My family loves ham like this. Sweetly seasoned ham roasted with moist heat is a delicious way to celebrate special occasions. If using a pre-cooked ham, follow the directions on the package for baking times.

1 (12 pound) bone-in ham, rump portion
½ cup whole cloves
1 cup packed brown sugar
4 cups water, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place ham in a roasting pan, and press whole cloves into the top at 1 to 2 inch intervals. Pack the top with a layer of brown sugar. Pour enough water into the bottom of the roasting pan to come to a 1 inch depth. Cover the pan tightly with aluminum foil or a lid.
  • Bake for 4 1/2 to 5 hours in the preheated oven (about 22 minutes per pound), or until the internal temperature of the ham has reached 160 degrees F (72 degrees C). Make sure the meat thermometer is not touching the bone. Let stand for about 20 minutes before carving.

1/3 cup packed brown sugar
1 (20 ounce) can sliced unsweetened pineapple slices in juice, drained (reserving 2 tbsp juice)
1/2 teaspoon ground allspice
1 small bone-in ready-to-eat ham, trimmed (rump half or butt portion, about 6 lbs)
1/4 cup Dijon mustard
30 whole cloves

Steps:

  • Preheat oven to 325°F Line a roasting pan with heavy duty foil.
  • To prepare the glaze, combine the brown sugar, allspice, and reserved pineapple juice in a small bowl.
  • Score the ham over with a small sharp knife. Spread the mustard over the top of the ham. Attach the pineapple rings to the surface in an attractive pattern, securing them with toothpicks (use whole cloves to cover the holes). Brush with half of the glaze.
  • Bake, basting with the remaining glaze every 15 minute until the ham is nicely browned and an instant-read thermometer inserted in the center reaches 140F, about 10 minutes per pound. Cover with foil and let stand before slicing.
  • Each serving is 3 oz meat with 1/4 pineapple slice = 3 points.

1 (16 ounce) container Egg Beaters egg substitute
1/2 cup onion
1 (6 ounce) can mushrooms
1/2 cup bell pepper (any color)
1/4 cup cherry tomatoes
8 slices lean ham
1/4 cup cheese sauce mix (you can get it in the spices section)
salt and pepper

Steps:

  • Cook the mushrooms, peppers, onions, and ham in a skillet until vegtables are cooked.
  • Set them aside to cool down.
  • Combine the Egg Beaters, cheese powder and cooled mushrooms etc in a mixing bowl.
  • Coat the inside of a 8x8x2 baking dish with non-stick spray.
  • Pour egg mixture into baking dish.
  • gently place tomatoes evenly across top.
  • bake for ~50 mins at 350.
  • Remove and cool. Once cool remove from baking dish and cut into 4 sections.

4 cups cubed (1/2 inch) unpeeled red potatoes (4 medium)
1 teaspoon olive or canola oil
1 cup chopped green bell pepper (1 medium)
1/4 cup chopped onion
1 1/4 cups fat-free (skim) milk
2 tablespoons Gold Medal™ all-purpose flour
1/4 cup reduced-fat or fat-free mayonnaise
1/8 teaspoon black pepper
1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
2 cups cubed cooked ham

Steps:

  • Place potatoes in 2-quart saucepan; add enough water just to cover potatoes. Heat to boiling. Reduce heat to medium-low; cook uncovered 8 to 10 minutes or until tender. Drain.
  • Heat oven to 350°F. In 10-inch nonstick skillet, heat oil over medium-high heat. Add bell pepper and onion; cook 3 to 4 minutes, stirring occasionally, until vegetables are tender.
  • Meanwhile, in small bowl, mix milk and flour with wire whisk until well blended. Stir into vegetables in skillet. Heat to boiling. Reduce heat; cook uncovered 2 to 3 minutes, stirring constantly, until thickened. Stir in mayonnaise, pepper and cheese; stir until cheese is melted.
  • Place ham and potatoes in ungreased 2-quart casserole. Pour milk mixture over ham mixture; stir to mix. Bake uncovered 25 to 30 minutes or until bubbly and light golden brown on top.
