This recipe is to be made using a stove top smoker. From the Cameron Cooking Guide. This is perfect cooked ahead of time and served cold. A favorite is an open face sandwich: a slice of French bread lightly toasted, lettuce, 2 slices of turkey, avocado, tomato, alfalfa sprouts, and topped lightly with Italian dressing.

1 boneless turkey breast
1 tablespoon chopped fresh ginger
2 tablespoons rice wine vinegar
1/4 cup teriyaki marinade
1/2 tablespoon alder wood chips

Steps:

  • Assemble the marinade ingredients and marinate the turkey breast for 1 hour. Leave the skin on the turkey breast and smoke over medium heat for 25 minutes per pound using alder wood chips.
  • Refrigerate and slice off as needed for sandwiches or salads.

1/4 cup fat-free mayonnaise
1/4 cup plain fat-free yogurt
1 teaspoon chopped fresh oregano
1 teaspoon chopped fresh tarragon
1 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
4 (6 ounce) tuna steaks

Steps:

  • Combine first five ingredients in a small bowl; stir well, and set aside.
  • Sprinkle salt and pepper over tuna.
  • Using 2 tablespoons of apple chips, smoke tuna steaks for twenty minutes over medium heat, this should leave the steaks medium-rare.
  • Do not overcook.
  • Serve with the herbed mayonnaise sauce and a tossed salad on the side and you have a tasty, healthy dinner.

! DO NOT ATTEMPT IF YOU DO NOT HAVE A STOVE TOP SMOKER! This is a great sweet tasting turkey. Every one I have ever made this for has loved it--even people that do not like turkey or just don't like dark meat!

4 turkey legs
4 tablespoons dry rub seasonings
1/4 cup apple juice
4 tablespoons wood chips

Steps:

  • USE Maple, Apple, and or Cherry Wood Chips.
  • Clean the legs under cold water. Pat legs dry cover legs in dry rub. Store in refrigerator for approximately 2 hours.
  • Take legs out of refrigerator add a mixture of dry rub and 1/4 cup of apple juice. Pour over legs and refrigerate for another 22 hours, flipping the legs every 2-4 hours to marinate the legs evenly. You don't have to wake up and take care of them overnight.
  • Set up your stove top smoker with 1/2 the wood chips. Place the turkey legs on the rack leaving as much space between each leg as possible and not touching the sides.
  • Close the lid tightly and place over medium heat for 1 hour.
  • Carefully open the top--do not burn yourself--remove legs.
  • Put additional wood chips in, making sure when you put the turkey legs back in to have them flipped over from where they were when originally cooked; close smoker.
  • Cook for the remaining hour on medium heat.
  • Let cool down a bit. Served warm or cold, it is such a treat--the sweet taste of home smoked turkey!

  • In a very large pot, combine the water, sea salt, maple syrup, thyme, bay leaves and garlic. Stir the brine until the salt is completely dissolved. Add the turkey, breast side down, top it with a plate to keep it submerged and refrigerate for 24 hours.
  • Light a hardwood charcoal or wood fire in the firebox of a smoker. Heat the smoker to 200°. Scatter some of the soaked wood chips around the coals; the chips should smolder but not flare. Set a drip pan filled with water on the bottom of the smoke box.
  • Remove the turkey from the brine and pat dry inside and out with paper towels. Tuck the wing tips under the turkey and tie the legs together with string. Set the turkey over the drip pan. Smoke the turkey for about 5 hours, until an instant-read thermometer inserted in an inner thigh registers 165°; monitor the coals throughout the smoking process and add more coals and/or wood, soaked chips and water as needed to maintain the temperature and smoke level. Transfer the turkey to a carving board and let rest for 20 minutes before serving.
