CURRIED SWEET POTATO-APPLE SOUP

- Preheat the oven to 425 degrees F. Peel and dice 2 1/2 sweet potatoes. Melt 2 tablespoons butter in a large pot over medium heat. Add the onion and garlic and cook until soft, about 5 minutes. Stir in the ginger, nutmeg, 1 1/4 teaspoons curry powder, and salt and pepper to taste and cook until toasted, 1 more minute.
- Add the diced sweet potatoes, chicken broth and 2 cups water to the pot, cover and bring to a boil over medium-high heat. Reduce the heat to medium low and stir in the applesauce. Simmer, covered, until the sweet potatoes are soft, about 20 minutes. Puree the soup with a blender until smooth. Season with salt and pepper; keep warm.
- Meanwhile, peel and thinly slice the remaining 1/2 sweet potato and toss with the olive oil, and salt and pepper to taste. Spread in a single layer on a baking sheet and bake until crisp, 7 to 10 minutes.
- Heat the remaining 1 tablespoon butter in a skillet over medium heat. Add the remaining 1/4 teaspoon curry powder and cook, stirring, until browned; remove from the heat and add the vinegar. Top with the curry butter, cilantro and sweet-potato chips.

YAM AND APPLE SOUP

Steps:
- In Dutch oven or flameproof casserole, cook the cumin over medium heat, shaking & stirring pan frequently, until it is fragrant & toasted, 4-5 minutes.
- Add diluted chicken broth, apple juice concentrate, yams, apple, onion, pepper & cinnamon, then cover.
- Bring to boil over high heat, then reduce heat to medium-low & simmer until yams & apple are tender, about 20 minutes.
- Transfer soup to food processor or blender & puree.
- Return mixture to pan & add milk, then Cook over medium heat, stirring frequently, until heated through.
- Ladle soup into bowls, top with yogurt & sprinkle with cilantro or parsley.

SWEET POTATO SOUP WITH GINGER, LEEK AND APPLE
This was our favorite recipe test of the soup batch. Inspired by a sweet potato and apple purée I make every year for Thanksgiving, the soup also has savory overtones. For a spectacular finish, garnish each bowl with a squeeze of lime and a sprinkle of medium-hot chili powder or chipotle chili powder.

- Heat the oil or butter in a heavy soup pot or Dutch oven over medium heat. Add the leek and cook, stirring, until it is tender, about 5 minutes. Add the ginger and stir together until fragrant, about 1 minute. Add the sweet potatoes, regular potato, apples and water and bring to a simmer. Add salt to taste, reduce the heat, cover and simmer 45 minutes to an hour, until all of the ingredients are thoroughly tender.
- Using an immersion blender, purée the soup (or you can use a regular blender, working in batches and placing a kitchen towel over the top to avoid splashing) until very smooth. Return to the pot, heat through and adjust salt. Ladle into bowls, squeeze a little lime juice and sprinkle a little chili powder over each serving and serve.

From an old kitchen them calendar which included recipes. When you want that easy apple & yam casserole but don't have a lot of time this is a great short cut recipe. You can either microwave this dish or use your oven. Love the versatility!

- Cut apples in the pie filling into bite-sized pieces.
- In a medium bowl, mix the pie filling, cinnamon, and brown sugar until well blended.
- Gently stir in the cut-up yams.
- Grease a two-quart casserole dish and pour in apple-yam mixture.
- You may either microwave for approx 8-10 minutes until warmed through or you can put it into a 350F oven and bake approximately 15 minutes until warmed.

- In greased 2 qt casserole, layer half the yams and half the apples.
- Mix brown sugar and spices together.
- Sprinkle half over yams and apples.
- Dot with half the butter.
- Repeat layers.
- Cover and bake at 375* for 15 minutes.
- Uncover, baste with the juices,and bake 15 minutes more.

- Boil yams for 30 minutes or until tender yet firm. For a quicker method, poke holes in the yams and microwave on high for 10 minutes.
- In a saucepan over medium heat, melt the butter with the cornstarch and brown sugar. Whisk in the apple juice, lemon juice, cinnamon, and allspice. Bring to a boil stirring occasionally. Boil 2-3 minutes. Set aside.
- Preheat over to 375°F and lightly grease a 9x13-inch baking pan.
- Peel cooked yams and cut into 1/3-inch slices.
- Place a single layer of yams down into greased baking pan. Second layer will be your sliced apples. Repeat with another layer of yams.
- Dump sauce over top of yams.
- Cover pan with tinfoil and bake for one hour. Remove foil and continue baking for another half hour. Baste every half hour to prevent the yams and apples from drying out.
- ENJOY!

- Preheat oven to 350°F. Boil yams in pot of boiling salted water until tender, about 20 minutes. Add apple; cook until tender, about 5 minutes. Drain well. Place yams and apples on large baking sheet. Bake until slightly dry, about 10 minutes. Blend yams and apple in processor until smooth. Add butter and spices; blend until butter melts. Season with salt and pepper. (Can be made 1 day ahead. Chill.) Transfer mixture to medium saucepan. Stir yams over medium-low heat until hot.

- Peel, slice and boil yams for about 1/2 hour.
- Drain and reserve 1 1/2 cups liquid. Bring liquid to a boil, add sugar, cane syrup, spices, brandy and lemon.
- Reduce heat and cook about 5 minutes.
- Add fruits and simmer another 10 minutes.
- Add corn starch dissolved in a little water, cook for 10 minutes.
- Place yams in a baking dish and poor syrup over them.
- Bake until bubbling.
- Top with marshmallows, if desired, about 5 minutes before removing from oven.
- Sprinkle with pecans after removing from oven.
