Steps:
- spray a 9x13 casserole disch.
- add soup, onion soup, raw rice, and water.
- mix well.
- wash chicken and place on top of mixture.
- spray with I cant believe its not butter, spray (0 calories 0fat), sprinkle with salt and pepper.
- bake at 400 degrees for 1 hour.

WW CHICKEN FRIED RICE (3 POINTS)
from the WW website. This dish is successful even with my husband, who deplores eating healthy. One note: I have never used regular soy sauce when preparing this dish myself. I always use Indonesian Sweet Soy Sauce, which I'm sure lends a slightly different flavor. As written, just 3 points per one cup side serving or 6 points for a very generous 2 cup main dish serving. I actually think one cup is enough for a main dish.

Steps:
- Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add egg whites and cook, until scrambled, stirring frequently, about 3 to 5 minutes; remove from pan and set aside.
- Offheat, recoat skillet with cooking spray and place back over medium-high heat. Add scallions and garlic; sauté 2 minutes. Add chicken and carrots; sauté until chicken is golden brown and cooked through, about 5 minutes.
- Stir in reserved cooked egg whites, cooked brown rice, peas and soy sauce; cook until heated through, stirring once or twice, about 1 minute.
CHIPOTLE CHICKEN AND RICE WW
Another really simple and great tasting Weight Watchers recipe ( about 6 points, if you count them!). DH loves this!

Steps:
- Heat a large nonstick skillet over medium heat. Add the oil and add the chicken, cooking until browned. Transfer to a plate.
- Add the onion, pepper and garlic to the pan and cook over a medium heat until soft. Add the rice, chipotle and cook for about a minute.
- Stir in the chicken, tomato sauce,water and olives, and bring to a boil.
- Reduce the heat ans simmer, covered until the chicken is cooked through and the rice is tender ( about 20 minutes or so).
- Stir in the peas and heat through before serving.

- Spray a slow cooker with cooking spray. Combine in the crockpot the chicken soup, dry onion soup mix, water and uncooked rice. Stir in the chicken, mushrooms and pepper. Cover and cook on LOW for 6 to 8 hours. Gently stir just before serving.
- 6 servings (1 cup), 3 POINTS each.

QUICK AND EASY CHICKEN AND RICE CASSEROLE
This takes no time to prepare, I have tryed this using different flavor soups, I find that cream of chicken and celery are the best, or use 2 cans cream of chicken, I also like to add the garlic powder and also a pinch of cayenne pepper to the soup mixture :)

Steps:
- Set oven to 350 degrees F.
- Grease a medium-size casserole dish.
- Mix the first 6 ingredients in a bowl.
- Add the uncooked rice to the soup mixture; mix until combined.
- Transfer the soup/rice mixture to the casserole then spread out in the dish.
- Place the chicken on top of the mixture.
- Sprinkle with the dry onion soup.
- Cover with foil and bake for 1 hour 30 minutes or until rice is cooked and the chicken is done.
- Allow to stand for 10 mins before serving.
- Delicious!

Steps:
- Mix the yogurt and curry powder together in a glass or plastic bowl and add the first T of chopped coriander.
- Place the chicken breasts between sheets of cling film, then use a meat mallet or rolling pin to beat them out until slightly flattened. Add them to the yogurt mixture, stirring to coat. Cover, chill and leave to marinate for at least 30 minutes or overnight.
- Cook the rice with the stock cube until tender. Drain and rinse with cold water to cool quickly. add the carrot, red pepper, chilli, mint and remaining T of coriander.
- Grill the chicken breasts for about 6 minutes on each side until thoroughly cooked.
- Serve chicken with rice salad.
