1 (8 inch) prebaked prepared pizza crust (like Boboli)
1 small yellow tomatoes, thinly sliced
1/2 cup thinly sliced assorted wild mushrooms, such as baby portobello, oyster, and or 1/2 cup shiitake mushroom
1/4 small red onion, thinly sliced
2 ounces cooked spicy low-fat chicken sausage (crumbled out of casing)
2 ounces past-skim mozzarella cheese, thinly sliced
1/4 cup fresh basil leaf

Steps:

  • Spray the grill rack with nonstick spray and set to medium-high fire.
  • Place the crust on a pizza paddle or rimless baking sheet.
  • Layer with the tomato slices, mushrooms, onions, chicken sausage, and mozzarella.
  • Using the paddle or baking sheet, slide the pizza onto the grill, away from the heat source.
  • Cover and cook, rotating the pizza a half turn after 8 minutes, until it is hot and cheese is melted.
  • Garnish with basil before serving.
  • 4 Points per serving (1/2 pizza).

This is a great way to enjoy a barbecue without the guilt of loads of points to calculate in your daily weight watcher journal. I usually have to make extra when my son's around he loves it. Sometimes I use angel hair pasta instead of the spaghetti squash. The prep time includes marinating and cooking time. I hope you enjoy it as much as we do....hot or cold!

1 1/2 lbs boneless skinless chicken breasts
1 (12 -16 ounce) bottle fat-free Italian salad dressing
1 (12 -16 ounce) bottle fat free peppercorn ranch dressing
1 (16 ounce) bag frozen broccoli carrots cauliflower mix
1 spaghetti squash

Steps:

  • Marinate the chicken in the italian salad dressing for at least 4 hours.
  • Grill or broil the chicken until done.
  • Cut up into bite size pieces.
  • Cook the spaghetti squash in either the microwave or a pot of boiling water.
  • Scrape out the spaghetti into a large bowl.
  • Microwave the broccoli, cauliflower and carrot mix until crisp tender, you don't want to lose ll your nutrition!
  • When everything is cooked put it in the bowl with the squash and toss it with the peppercorn ranch dressing.
  • Don't be skimpy with the dressing, mix it all together and enjoy!
  • Be happy with yourself this is a great nutritious meal!

2 cooked chicken breasts, shredded (about 1 cup)
1/2 cup chopped fresh basil or 1 1/2 tablespoons dried basil
2 teaspoons extra virgin olive oil
2 garlic cloves, minced
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
whole wheat french bread, halved lengthwise
3 ounces thinly sliced smoked mozzarella cheese

Steps:

  • Spray the grill rack with nonstick spray and prepare the grill for a medium-hot fire.
  • Toss the chicken, basil, oil, garlic, salt, and pepper in a small bowl.
  • Place the bread halves cut side up; scatter the chicken mixture evenly over them, and top with mozzarella.
  • Place the bread halves on the grill, away from the heat source. Cover and cook, rotating the pizzas a half turn every 5 minutes, until the cheese is fully melted, 8-10 minute.
  • OVEN METHOD: Place a baking sheet in center of oven and preheat to 400 degrees F. Place pizzas on hot baking sheet 8-10 minute.
  • 6 Points per serving (1/2 pizza).
