CREAM CHEESE WONTONS



Cream Cheese Wontons image

3 tablespoons honey
2 tablespoons low-sodium soy sauce
1 tablespoon Sriracha or other hot sauce
1 teaspoon vinegar or rice wine vinegar
1/4 teaspoon sesame oil
8 ounces cream cheese
1 tablespoon Sriracha or other hot sauce (more to taste)
2 green onions, light green and dark green parts, chopped
1 egg
24 wonton wrappers
Vegetable oil, for frying

Steps:

  • For the dipping sauce: Mix together the honey, soy sauce, Sriracha, vinegar and sesame oil in a small bowl and set aside.
  • For the wontons: In the bowl of a mixer (or you can do it by hand), mix together the cream cheese, Sriracha and green onions until totally combined (scrape the mixer bowl if necessary). In a separate bowl, mix together the egg and 1/2 cup water.
  • One at a time, assemble the wontons: Place approximately 1/2 teaspoon of the cream cheese mixture on one corner of a wonton wrapper. Use your finger to "paint" the egg wash all around the edges of the wrapper. Roll the wrapper on a diagonal, starting with the cream cheese corner and stopping when half the wrapper is rolled and the cream cheese mixture is inside. Bring up the 2 ends and use the egg wash to stick them together. Allow the remaining pointed end to naturally tuck backward. (The wontons should resemble tortellini.) As you work, place the assembled wontons under plastic wrap or a light towel to keep them from drying out.
  • Heat 2 to 3 inches of vegetable oil in a large saucepan or medium skillet until a deep-fry thermometer inserted in the oil registers just under 350 degrees F. (You don't want the oil too hot or it will burn the wontons! Experiment with a spare sheet of wonton wrappers to check.)
  • In batches of 4 or 5 at a time, fry the wontons for 45 seconds to 1 minute, flipping carefully midway through to make sure they brown evenly. Remove them when you think they still could stand to slightly brown a teeny bit more (because they will slightly brown in the seconds after you remove them from the pan!). Drain the wontons on a paper towel. Repeat with the remaining batches.
  • It's best to wait 5 to 10 minutes before serving the wontons, as the cream cheese filling can be quite hot. Serve with the dipping sauce.

3/4 cup Mascarpone cheese

  • Brush one side of each wonton wrapper with butter. Place brown sugar in a shallow bowl; press buttered side of wontons into sugar to coat. Press wontons sugared side up into greased muffin cups. , Bake at 325° for 7-9 minutes or until edges are lightly browned. Remove to a wire rack to cool. , In a small bowl, combine the cheese, honey and orange juice until smooth. Spoon about 1 tablespoon into each wonton cup. Top with strawberries. Garnish with whipped cream and mint if desired.

1/2 lb. (0.2 kg) ground pork, chicken or turkey
1/4 lb. (0.1 kg) shrimp, chopped into small pieces
1/2 teaspoon soy sauce or fish sauce
1/2 teaspoon sesame oil
3 dashes ground white pepper
1 pack store-bought wonton wrappers
water, for sealing
vegetable oil, for deep frying

Steps:

  • In a bowl, mix the ground pork, shrimp, soy sauce, sesame oil and white pepper together. Stir to combine well to form a sticky filling.
  • To wrap the wontons, lay a piece of the wonton wrapper on your palm and add 1/2 tablespoon of the filling in the middle of the wrapper. (Use 1 teaspoon filling if you are a beginner.) Dip your index finger into the sealing water and trace it on the outer edges of the wonton wrapper.
  • You can wrap the wontons three ways. To make a triangle, just fold it up to form a triangle. Pinch the edges to seal tight. To make them into the pretty shape (far left in the above picture), just pull the two corners of the triangle down so one overlaps the other, pinch and seal with water. To make them into Hong Kong style wonton (far right in the above picture), please watch my video at the top of this post.
  • Heat up some oil for deep-frying. Once the oil is fully heated, deep fry the wontons until golden brown. Drain the excess oil with paper towels. Serve hot with Chinese sweet and sour sauce or Thai sweet chili sauce.

