1 tablespoon unsalted butter
1 onion, chopped
One 8-ounce piece deli ham, diced
1/2 teaspoon chopped fresh thyme
1/2 cup low-sodium chicken broth
One 17.5-ounce package potato gnocchi
1 cup frozen peas, thawed
1/4 cup heavy cream
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1 cup shredded Swiss or Gruyere cheese

Steps:

  • Preheat the broiler to high heat.
  • Melt the butter in a large ovenproof skillet over medium heat. Add the onions and cook until softened, about 3 minutes. Add the ham and thyme and continue to cook until the ham is lightly browned.
  • Add the chicken broth and 3/4 cup water and bring to a simmer. Add the gnocchi, stir well, cover and cook until the gnocchi is slightly tender, about 5 minutes. Remove from the heat. Uncover and stir in the peas, cream, 1/4 teaspoon salt and 1/4 teaspoon pepper. Sprinkle the cheese over the top and broil until golden and bubbly, about 3 minutes. Serve.

  • Boil one 17.5-ounce package potato gnocchi as the label directs. Reserve 1/4 cup water; drain. Simmer 1 cup heavy cream, 1 minced garlic clove, 1/4 teaspoon kosher salt, a few grinds of pepper and a pinch of nutmeg in an ovenproof skillet, 5 to 8 minutes. Stir in the gnocchi and thin with the cooking water. Top with 1/2 cup shredded gruyère. Broil until golden, 3 to 4 minutes. Top with chopped chives.

500 g low fat cottage cheese
1 egg yolk, lightly beaten
3 tablespoons parmesan cheese, grated
1 cup plain flour
3 shallots, chopped
400 g green prawns, peeled and deveined
3 tablespoons seafood cocktail sauce
3 tablespoons low-fat sour cream

Steps:

  • Gnocchi: Place the cottage cheese in a large bowl.
  • Stir in the egg yolk, Parmesan cheese and flour.
  • Mix to form a slightly sticky dough.
  • Bring the saucepan of water to the boil.
  • Roll teaspoons of the mixture into balls and drop into the water.
  • When the gnocchi rises to the surface, remove with a slotted spoon.
  • Arrange the gnocchi onto serving plates. Top with the seafood sauce.
  • Seafood Sauce: Cook the shallots in a pan for about 2 minutes Stir in the prawns and cook, stirring until they turn pink.
  • Stir in the seafood sauce and sour cream. Heat gently.

1 (16 ounce) container LACTAID® Cottage Cheese
2 eggs
½ cup non-dairy Parmesan cheese substitute
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 cup all-purpose flour, plus more for rolling out dough

Steps:

  • Place cottage cheese in a mesh strainer over a bowl. Let drain for 2 hours, stirring occasionally, pressing any liquid out. You should be able to express 1/2 cup of liquid. Discard liquid.
  • Mix drained cottage cheese, eggs, non-dairy Parmesan cheese substitute, salt, pepper, garlic powder and flour together in a bowl. Stir until mixture is well combined and forms a very soft, sticky dough.
  • Scrape cheese into a ball and lightly dust with flour. Cover with plastic wrap and refrigerate for 1 hour.
  • Divide the dough into 4 pieces. On a lightly floured surface, roll each piece into a 1/2-inch thick rope. Cut each rope into 1-inch pieces, and place on a lightly floured baking sheet. Roll the gnocchi down the tines of a fork or a gnocchi board to create ridges and return them to the floured baking sheet. Refrigerate until ready to use.
  • Bring a large pot of salted water to a boil. Add the gnocchi and gently stir the pot. Cook the gnocchi until they float to the top surface of the water, about 2 minutes. Drain well and serve with your favorite sauce.
