SQUASH, ZUCCHINI, AND TOMATO CASSEROLE



Squash, Zucchini, and Tomato Casserole image

Number Of Ingredients 11

6 cups thinly sliced yellow squash
6 cups thinly sliced zucchini
2 tablespoons olive oil
1 teaspoon kosher salt
2 teaspoons ground black pepper, divided
2 cups panko (Japanese bread crumbs)
1 (8-ounce) package extra-sharp white Cheddar cheese, shredded
1⁄3 cup thinly sliced green onion
¼ cup chopped fresh parsley
1 teaspoon garlic salt
8 plum tomatoes, thinly sliced

Steps:

  • Preheat oven to 350°. Spray a 3½-quart oval baking dish with cooking spray.
  • In a large bowl, toss together squash, zucchini, oil, salt, and 1 teaspoon pepper. In a medium bowl, stir together bread crumbs, next 4 ingredients, and remaining 1 teaspoon pepper. Spread half of bread crumb mixture in bottom of prepared pan. Arrange squash, zucchini, and tomatoes in a spiral pattern over bread crumb mixture. Sprinkle remaining bread crumb mixture on top of vegetables, and cover with foil.
  • Bake for 30 minutes. Uncover and bake 30 minutes more or until vegetables are tender and bread crumbs are golden brown.

½ cup shredded Parmesan cheese

Steps:

  • Preheat oven to 350 degrees. Spray a square baking dish with non-stick cooking spray.
  • Lay sliced vegetables on a flat surface. Mix dry seasonings together and sprinkle over vegetables.
  • Stack vegetables, alternating zucchini, yellow squash, and tomato, and stand in the baking dish creating three to four rows.
  • Pour olive oil over the vegetables and top with Parmesan cheese.
  • Bake for 30 to 45 minutes depending on desired tenderness.

2 tablespoons olive oil
1 cup chopped onions
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon minced garlic
2 pounds summer squash (about 6 medium), sliced into thin rounds
2 pounds zucchini (about 6 medium), sliced into thin rounds
1 teaspoon finely chopped fresh thyme leaves
3 large eggs
1/4 cup heavy cream
1 cup crushed butter crackers
1/2 cup grated Parmesan cheese, optional

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9 by 13-inch baking dish with 1/2 tablespoon butter.
  • Heat the olive oil and the remaining 1 tablespoon butter in a medium pot over medium-high heat. Add the onions, salt, and black pepper and cook until the onions are soft, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the squash and zucchini and cook until tender, stirring occasionally, about 20 minutes. Stir in the thyme and remove from the heat. Using a slotted spoon, transfer the vegetables to the prepared baking dish, reserving the cooking liquid.
  • Combine the eggs and cream in a medium bowl and whisk to blend. Gradually whisk the reserved cooking liquid into the egg mixture. When all the cooking liquid is incorporated, pour the mixture over the vegetables in the baking dish. Using a spoon, gently shift the vegetables around so the egg mixture is evenly distributed. Bake until the mixture sets, about 30 minutes. Remove from oven and sprinkle first with the crackers and then with the Parmesan, if using, and return to the oven. Bake until golden brown, 10 to 15 minutes.

1 teaspoon Italian seasoning
Kosher salt
Freshly ground black pepper

Steps:

  • Heat the oil and butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until just softened, about 5 minutes. Add the garlic and cook, stirring occasionally, for 1 minute. Add the zucchini, squash, Italian seasoning and a generous pinch of salt. Cook, stirring occasionally, until the zucchini and squash are tender and beginning to brown in some spots, about 10 minutes. Season with salt and pepper. Serve warm.

4 cups yellow squash, sliced (2 lbs)
2 cups zucchini, sliced (1 lbs)
1 onion, rough chopped
4 -5 tomatoes, peeled and chopped with juice
1 egg, lightly beaten
1 tablespoon all-purpose flour (or rice flour)
2 teaspoons sugar (or Splenda)
1 teaspoon sea salt
1 teaspoon paprika
1 teaspoon garlic, finely minced
1/2 teaspoon black pepper
2 cups mozzarella cheese, shredded
1 cup cheddar cheese, shredded
1/2 cup parmesan cheese, grated

Steps:

  • Preheat oven to 350°F
  • Lightly grease a shallow 2 1/2 quart dish and set aside.
  • Combine squash, zucchini, onion and bring to a boil in a large saucepan.
  • Reduce heat to low and simmer 10 minutes or until vegies are tender. Drain well and set aside.
  • Combine tomatoes, flour, sugar, salt, garlic, paprika, and pepper. Saute until tomatoe liquid is slightly reduced, about 5 minutes.
  • Gently combine beaten egg, mozzerella and cheddar cheese with squash, zucchini, and onion mixture. Then add the tomato reduction. Be gentle so vegies are not torn into mush. Top with Parmesan cheese.
  • Bake for 30-40 minutes. Let stand for 10 minutes before serving.

I made this tonight and just loved it. It is a great way to get rid of some of the abundance of squash in my garden. I must give credit to Paula Deen who is the creator of the recipe. Makes a great side dish in a southern meal.

3 cups yellow squash, large diced
3 cups zucchini, large diced
vegetable oil
1 large onion, chopped
4 tablespoons butter
1/2 cup sour cream
1 cup grated cheddar cheese
1 cup crushed butter flavored cracker (recommended Ritz)
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
butter flavored cracker (recommended Ritz)

Steps:

  • Preheat oven to 350°F.
  • Saute the squash in a little vegetable oil over medium-low heat until it has completely broken down, about 15 to 20 minutes.
  • Line a colander with a clean tea towel.
  • Place the cooked squash in the lined colander.
  • Squeeze excess moisture from the squash. Set aside.
  • In a medium size skillet, saute the onion in butter for 5 minutes.
  • Remove from pan and mix all ingredients together except cracker crumbs.
  • Pour mixture into a buttered casserole dish and top with cracker crumbs.
  • Bake for 25 to 30 minutes.

2 lbs yellow squash, sliced and half cooked
1/4 lb chopped bacon
1/2 cup chopped onion
1/2 cup chopped celery
1 cup green onion, chopped (tops and bottoms)
1 1/2 cups tomatoes, chopped
1/2 cup cream of mushroom soup
1/2 cup breadcrumbs
1 cup shredded American cheese
salt and pepper, to taste (or any favorite seasoning)

Steps:

  • Fry the bacon until crisp.
  • Add onion, celery and green onions; saute until soft.
  • Add tomatoes, cream of mushroom soup& bread crumbs.
  • Mix with the squash.
  • Place this mixture in baking dish; top with cheese.
  • Bake for 1/2 hour at 350 degrees.

10 saltine crackers, or as needed, crushed
¼ cup bread crumbs

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Fill a large pot with water and bring to a rolling boil. Add yellow squash, zucchini, and onion; bring back to a boil, and cook vegetables until tender, about 15 minutes. Drain and transfer vegetables to a large bowl.
  • Mix Cheddar cheese, baking mix, butter, eggs, sugar, and salt with the cooked vegetables using a large spoon; stir until butter has melted and baking mix has dissolved. Fold crushed crackers into the mixture until the liquid has been absorbed. Pour mixture into a 1 1/2-quart casserole dish; top with bread crumbs.
  • Bake in the preheated oven until topping is lightly browned and cheese is melted, 30 minutes.
