inch pan and bake covered for 20 minutes.
  • Combine soup and milk and pour around chicken breasts. Cover and continue baking for 10 minutes. Uncover; bake an additional 10 minutes.
  • Serve with your favorite side dish and enjoy!

1/4 cup packed brown sugar

It's not a quicky but most of the time it's in the oven so you're not actually doing anything but waiting. I like to serve this with buttered egg-noodles. 2 1/2-3 lbs chicken pieces
2 tablespoons shortening (I use olive oil)
1/2 cup onion, sliced
3 garlic cloves, minced
1 (14 1/2 ounce) can chopped tomatoes
1/4 cup parmesan cheese, grated
3 tablespoons flour
1/2 cup sour cream

Steps:

  • Season your chicken the way you like it.
  • Brown it in the shortening or olive oil.
  • Place browned chicken in a 13 x 9 inch baking dish.
  • Cook the onion and garlic in the drippings until tender.
  • Add tomatoes and parmesan cheese; bring to a boil.
  • Reduce heat and simmer 5 minutes; pour over chicken.
