YORKSHIRE MEATBALL CASSEROLE
Tasty meatballs baked in a custard-like batter and topped with gravy. Serve with some steamed veggies (carrots? peas? spinach?) and dinner's all set. You can use all beef in the meatballs if that's what you have or prefer. It's based on "Yorkshire Burger" by Paul C. Kellogg in Pilsbury's Best of the Bake-Off Collection, 1959. But I cut it down and used my favourite meatball/meatloaf recipe. (If you double the meatball ingredients, you can use half for this recipe, and half for plain meatballs for freezing, and use the pan drippings for the gravy.)

Steps:
- Grease 8" square pan.
- Finely chop onion, celery, and parsley or blend with water, Worcestershire sauce and egg.
- Add to ground meat and seasonings, and mix well.
- Form into 16 large meatballs and place in pan.
- Preheat oven to 350 degrees F.
- Mix flour, baking powder and salt together in a medium bowl.
- Beat eggs until foamy.
- Add milk and melted butter and beat some more.
- Add dry ingredients to egg mixture and blend just until smooth.
- Pour over meatballs.
- Bake 50-60 minutes.
- (If making another batch of plain meatballs, make them smaller - 30-40 meatballs - and bake them about 25 minutes).
- If making gravy as stated, heat beef broth in a small saucepan over medium-high. Mix flour and water in a small bowl until smooth. When broth boils, add flour-water mixture and stir until thickened. Remove from heat.
- (If making gravy from plain meatball pan drippings, deglaze pan with about 1/2 cup water, scrape into small saucepan, and add water to add up to 3/4 cup. Heat over medium-high. Meanwhile, mix flour and water in a small bowl. When liquid boils, add flour-water mixture and stir well until thickened then remove from heat.).

ONE-POT MEATBALLS AND SAUCE
Made with equal parts ground beef (for flavor) and pork (for fat), these meatballs use a time-saving technique involving softening bread crumbs in an egg-ricotta mixture. This keeps them impossibly light and fluffy while forgoing the usual step of soaking bread in milk, which many meatball recipes require. Aside from leaving you one pot fewer to clean, making your tomato sauce in the same dish you've seared your meatballs in means you can take advantage of the flavorful bits left behind. Serve these however you see fit (this recipe makes enough sauce to dress four portions of spaghetti), but know that eating them out of the pot with a hunk of bread is also an option.

Steps:
- In a large bowl, combine the eggs, parsley, ricotta, Parmesan, bread crumbs, 2 of the chopped garlic cloves, 1 teaspoon kosher salt and ½ teaspoon crushed red pepper flakes. Mix well and let sit for a few minutes to soften the bread crumbs.
- Add the beef and pork and season with black pepper. Using your hands, gently mix well to evenly incorporate ricotta mixture into the meat, while taking care not to overmix (or meatballs will become dense). Form the meat mixture into rounds slightly larger than a golf ball, about 2 ounces each. Be careful not to pack them too tightly; roll them just so they barely hold together.
- Heat oil in a large Dutch oven over medium heat. Working in batches, add a few balls at a time, taking care not to crowd the pot. Using tongs, gently rotate the balls every so often to encourage them to keep their rounded shape. Cook until evenly browned on all sides, 6 to 8 minutes per batch. Transfer meatballs to a large plate and set aside. Repeat with remaining balls.
- Once all the meatballs are browned, drain all but 2 tablespoons of fat from the pot, leaving all the good browned bits behind. Return pot to medium heat and add onion and remaining 2 garlic cloves. Season with salt and pepper and cook, stirring frequently until onion is totally softened and translucent (but not browned), about 5 to 8 minutes.
- Add tomatoes and a pinch of crushed red pepper flakes, if you like. Fill tomato can with water, swirling to get all the remaining bits of tomato, and add to pot, using just enough to thin the sauce without making it overly watery. Season with salt and pepper. Use this tomato can to hold your spoon or spatula while you cook.
- Simmer the sauce for about 10 minutes, just until the flavors meld and sauce has thickened a bit. Using tongs, return meatballs to the pot, nestling them into the sauce. Scatter basil over and place a lid on the pot. Reduce heat to low and let simmer for 20 to 25 minutes, until meatballs are cooked through.
- Serve meatballs on their own, or over garlic bread or spaghetti.

EASY MEATBALLS
BBC Good Food magazine's food editor Barney & his daughter Maisie love making these sausage and beef meatballs to serve on spaghetti with hidden vegetable tomato sauce

Steps:
- KIDS the writing in bold is for you. GROWN-UPS the rest is for you. Squeeze some sausages. Get your child to squeeze all the sausagemeat out of the skins into a large bowl. They can hold the sausages or do it by squashing them on a board.
- Get grating. Get your child to coarsely grate the onion and finely grate the carrot. If the onion starts to hurt their eyes, get them to wear goggles, which is good fun. Grating can take a bit of strength, so you may need to help. Tip these vegetables in with the sausages. While you have the grater out, grate the Parmesan, other vegetables and garlic for the sauce, and set aside.
- Make a marvellous mix. Next, get your child to add all the other meatball ingredients one by one, except the olive oil, into the bowl and season with black pepper.
- Squish everything together. Get the child to squish everything together through their hands until completely mixed. Keep an eye on younger children to make sure that they don't taste any of the raw mix.
- Roll meatballs. Children as young as three can now roll the meatball mix into walnut-sized balls, then place them on a board or tray. This mix should make 40 balls - counting these is great way to help teach older children basic division. Cover the meatballs with cling film and have a little tidy up.
- Prepare the red peppers. Firstly, peel the peppers with a vegetable peeler, cut off the tops and bottoms and remove the seeds. Cut the peppers in half and children from the age of four can cut the peppers into strips.
- Make the sauce. A grown-up will need to help here. Heat the oil in a large saucepan. Add the vegetables and garlic and cook for 5 mins. Stir in the tomato purée, sugar and vinegar, leave for 1 min then tip in the tomatoes and simmer for 5 mins. Get the child to help blitz the sauce with a hand blender. Gently simmer the sauce while you cook the meatballs.
- Cook the meatballs. Brown the meatballs in the olive oil on all sides then pop them into the sauce, working in batches if necessary. Simmer the meatballs in the sauce for 15 mins, gently stirring until they are cooked through. It's ready to eat now or cool and freeze in suitable batches for up to 6 months. Serve with spaghetti, some basil and extra Parmesan, if you like.
