TROPICAL FRUIT SALAD

Tropical fruit salad image

One mouthful of this exotic fruit salad recipe with mint sugar and you can almost feel the sunshine! Refreshing, zingy and perfect for a hot summer day.

Provided by Jamie Oliver

Categories     Desserts     Fruit     Australia day

Time 10m

Yield 4

Number Of Ingredients 8

½ a pineapple
1 ripe mango
1 papaya
2 kiwi fruit
½ a lime
½ a bunch of fresh mint, (15g)
2 tablespoons golden caster sugar
200 g yoghurt

Steps:

  • Trim the outside skin off the pineapple and cut out the hard core that runs down its centre. Lay it on a chopping board and cut it into chunks with a sharp knife. Place in a bowl.
  • Cut the flesh of the mango off the stone and scoop out the flesh from the skin with a spoon. Place into the bowl with the pineapple. Cut the papaya in half and scoop out the black seeds inside. Scoop the fruit out of the skin in the same way as with the mango. Place into the bowl.
  • Top and tail the kiwi fruit, then, sitting it on one of its flat ends, trim the furry skin off with a sharp knife. Slice the kiwi and place into the bowl. Squeeze the lime juice over your fruit.
  • Take four plates and divide the fruit between them. Pick the mint leaves and pound most of them with the sugar in a pestle and mortar or a flavour shaker. Spoon a little yoghurt over the top of each plate and sprinkle over the mint sugar and the rest of the mint leaves and serve.

REFRESHING TROPICAL FRUIT SALAD WITH VANILLA MINT SYRUP

Refreshing Tropical Fruit Salad With Vanilla Mint Syrup image

This syrup works with any combination of fruit; I especially like it with the tropicals. It is a light and refreshing dessert; the use of the vanilla bean makes these fruits seem exotic. Cook time includes chill time. From author and herbalist Susan Belsinger.

Provided by BecR2400

Categories     Dessert

Time 1h

Yield 8-10 serving(s)

Number Of Ingredients 9

1 cup water
1/4 cup sugar
1/2 vanilla bean
fresh mint leaves, 1 handful bruised
3 slices lime zest
1 tablespoon freshly squeezed lime juice
1 firm ripe mangoes or 1 papaya, peeled, seeded, and cut into bite-sized pieces
1 small ripe cantaloupe, seeded, and cut into bite-sized pieces
1 ripe pineapple, peeled, cored, and cut into bite-sized pieces

Steps:

  • Make flavored fruit syrup by combining water, sugar, vanilla, mint and zest in a saucepan. Bring to a boil, reduce heat and simmer for 10 minutes. Remove from heat and let cool. When cooled to room temperature, strain syrup and stir in lime juice. At this point syrup can be stored in the refrigerator for up to 5 days.
  • Toss mango or papaya, melon and pineapple in a large bowl. Pour syrup over fruit. Toss mixture well. Cover and chill for at least 1/2 hour before serving.

  • To make the lemongrass and lime syrup, trim the very tops of the lemongrass, remove and discard the outer layers, then cut each stem in half and bruise using the flat side of a large, heavy knife. Put the lemongrass, sugar and 330 ml (11¼ fl oz/1⅓ cups) water in a small saucepan. Use a zesting tool to remove the zest from the limes and add to the pan. Juice the limes, strain the juice and add to the pan.
  • Stir the syrup over low heat until the sugar dissolves. Increase the heat to medium and bring to a simmer. Simmer for 8 minutes or until thickened slightly to a light syrup consistency. Set aside to cool completely (place the syrup in the refrigerator to reduce the cooling time, if you like).
  • Thickly slice the melons and papaya. Remove and discard the seeds and skin, then slice the flesh into bite-sized pieces. Peel the lychees, cut in half and remove the seeds. Slice the starfruit and halve the passionfruit.
  • Divide the melons, papaya, lychees and starfruit among 6 serving glasses or bowls. Spoon the pulp from half a passionfruit over the fruit and place the remaining passionfruit halves on top. Drizzle with the lemongrass and lime syrup, and serve.
