For those of us who are planners, this classic and comforting chicken soup can be made and frozen into three separate batches. And for those that need a little extra nourishment, choose from our three combos - all add an extra punch of protein, iron and zinc, which are essential for recovery.

Number Of Ingredients 8

8 cups low-sodium chicken broth or stock
One 3-pound chicken, quartered into 2 leg pieces and 2 on-the-bone breast pieces (save the backbone to make chicken stock)
Kosher salt
2 to 3 small carrots, thinly sliced
3 stalks celery with leaves, thinly sliced and leaves roughly chopped
Combo 1: 4 cups baby spinach, one 15-ounce can drained chickpeas and 1 to 2 tablespoons harissa (depending on the brand)
Combo 2: 1 cup cubed tofu, 1 cup cooked broccoli and 1 tablespoon hoisin sauce
Combo 3: 1 cup cooked quinoa, 2 ounces sliced ham cut into ribbons and 3 tablespoons chopped fresh dill

Steps:

  • Make the soup: Add the broth and 4 cups water to a large soup pot and bring to a simmer over medium-high heat. Sprinkle the chicken with salt. Submerge the chicken pieces in the broth. When the broth starts to boil, reduce the heat to a simmer. Cook until the breast and tender start to separate, about 15 minutes, then remove with tongs or a large strainer. Continue simmering the leg pieces until the meat pulls away from the bone, about 10 more minutes. Remove the legs from the pot and set aside. When the meat is cool enough to handle, remove the skin and shred the meat by hand.
  • Add the carrots and celery stalks (reserve the leaves) to the soup and simmer until tender, about 8 minutes. Stir in the shredded chicken until just heated through, about 3 minutes, then remove from the heat. Season with salt, stir in the celery leaves and cool to room temperature.
  • Divide the soup into three 4-cup servings and freeze in containers for up to 1 month.
  • To reheat: Thaw a container of soup and bring to a low boil in a medium saucepan. Add the desired combo mix-ins and cook for a just a few minutes to heat through. Serve.

In Asia, there are different kinds of 'noodle soup'. Noodle soup is more a noodle dish rather than a soup dish. This one is a great comfort food on a cold day. Light and healthy as well. Quantities are arbitrary. Adjust to own taste. Very important to add the shallots as they give the fragrance and flavor. Instead of egg noodles, sometimes I use macaroni. You can also use soy sauce instead of the salt. If you are adventurous, eat with chopped hot chile pepper or add some cayenne pepper to make the soup spicy.

12 shallots, thinly sliced
¼ cup vegetable oil
6 ounces egg noodles
1 cup bean sprouts
3 quarts chicken broth
3 cups shredded, cooked chicken breast meat
½ cup chopped green onion
salt and pepper to taste

Steps:

  • In a small skillet over medium heat, cook shallots in oil until brown and fragrant. Remove from heat and set aside.
  • Bring a large pot of water to a boil. Cook noodles in boiling water until just tender, 8 to 10 minutes; drain and rinse under cold water. Set aside.
  • Bring a small pot of water to a boil; have ready a bowl of ice water. Blanch bean sprouts by plunging them into boiling water for 1 minute, then into cold water. Drain and set aside.
  • In a large saucepan over medium heat, bring chicken broth to a simmer.
  • Divide noodles evenly between 6 bowls. Top with bean sprouts and shredded chicken. Pour the heated broth into the bowls. Drizzle with the shallot mixture and garnish with the green onion. Season with salt and pepper. Serve at once.

A from-scratch chicken soup made from chicken legs simmered into a simple broth. No need for ready-to-serve chicken broth when it is so simple to make your own.

2 skinless chicken legs and back, large
12 cups cold water
⅛ tsp turmeric, ground (optional)
1 onion, large
2 stalks celery, medium
2 carrots, medium
3 cloves garlic
2 cups green cabbage, chopped
2 cups potatoes, with skin, diced
1 cup whole wheat egg white noodles
2 tsp salt
½ tsp black pepper, freshly-ground
½ tsp oregano, dried
½ tsp basil, dried
½ tsp sugar
¼ cup parsley, fresh, chopped, for garnish

Steps:

  • Remove skin from chicken legs. Add to large soup pot that has a tight fitting lid. Pour cold water over and add the ground turmeric.
  • Prepare soup vegetables. Chop onion, slice celery and carrots, mince garlic, shred cabbage, and dice potatoes. Add to soup pot. Cover and bring to a boil. Reduce heat and simmer 30 minutes.
  • Remove chicken from pot and set aside to cool. Once cool, remove meat from bones. Discard bones, cut meat into bite-size pieces, and add back to soup pot.
  • Stir in egg noodles or dry pasta noodle of your choice.
  • Season broth with salt, pepper, dried oregano, basil, and sugar. Simmer an additional 15 minutes.
  • To serve, garnish with fresh minced parsley.

3 cubes chicken bouillon

4 boneless skinless chicken breast halves
4 tablespoons butter
1/4 lb sliced fresh mushrooms
1 cup sour cream
1 (10 ounce) can cream of chicken soup
1/2 teaspoon garlic salt
1/2 teaspoon paprika
1 cup shredded swiss cheese

Steps:

  • Heat oven to 350 degrees F.
  • Saute chicken in butter until lightly browned.
  • Place chicken in greased 8x8 baking dish.
  • In skillet, saute mushrooms until lightly browned; add sour cream and soup.
  • Cook and stir for 1 minute, scraping bits from bottom of pan.
  • Add garlic salt and paprika.
  • Pour mixture over chicken.
  • Bake for 30-35 minutes, until juices run clear.
  • Sprinkle cheese over chicken; bake another 10 minutes, until cheese is melted and bubbly.
