from weight watchers 15 minutes five ingredient cookbook. it says these are great for entertaining because of their inpressive appearance. noone will ever know they were quick and easy to prepare.:) UPDATE: 3-23-09 these are quite tastey! :) cant believe they are only one point! I didnt use the pecans because i dont care for them. if you werent making this weight watchers style you could take the chocolate candy melts or bark and pour some over each top half. :)

Steps:
- cut an "X" in the tip of each strawberry, cutting deep but leaving strawberry whole.
- Place cream cheese and next 3 ingredients in a medium bowl, and beat with a mixer at medium speed until smooth. place mixture in a small zip top plastic bag. seal bag; snip a small hole in one corner of bag.
- pipe about 2 teaspoons cream cheese mixture into each strawberry.
- serving size=1 strawberry.

Steps:
- Place the potatoes, carrots, turnips and garlic in a 9 x 13 x 2 inch baking dish sprayed with PAM.
- Drizzle with oil; sprinkle with rosemary, salt and pepper.
- Stir to coat.
- Bake, uncovered, at 350 degrees for 35 minutes.
- Increase temperature to 450 degrees and bake 10 to 15 minutes longer or until veggies are tender.
WW 1 WW POINT CLOUD PIE
I found this recipe on Hungry Girl and they recommend using strawberry Jello, but I think almost any flavor would do! 1 Point -Rock on wit cha bad self!

Steps:
- Begin by preheating oven to 350 degrees.
- For Crust:.
- In a blender or food processor, grind Fiber One to a breadcrumb-like consistency. Combine crumbs with melted butter and stir until well mixed.
- In an oven-safe pie dish sprayed with nonstick spray, evenly distribute Fiber One mixture, using your hands or a flat utensil to press & form the crust. Use your fingers to press it into the edges and up along the sides of the dish.
- Bake pie crust for 10 minutes. Set aside.
- For filling:.
- In a separate dish, dissolve gelatin mix into 2 cups boiling water. Stir for 2 minutes, or until completely dissolved. Stir in 1 cup of cold water, and place in fridge for about 1 1/2 hours, but NO LONGER (Jell-O should be jiggly, but not firm).
- Next, use a mixer to fold in Cool Whip. Once mixture is very well blended, pour evenly into pie crust. Use a flat utensil to smooth out surface.
- Refrigerate for several hours until firm. If desired, garnish pie with sliced strawberries.

WW INSTANT OATMEAL MUFFINS (1 WW POINT EACH)
I just started weight watchers and wanted a muffin for breakfast. Other recipes called for things I didn't have so I designed my own recipe with what I had in the kitchen. These are moist and sweet enough to please and my 1 year old and 3 year old loved them. They definitely stick to paper muffin cups a little so I think I'll try skipping the paper cups next time and opt for just the muffin pan and some cooking spray.

- Melt the butter in a large nonstick skillet over medium-high heat. Add the onion, leeks and carrots; cook, stirring occasionally, until the carrots are crisp-tender, 4-5 minutes. Add the mushrooms and cook, stirring occasionally, until softened, 3-4 minutes. Add the garlic, sage, salt and pepper; cook, stirring occasionally, until the vegetables are golden, 6-7 minutes.
- Transfer to a bowl. Add the croutons and broth, stirring just until the stuffing is evenly moistened. Let cool completely. Use to stuff the Stuffed Roast Turkey (recipe posted separately).

Yum, yum! Sometimes I add some finely chopped semi-sweet chocolate. These are perfect for baby showers or wedding showers. A plastic sandwich bag can be used instead of a pastry bag by filling with the cream cheese mix and making a tiny cut in the corner.

- Cut the tops off of the strawberries and stand upright on the cut side. Make a cut 3/4 of the way down from the tip of the strawberry towards the bottom.

Steps:
- In a very large bowl, combine cereals, sugar, flours, soda, cinnamon and salt.
- In a medium bowl, combine the beaten eggs, baby food, and vanilla.
- Add the egg mixture to the cereal/flour mixture. Add the buttermilk to the cereal/flour mixture. Blend well until everything is moistened.
- Add the raisins and shredded carrots and mix well.
- Cover the bowl with plastic wrap and refrigerate over night (or for at least 2 hours).
- To bake. Heat oven to 400 degrees F. Spray muffin pans with non-stick spray. Fill muffin cups 2/3 full (Use a 1 3/4 inch cookie scoop).
- Bake 15 to 20 minutes, until nicely browned and set.
- Cool in pans for 6 minutes, then remove the muffins to a rack to cool completely. Enjoy.
- Note that the muffins freeze well. You don't have to bake up all the muffins at one time. The batter will keep in the refrigerator for 6 weeks,.
