This chocolate and vanilla layered pudding pie is a perfect treat for a hot day. No baking required, and it is really easy too.

1 (3.9 ounce) package instant chocolate pudding mix
1 ½ cups milk
1 (9 inch) prepared graham cracker crust
1 (8 ounce) package cream cheese, softened
1 cup confectioners' sugar
1 (8 ounce) tub frozen whipped topping, thawed
1 (3.4 ounce) package instant vanilla pudding mix
1 ½ cups milk

Steps:

  • In a medium bowl, mix together the chocolate pudding mix and 1 1/2 cups of milk until smooth and well blended. Pour into the graham cracker crust.
  • In a clean bowl, beat cream cheese with an electric mixer until soft, then mix in confectioners' sugar. Fold in 2 cups of the whipped topping, and spread on top of the chocolate pudding layer.
  • Whisk together the vanilla pudding mix and 1 1/2 cups of milk until well blended. Spread over the top of the cream cheese layer. Spread the remaining whipped topping over the top. Chill for at least 30 minutes before slicing and serving.

The name says it all because this is yummy! Of course you can switch out the vanilla for chocolate if you prefer.

60 ritz crackers, crushed
1 stick butter
1 1/2 c milk
1/2 gal vanilla ice cream
2 box (3 oz each) instant vanilla pudding

Steps:

  • 1. Preheat oven to 350
  • 2. Melt butter. Mix with crackers. Press into 13 x 9" pan. Bake 5 min. Let cool.
  • 3. Mix ice cream and milk until thick (milkshake like). Then add pudding. Mix well. Pour over crust. Refrigerate for 8 hours.

60 Ritz crackers, fine crumbs
8 tablespoons butter
2 (4 ounce) boxes instant vanilla pudding
1 1/2 cups milk
2 quarts vanilla ice cream, softened

Steps:

  • Preheat oven to 350°F.
  • Melt butter in baking dish in microwave or oven.
  • Mix cracker crumbs with melted butter and place into 350°F oven. Bake for 5 minutes.
  • Meanwhile, mix pudding with milk.
  • Add softened ice cream to pudding and milk and mix well with mixer.
  • Remove crumbs and reserve 1 cup.
  • Spread crumbs in bottom of dessert bowl.
  • Add pudding to bowl and top with reserved crumbs.
  • Refrigerate until set.

4 egg yolks
3/4 cup granulated sugar
1/4 cup milk
1 (7 ounce) package tea biscuits
2 cups heavy whipping cream
2 tablespoons sugar

Steps:

  • Using a food processor or a rolling pin, finely crush the tea biscuits and set aside.
  • In a double boiler fill the bottom with 2-3 inches of water, place it over medium-high heat, and bring it to a simmer. On the top of the double boiler stir the egg yolks and sugar. Keeping the water in the bottom at a slow simmer, continue to stir until the egg mix is smooth. Then using a whisk and stirring a little faster, pour in the milk and beat until it's a frothy creamy consistency. You can use a hand held mixer with a whisk attachment to make it easier.
  • Remove from heat and let it cool.
  • Meanwhile, in a medium bowl pour out the heavy whipping cream and add 2 tablespoons of sugar. Whip until stiff peaks form. Set aside.
  • To assemble the dessert, use the serving dish of your choice, layer the cookie crumbs first, then a layer of the sweet egg cream, then another layer of the crumbs, then a layer a the whipped cream. Last, add just a dusting of the cookie crumbs.
  • Refrigerate for at least 3 hours, but overnight is the best.
