Steps:
- Cut chicken into 1/4-inch wide slices on a slight diagonal.
- Heat oil in large nonstick skillet over medium heat.
- Add onion and cook, stirring occasionally, until softened, about 4 minutes.
- Add curry powder and coriander, cook, stirring constantly, until fragrant, about 1 minute.
- Increase heat to medium-high, and add the chicken, salt, and pepper.
- Cook, stirring occasionally, until chicken is cooked through and most of the liquid evaporates, about 7 minutes.
- Remove pan from heat, stir in the mango, and let stand 10 min to cool.
- Spoon half the filling onto each tortilla, top with lettuce, and roll up. Cut each roll in half on slight diagonal.
- 5 points per serving (1/2 wrap).

- In a large bowl, combine the chutney, yogurt, curry powder, oil, lime juice, salt and pepper. Whisk until combined.
- Add the garbanzo beans, goat cheese, green onions, mint, chicken, raisins, hot sauce, if using, lettuce and apples.
- Spoon the filling into the center of each wrap, leaving a 2- to 3-inch border. Fold the bottom flap of the wrap up and over the filling. Fold in the sides and roll up tightly to enclose the filling. Cut each wrap in half and serve.

- Lightly spray a large saucepan with oil and heat over medium heat. Cook onion, stirring, for 3–5 minutes or until softened. Add garlic and ginger and cook, stirring, for 1 minute. Add curry powder and cook, stirring, for 1 minute or until fragrant.
- Add coconut milk and two-thirds of the mango and cook, stirring occasionally, for 5 minutes. Remove from heat and cool for 5 minutes. Blend or process curry mixture until smooth.
- Return curry mixture to pan and bring to the boil over medium heat. Add chicken, capsicum, juice and remaining chopped mango and bring to the boil. Reduce heat and simmer, covered, for 5 minutes. Uncover and simmer for 5–7 minutes or until chicken is cooked through. Stir in spinach and half the coriander and cook for 2 minutes or until spinach has wilted. Sprinkle with remaining coriander to serve.

- Heat the remaining oil in the same pan, add the onion and a good pinch of salt and gently cook for 10 minutes, stirring occasionally and adding a splash of water if it starts to catch. Add the spices, curry leaves, garlic, ginger and green chilli. Cook for 2-3 minutes until fragrant.
- Add the mango and pour in the coconut milk and stock. Return the chicken to the pan and simmer for 10-15 minutes until the chicken is cooked through.

- In a large bowl, combine yogurt, lemon juice, garlic salt, curry powder and chili powder. Measure out 1/2 cup of sauce and refrigerate. Add chicken to remaining sauce; coat well and marinate in refrigerator for 1 to 3 hours.
- Preheat grill. Thread chicken onto 4 metal skewers; discard marinade. Cook chicken until no longer pink in centre, about 10 minutes per side.
- Remove chicken from skewers and place equal amounts down centre of each tortilla. Top each with 1/4 of arugula leaves, 1 roasted pepper and 2 tablespoons of reserved yogourt sauce. Fold in bottoms of tortillas, roll and enjoy.