Blueberry filling:
¾ cup fresh blueberries
1 cup Hero fruit spread, blueberry flavor
¼ cup all purpose flour
Strawberry filling:
¾ cup fresh strawberries
1 cup Hero fruit spread, strawberry flavor
¼ cup all purpose flour
2 dozen wonton wrappers
1 egg, beaten
1 large pot of oil for deep frying
a touch of powdered sugar for topping
a handful of fresh mint leaves for garnishing

Steps:

  • Combine fresh blueberries, blueberry jam and flour in a bowl, stir to mix well.
  • Repeat to make the strawberry filling.
  • Place a wonton wrapper on a lightly floured cutting board and spoon about 1 tablespoon of the filling on one side of the wrapper.
  • Dip your fingers in egg mixture and wet the outer edge of the wonton wrapper.
  • Fold the wrapper in half over the filling, making a half-sqaure shape.
  • Pinch the edges together and then seal the edges with a fork, make sure all the filling stays inside.
  • Repeat with remaining wrappers and filling.
  • Heat a large pot of oil to 350- 375 °F, deep fry the mini fruit pies in medium heat for 1 to 2 minutes or until the color of the wrapper turns golden brown.
  • Cook in small batches as needed.
  • Rest the mini fruit pies on paper towel to drain oil and transfer to a large plate.
  • Top them with powdered sugar and garnish with fresh mint leaves to serve and enjoy while warm!

TURKEY FILLED WONTON CUPS

1 lb ground turkey
2 stalks green onions, minced (more to garnish) (optional)
2 fresh garlic cloves, minced
fresh ginger (2-inch section, minced)
6 teaspoons low sodium soy sauce
pepper, to taste
mayonnaise
wasabi powder

Steps:

  • Make your wasabi mayo first. You can also make this the night before.
  • Be mindful, as it sits it gets stronger.
  • Preheat your oven to 350 degrees.
  • Spray a mini muffin tin with cooking spray.
  • Place one wonton wrapper into each hole. Making sure it is pressed down to the bottom.
  • Bake at 350 degrees for 10-12 mins or until golden.
  • In a large bowl, combine turkey, onion, garlic & ginger.
  • Season with pepper, to taste.
  • Add the soy sauce.
  • Mix together well (careful not to over mix or meat will be tough).
  • You want the mixture to be a nice light brown color.
  • Place a medium saute pan over medium heat.
  • When your pan is hot, add the turkey mixture & cook until done (it should take just a few mins).
  • To assemble:
  • Place a small spoonful of the turkey mixture into each cooked wonton wrapper.
  • Garnish with a small dollop of the wasabi mayo & a sprig of thinly sliced green onion (optional).

This was inspired by Creamy Fruit Cups (recipe #15419). I could only find fresh red grapes in my small town and had to improvise with other ingredients. I was pleased with the final result. I served these as part of buffet of finger foods at a breakfast party, but they could easily be a light dessert or part of an afternoon luncheon.

1 1/4 cups red grapes, cut in half
4 -6 ounces low-fat vanilla yogurt
24 mandarin orange segments
mint leaf (to garnish) (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Spray mini muffin pan with cooking spray.
  • Place a wonton wrapper in each muffin cup. Be careful to make sure that the edges of the wrapper do not fold back into the cup.
  • Bake for 10 minutes, or until golden brown.
  • Remove from muffin pan and cool completely.
  • Combine grapes and yogurt.

36 square wonton wrappers
2 1/2 tablespoons extra-virgin olive oil
1/2 pound cooked chicken
1 1/2 cups shredded red cabbage (see note 1)
1 1/2 cups shredded green cabbage
1 large carrot, peeled and shredded
2 stalks of scallions, thinly sliced (about 1/3 cup)
2 tablespoons toasted sesame seeds
2 tablespoons soy sauce
2 tablespoons honey
1 1/2 tablespoons extra-virgin olive oil
1 1/2 tablespoons rice vinegar
2 teaspoons grated ginger
1/2 teaspoon garlic powder (see note 2)
2 teaspoons toasted sesame oil
2 12-count count mini muffin pans
1 large sheet pan

Steps:

