0.5 cup(s) Uncooked white rice
0.5 fl oz Mineral water
0.25 cup(s) Seasoned breadcrumbs
1 medium Uncooked carrot(s) grated
1 medium Uncooked onion(s) finely chopped
1 clove(s), large Garlic clove(s) minced
1 egg white(s), large Egg white(s)
0.5 tsp(s) Table salt
0.25 pinch Black pepper
2 tsp(s) Olive oil
29 oz Canned diced tomatoes with basil, garlic and oregano
16 oz Uncooked 95% lean ground beef

Steps:

  • Wrap cabbage leaves in plastic wrap or moist paper towels and microwave on high power for 2 minutes, until soft. Cut off the thickest, white portion of the spine of each leaf to make leaves pliable and easy to fold; set aside.
  • Combine beef, rice, water, bread crumbs, carrot, onion, garlic, egg white, salt and pepper in a large bowl; mix well.
  • Spoon about 1/4 cup of beef mixture onto the centre of each leaf. Fold up bottom of leaf to cover filling, tuck in sides and then continue rolling to make loose rolls (rice will expand during cooking so it is important not to roll them too tightly).
  • Heat oil in a large stock pot over medium-high heat; add rolls and sauté until golden brown on all sides, turning frequently, about 5 minutes. Add tomatoes and bring to a simmer. Reduce heat to low, cover and cook until cooked through, checking the pan every 15 minutes and stirring to prevent sticking, about 1 hour. (If sauce thickens or reduces, simply add water.) Yields 2 rolls per serving.

It is not as firm as purple or green cabbage and has a mild flavor and tender-crisp texture. Refrigerate heads of cabbage wrapped in a paper towel in a plastic bag for up to 2 weeks. Don't cut or shred it until you are ready to use it in order to maximize freshness and maintain color and nutrients. Try this recipe with ground turkey for a change of pace. Leftovers reheat beautifully.

Found while surfing the Net. It's been calculated at 7 pts with cheese and 5 pts without. It is very tasty and makes a ton (perfect for OAMC). If you chop the cabbage in a food processor, you can slip in the healthy veggie without picky eaters knowing. DH liked it and he hates cabbage.

1/2 teaspoon olive oil
1 lb lean ground beef (or 1 lb ground sirloin)
1 large onion, chopped fine
2 teaspoons garlic, finely minced
1 teaspoon southwest seasoning (or Cajun seasoning)
1/2 teaspoon Hungarian paprika
salt and black pepper
1 head green cabbage, chopped into bite size pieces
1 (14 1/2 ounce) can southwestern petite dice tomatoes with juice
1 (4 ounce) can tomato sauce
1/4 cup parsley, chopped
1/4 cup vegetables or 1/4 cup water
1 cup brown rice, cooked
1 cup mozzarella cheese, low-fat

Steps:

  • Cook brown rice following package's directions.
  • Chop onion finely, and cabbage into bite size pieces.
  • Preheat oven to 350 degrees. Spray an 8 x 8 or 9 x 9 baking dish.
  • In a large skillet heat to medium heat, brown ground beef crumbling into small pieces.
  • Remove ground beef and set aside.
  • Add ½ T of oil to skillet and add chopped onion. Sautee for 5 minutes or until translucent.
  • Add minced garlic, Southwestern or Cajun seasoning, paprika and cook for 2-3 minutes.
  • Add diced tomatoes, tomato sauce, parsley, ground beef, cabbage & broth. Stir thoroughly.
  • S&P to taste. Add more spice is preferred.
  • Simmer uncovered for 15-20 minutes. Mixture will thicken slightly.
  • Add cooked rice and fold in so rice doesn't break down.
  • Transfer into baking dish and cover with foil, baking for 20 minutes.
  • Uncover and sprinkle with cheese. Bake 5-10 minutes longer until cheese melts & browns lightly.

Tastes like the real thing without all the work. Took the idea from recipe & comments from recipe # 72409 and made some changes and came up with this dish. It was a surprisingly good and a super easy one dish meal.

1 lb ground sirloin
2 cups instant rice (uncooked)
1 cup onion, chopped
1 small head of cabbage (rough chopped)
1 (10 ounce) can Campbell's condensed tomato soup
1 (10 ounce) can water
14 ounces diced tomatoes, do not drain
salt, to taste
pepper
garlic powder

Steps:

  • Preheat oven to 350.
  • Spray 13 x 9 pan with Pam.
  • Mix Tomato soup, 1/2 soup can of water and diced tomatoes together in a bowl until blended.
  • Place a layer of chopped cabbage on bottom of pan (about 1/2).
  • Put 1/2 of chopped onions over cabbage.
  • Crumble 1/2 of raw Ground Sirloin over onions and cabbage.
  • Season with Salt, Pepper and Garlic Powder.
  • Sprinkle 1/2 of Uncooked rice over this layer.
  • Pour 1/2 of Tomato mixture over this layer.
  • Repeat layers, ending with Rice and tomato mixture on top.
  • Cover with foil.
  • Bake for 1 hour covered, uncover and bake until liquid is reduced to your personal taste.
  • We like ours with some juice.
  • Served with fresh baked bread and butter, great comfort food on a cold (for Florida) night.

Steps:

  • Spray a 9x9-inch baking dish with cooking spray.
  • Layer first five ingredients.
  • Beat egg substitute and season with salt and pepper.
  • Pour over layered ingredients.
