TAMALE PIE
Tamale Pie is made with seasoned ground beef and topped with homemade cornbread and cheese. It's a simple dinner casserole that's big on flavor.

Steps:
- Preheat oven to 350 degrees F. Grease a 9"x9" baking dish or 10-inch oven safe skillet with nonstick cooking spray.
- Heat a large skillet over medium-high heat. Add ground beef and onion and cook until beef is browned and no longer pink, stirring often. Drain any grease from the pan.
- To the beef, stir in tomatoes, corn, olives, chiles, chili powder, garlic powder and salt. Bring to a boil, then reduce heat and simmer until thickened; about 10 minutes. Pour the beef mixture into the prepared baking dish.
- In a medium sized bowl, stir together the cornmeal, milk, sugar and eggs just until combined. Mixture will be thin. Spread evenly over the beef mixture in the pan, then top evenly with the cheese.
- Bake uncovered in the preheated 350 degree oven for 40-50 minutes. Top should be golden brown and the sauce should be bubbling up on the sides.
- Let sit for 5-10 minutes before serving. Top with sour cream and sliced green onions if desired.
- Top individual servings with sour cream and parsley or chives for garnish, if desired.

- In a large bowl, mix cornmeal and broth; let stand 5 minutes. Stir in beef, chili powder, cumin, salsa, corn and olives. Pour into a 3 1/2 quart slow cooker. Cover and cook on low 5-7 hours or until set. Sprinkle cheese over top; cover and cook another 5 minutes or until cheese melts.

TAMALE PIE
Steps:
- Preheat the oven to 400 degrees F.
- Heat the oil in a 10-inch cast-iron skillet over medium-high heat. Add the beef, onions, garlic and 1 teaspoon salt and cook, stirring and breaking up any clumps with a wooden spoon, until the meat is brown and the onions are softened, about 6 minutes. Add the tomato paste, chili powder and cumin and cook, stirring, about 1 minute. Stir in the enchilada sauce, beans, corn and cilantro and season with salt. Bring to a simmer. Remove from the heat and sprinkle with the cheese.
- Add the cornmeal to a mixing bowl. Mix in the buttermilk and oil. You want the mixture to be thick but pourable. Stir in the scallions. Pour on top of the meat mixture in the skillet and spread in an even layer. Bake until the meat is bubbling and the cornbread is golden brown, 20 to 25 minutes.
YET ANOTHER FIESTA TAMALE PIE
This is a recipe from my ex MIL. I know there are a ton of Tamale Pie recipes on here, but I didn't find one exactly like this one, which my kids are always requesting. I'm putting it here so I don't have to dig up her cookbook every time!

Steps:
- Preheat oven to 350.
- Saute onion and garlic in butter.
- Add ground beef and sausage and cook until brown.
- Add tomatoes (with juice) and crush with spoon or fork (I crush them with my hands before adding, but that's just me).
- Add corn, salt and chili powder. Heat through.
- Pour into 13x9 casserole dish.
- Press olives down into meat mixture until they are just showing.
- In medium bowl, mix together cornmeal, milk and eggs.
- Pour over meat mixture and olives.
- Sprinkle cheese over top.
- Bake uncovered for 1 hour.

- Heat oil in a wide frying pan over medium heat; add the onion and garlic and cook until onion is limp. Crumble in the beef and sausage and cook until browned; discard excess fat. Stir in the tomatoes (break up with spoon) and their liquid, corn, chili powder, oregano, and cumin. Cover and simmer for 10 minutes, then stir in the olives. Spread mixture in a shallow 3 quart casserole. Prepare topping and spoon over meat mixture, then sprinkle with cheese. Bake, uncovered in a 350 degree oven for 45 minutes or until top is set when lightly touched.
- Corn Bread Batter:.
- 1/2 cup sifted flour.
- 1 t. baking powder.
- 3/4 cup corn meal
- 1 beaten egg.
- 1 t. salt.
- 1/2 soda.
- 1 cup buttermilk.
- 2 T. melted fat or salad oil.

- heat oven to 375 degrees. in large skillet cook turkey,onion, and bell pepper until turkey is cooked. stir in beans,salsa, and jalapenos.
- prepare corn mix and pour into greased 9" pie plate.