  • Prepare Wonton Cups
  • Preheat the oven to 350ºF. Position an oven rack to the center position.
  • Take one of the wonton wrappers and brush a thin layer of olive oil on one side. Flip it over and brush oil on the other side. Lay another wonton wrapper on top of the first wrapper. Brush olive oil over the second wonton wrapper. The other side of the wrapper will be greased when it comes in contact with the first wrapper.
  • Continue stacking and brushing the wonton wrappers with oil until you get a stack of 5 wrappers.
  • Cut the stack of wrappers diagonally so that you get 2 stacks of triangles. Repeat this process until you get 24 triangles.
  • Then, take a triangular piece of wonton wrapper with the longest side (hypotenuse) facing up. Make a small pinch in the middle and gather the two top corners together to form a cup (see photos or video above for reference). Make sure there is no gap when you are shaping the wonton cups.
  • Press the bottom of the wonton cup into a hole of a mini muffin pan to flatten it.
  • Continue shaping the wontons until you have filled all the holes with the wonton cups.
  • Place the muffin pans onto the baking sheet. This way, the muffin pans won't drop into the oven rack or get stuck.
  • Bake the wonton cups for 10 to 12 minutes, until the edges are golden brown.
  • Let the wonton cups cool for a few minutes before transferring them to a cooling rack. You may notice that the wonton cups look powdery. That's just excess starch from the wonton wrappers.
  • Continue baking 2 more batches of wonton cups until you get 72 total.
  • Prepare Chicken Salad
  • Dice the chicken into 1/4-inch cubes. Transfer the chicken cubes to a mixing bowl.
  • Add the shredded red cabbage, green cabbage, carrots, scallions, and sesame seeds. Toss everything together.
  • In a small bowl, mix the soy sauce, honey, olive oil, vinegar, ginger, garlic powder, and sesame oil. Stir until the honey completely dissolves.
  • Drizzle the dressing over the chicken and vegetables. Toss everything together.
  • Spoon the chicken salad into the baked wonton cups. Serve.

Cooking spray
36 wonton wrappers, thawed (if frozen)
2 tablespoons canola oil
2 teaspoons sugar

Steps:

  • In a medium bowl, mix together the strawberries, sugar, vanilla and salt. Cover and refrigerate for at least 2 hours or overnight.
  • In the bowl of an electric mixer, whip the cream and mascarpone together until stiff peaks form. Gently fold in the cookies and berries with any collected juices. Leave a few streaks if desired.
  • Spoon the mixture into the mini wonton cups and top with more crushed cookies and chopped strawberries if desired.
  • Preheat the oven to 375 degrees F. Spray two mini-muffin tins with cooking spray.
  • Brush the wonton wrappers all over with oil. Place each in a muffin-tin cup and gently press down so that it forms a cup. The wrapper will be slightly pleated and stick up out of the cup. Sprinkle with the sugar and bake until golden brown and crispy, 8 to 10 minutes. Remove the wrappers from the tin and let cool.

1 Tbsp butter, melted
2 Tbsp sugar
2 c fresh berries
1 - 14 oz low fat sweetened condensed milk
1 - 8 oz container of light cool whip
1 Tbsp lemon zest, grated
1/4 c lemon juice

Steps:

  • 1. Preheat oven to 350. Using a pastry brush, brush melted butter onto one side of wonton wrapper, sprinkle same side with sugar. Press each wrapper, sugar side up into mini muffin tin. Bake 6-8 minutes or until edges are golden brown. Cool completely on wire racks.
  • 2. Whisk together sweetened condensed milk, lemon zest, lemon juice in a medium bowl. Fold in cool whip. Spoon into cooled wonton cups. Top with 2 or 3 fresh berries or 1 fanned strawberry.
  • 3. *wonton wrappers can be baked up to a week ahead of time and stored at room temperature in a sealed bag or container.
  • 4. *Can dust with powdered sugar if desired. *Can drizzle chocolate or white chocolate or both over tops. *Or a dalop of whipped cream on top is nice! (as shown in photo)

6 cups chicken broth low sodium
1- inch piece fresh ginger (sliced thin)
1 clove minced garlic
20 mini frozen wontons (I love the Chicken Cilantro one's from Trader Joe's)
1 1/2 cups sliced shiitake mushrooms
4 baby bok choy (halved lengthwise and halved)
1 tablespoon soy sauce
1 teaspoon sesame oil
scallions (sliced green parts only for garnish)

Steps:

  • Bring chicken broth to a boil in a large pot.
  • Smash the sliced ginger with the side of a knife to bring out the flavor and add to the pot with the garlic, cover and cook 5 minutes.
  • Add the bok choy and partially cook 5 minutes, then add the frozen wontons and mushroom, simmer for 2 to 3 minutes, until the wontons are heated through and bok choy is tender and wilted.
  • Stir in soy sauce and sesame oil.
  • Divide soup in four bowls. Garnish with fresh scallions.
