Found on another site and have added to my WW recipes. Comfy Food and Yummy. Great for parties, movie night at home or a side dish. Fork should enter potato without difficulty. If not, bake another 10 minutes at 40 degrees and place a sheet of foil over top not to burn. Chipolte Chili Seasoning can be subbed with a pinch of Cayenne Pepper or Cajun Seasoning. Other site states 7 points.

1 large sized russet potato, sliced into thin rounds
1/2 cup reduced-fat cheddar cheese, shredded
2 tablespoons bacon bits
1/3 cup light ranch dip or 1/3 cup light ranch salad dressing
1/2 teaspoon chipotle chili seasoning (more or less to taste)

Steps:

  • Preheat oven to 375 degrees.
  • Bring sliced potatoes to a boil in cold, salted water to cover for 5 minutes. Carefully drain, and transfer slices to a paper-towel lined countertop or cutting board. Pat to dry.
  • Spray a baking sheet with cooking spray, and lay out potato slices on it.
  • Sprinkle with salt & pepper to taste.
  • Bake 12-14 minutes in preheated oven until potatoes begin to slightly crisp and brown on the edges.
  • Remove from oven, and cover evenly with cheese and bacon bits.
  • Return to oven and cook until cheese is melted and bubbly, about 10-12 minutes.
  • Meanwhile, to prepare Chipotle Ranch Dipping Sauce, combine light ranch dressing and Chipotle Chili seasoning.
  • Garnish potatoes with optional chives or parsley and serve immediately with dipping sauce.

2 (10 ounce) packages frozen broccoli
1 (10 ounce) can Rotel Tomatoes
8 ounces Velveeta reduced fat cheese product

Steps:

  • Add 2 cans chicken broth.
  • Add 1 can Rotel tomatoes.
  • Add 2 packages frozen broccoli.
  • Cook together 8 minute and then stir in 8 oz. Velveeta light cheese.

32 ounces baked russet potatoes, about 4 large
4 slices low-sodium bacon
1 bunch scallion, sliced thin
2 teaspoons garlic, minced
2 (14 ounce) cans reduced-sodium chicken broth
1 teaspoon salt
1/8 teaspoon cayenne
1 cup fat-free half-and-half
1/4 cup chopped parsley (optional)

Steps:

  • Coarsely chop the baked potatoes and set aside.
  • Cook the bacon in a soup pot until crisp and set aside, leave 1 teaspoons drippings in the pan.
  • Add 1/2 the scallions & garlic to drippings and sautee until soft.
  • Add broth, salt, cayenne, and chopped potatoes, mash some of the potatoes against the side of the pan w/ a wooden spoon or w/ a potato masher.
  • Bring to a boil, reduce heat to simmer and cook 2-3 moremonites.
  • Add in half-and-half and parsley, return to simmer.
  • Serve w/ remaining green onions & crumbled bacon on top.

cooking spray (e.g. Pam) or vegetable oil
seasoning salt, to taste

Steps:

  • Slice potato cross-wise into very thin slices.
  • Spray a baking pan with cooking spray (or brush lightly with oil).
  • Arrange potato slices in a single layer on baking pan.
  • Spray potato slices with cooking spray (or brush lightly with oil).
  • Sprinkle with seasoned salt.
  • Broil in oven for 5 minutes.
  • Turn potato slices over, and sprinkle other side with seasoned salt.
  • Broil 3-5 minutes longer.
