This is delicious, especially warm. You can serve it with ice cream or whipped cream but I like it plain.

- Preheat oven to 375ºF.
- Combine mangoes, lime juice, and nutmeg in a mixing bowl. Stir until mango is coated with lime and nutmeg. Spoom fruit into a greased 8 inch square pan.
- In another bowl combine flour, baking powder, salt and brown sugar. Mix well.
- Using a pastry cutter, cut the butter into the dry mix until it resembles a course meal. Stir in milk, mix until smooth.
- Spread batter evenly over fruit. Bake at 375ºF for 20-25 minutes or until lightly browned on top.

- Combine mangoes, water, and 1/2 cup white sugar in a saucepan over medium heat; simmer until sugar is dissolved, 5 to 6 minutes. Drain syrup from mangoes, reserving syrup.
- Beat 2 cups sugar and butter together in a bowl using an electric mixer until smooth and creamy. Whisk flour, baking powder, and salt together in a separate bowl until combined. Slowly mix flour mixture, alternating with milk, into creamed butter mixture, beating well after each addition. Stir vanilla extract into batter; pour into a 9x13-inch baking dish.
- Arrange mangoes on top of the batter and pour 2 cups reserved syrup over mangoes.

- Preheat the oven to 375 degrees F (190 degrees C). Pour melted butter into an 8-inch square baking dish.
- Mix mangoes, 1/2 cup sugar, and peach schnapps together in a bowl. Layer mango slices over the butter in the baking dish and pour remaining juice over all.

FRESH MANGO COBBLER
Steps:
- Preheat the oven to 375 F.
- Spray a 1 1/2-quart baking dish lightly with nonstick cooking spray.
- Peel and slice-or dice-the mangoes . You should have about 4 cups.
- In a medium saucepan, combine 2/3 cup of the sugar with the cornstarch. Stir to blend. Add the water and lemon juice along with the mango.
- Place the saucepan over medium-high heat and bring to a boil. Reduce the heat to low and simmer for about 5 minutes, or until the fruit is just tender.
- Pour the hot sliced mango and syrup into a 1 1/2-quart baking dish; dot with butter and sprinkle with the cinnamon sugar.
- In a medium bowl, combine the flour, the remaining 1/3 cup of sugar, baking powder, and salt; blend well. Cut the shortening into the flour mixture until it resembles coarse meal. Add the milk and stir to blend.
- Drop spoonfuls of the dough over the hot fruit mixture.

July and August is the Mango season here in South Florida. Having an abundance of this lucious fruit I decided to make Cobbler with the ripe fruit. I followed my peach recipe but used mangos instead. The aroma of this cobbler had everyone mesmerized. It came out delicious. Enjoy

- 1. Combine the mangos, one cup sugar, and the 1/2 cup water in a sauce pan mix well and bring to a boil for 10 minutes
- 2. Preheat oven at 350 degrees and put the stick of butter in a three quart baking dish and place in the oven to melt. When melted pull out and coat the whole pan including the sides with the melted butter set aside.
- 3. Mix the remaing cup sugar, the flour and the milk slowely to prevent clumping. Pour the flour mixture over the melted butter. Do not stir.
- 4. Next spoon the fruit over the flour mixture and pour the syrup from the pan over the fruit. Sprinkle the cinnamon over the top and Bake for 30 to 45 minutes at 350 degrees. I alway double my recipe since I have a large family. The picture is mine doubled.

- CRUST: To make crust process pecans, vanilla bean and salt into a powder in a food processor. Add 3/4 cup pitted dates and process until mixed well. Sprinkle 1/2 of crust onto bottom of pie dish and put remaining crust in a bowl. Leave any remaining crumbs in the food processor for the next step.
- SYRUP & FILLING: Blend syrup ingredients in food processor with enough water to make a thick syrup. Toss syrup with mango. Spoon mixture onto crust. Sprinkle remaining crust over top.

- Thaw mangoes, cover with 3/4 cup sugar, set aside. Mix well after several minutes.
- {reheat oven to 350°F; put butter in shallow baking dish or casserole dish, place in oven & melt butter.

- Preheat oven to 350°F.
- Combine the apples, Mango slices, 1/2 cup sugar and water in a sauce pan and mix well. Bring to boil and let it simmer for 7-8 minute.
- Put the butter in 8X8 square baking dish.Place it in the oven until it melts.

- For the fruit, put all the ingredients in a saucepan. Cook over a low heat, stirring until the butter has melted and the sugar has dissolved, then leave to simmer until you have a chunky fruit compote, then set aside.
- Heat oven to 190C/170C fan/gas 6. Whisk the egg into the milk and set aside.
