This granola recipe is the only one you'll ever need!

Number Of Ingredients 7

1/2 cup neutral oil or coconut oil
1/2 cup maple syrup
4 cups large flake oats
2 cups nuts and seeds
1.5 cups dried fruit
pinch salt
generous sprinkle of cinnamon

Steps:

  • Preheat oven to 325F.
  • In a small bowl, whisk together the oil and maple syrup.
  • In a large bowl, stir together the oats and nuts, salt, and cinnamon (leave the dried fruit out for now).
  • Pour the oil and maple syrup mixture over the dry ingredients and toss to thoroughly coat.
  • Spread granola onto a parchment-lined baking sheet. Spreading it thinly will result in a toastier taste, spreading it thickly will result in bigger clumps.
  • Bake at 325F for 20 mins or until nuts smell toasted.
  • Remove from oven and spread the dried fruit on top of granola and leave to cool.
  • Break into pieces.
  • Keep in an airtight container (I use a large Ziploc freezer bag).

3 cups regular rolled oats (not quick-cooking)
1 cup slivered almonds
1 cup large unsweetened coconut flakes
1 tablespoon kosher salt
1/2 cup packed light brown sugar
1/3 cup pure maple syrup
1/3 cup vegetable oil
2 teaspoons pure vanilla extract

Steps:

  • Preheat the oven to 300 degrees F. Lightly spray a rimmed baking sheet with nonstick cooking spray.
  • Combine the oats, almonds, coconut chips and salt in a large bowl and stir to combine.
  • Combine the brown sugar, syrup and oil in a medium saucepan over medium-high heat and cook, stirring often, until the sugar is dissolved, about 2 minutes. Remove from the heat and stir in the vanilla extract.
  • Pour the sugar mixture over the oats and stir until well combined, then spread the granola mixture in an even layer on the prepared baking sheet. Bake, stirring occasionally (see Cook's Note) until toasted and golden brown, 60 to 70 minutes. Remove to a wire rack to cool completely and store in an airtight container for up to 1 week.

1 cup pumpkin seeds
1/3 cup maple syrup
1/4 cup coconut oil, melted

1 tbsp vanilla extract (optional)
1 tbsp orange zest (optional)
1 pinch sea salt (optional)
1 cup dried berries

Steps:

  • Preheat the oven to 300 F.
  • Mix all ingredients (except for dried berries) together in a large bowl. Toss to combine well, then add to a parchment-lined baking sheet.
  • Bake for 50 minutes, stirring granola 2-3 times during cooking to ensure even toasting.
  • Remove from the oven and stir in dried berries. Let cool for 10 minutes or so, then store in an airtight container or large freezer bag in the pantry for up to 2 months. Enjoy!

2 tbsp honey
1 tsp vanilla extract
300g rolled oats
50g sunflower seed

100g dried berries (find them in the baking aisle)
50g coconut flakes or desiccated coconut

Steps:

  • Heat oven to 150C/fan 130C/gas 2. Mix the oil, maple syrup, honey and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried fruit and coconut, and mix well.
  • Tip the granola onto two baking sheets and spread evenly. Bake for 15 mins, then mix in the coconut and dried fruit, and bake for 10-15 mins more. Remove and scrape onto a flat tray to cool. Serve with cold milk or yogurt. The granola can be stored in an airtight container for up to a month.

The recipe is from, Melissa Kronenthal of The Traveler's Lunchbox. She calls it "Seven-Year Granola" as it took her 7 years to develop this perfect recipe. If you want, you can substitute the ground oats with ready-made oat flour, or flax seed meal.

1 lb quick oats (450g)
3 cups coarsely chopped raw nuts, and
seeds (I like almonds, cashews & sunflower seeds- use whatever kind you like, 750ml or about 300g)
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon ground mace
1 cup packed dark brown sugar (200g)
1/2 cup unsalted butter (115g/1 stick) or 1/2 cup coconut oil
1/3 cup water (80ml)
1/2 teaspoon fine salt
2 teaspoons vanilla extract
dried fruit (I like dried cherries & dates, use as much or as little as you want)

Steps:

  • Preheat the oven to 300°F (150°C). In a food processor, coffee grinder or blender, grind half the oats to a fine powder. In a large bowl, combine the whole oats, ground oats, nuts, seeds and spices. In a microwave-safe bowl (or in a saucepan over medium heat), combine the brown sugar, butter and water and heat just until the butter has melted and the mixture is bubbly. Stir the mixture together until smooth, then stir in the salt and vanilla. Pour this mixture over the oats and nuts, stirring well to coat (it's easier to do this with your hands). It should be uniformly moist - stir in another tablespoon or two of water if it isn't. Let stand for about ten minutes.
  • Spread the mixture out on a large baking sheet, separating it into irregular clumps with your fingers, and allowing space between the clumps for the hot air to circulate. Slide into the middle of the oven and bake for 25-30 minutes, or until the top is golden brown. Remove from the oven and stir, gently breaking up the mixture into small-to-medium sized clumps. Return to the oven and bake another 15 minutes or so before stirring again. Repeat the bake-and-stir until the mixture is a uniform golden brown and completely dry; this usually takes 1-1 1/2 hours. Cool completely, then stir in any dried fruit you want to use.
  • Store in a covered container at room temperature. Serve with milk or plain yogurt and fresh fruit as desired.

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.
