WONTON SOUP

Wonton Soup image

I love soups, and one of my favorites is wonton soup. This version was printed in Saveur magazine. In China this dish is considered a snack rather than one course of a meal. If you have a choice, try to find a good quality, thinner, wonton wrapper at your Asian food market. The steps look long, but I've broken them down in many simple steps for clarity.

WONTON SOUP

Wonton Soup image

Recipe VIDEO above. Homemade wontons are amazing! No fillers, just real ingredients in the filling. Terrific standby freezer meal!

Provided by Nagi | RecipeTin Eats

Categories     Dinner

Time 35m

Number Of Ingredients 19

50 - 60 wonton wrappers ((Note 1))
200 g / 7 oz lean pork mince ((ground pork))
200 g / 7 oz peeled prawns / shrimp (, roughly chopped)
1 tbsp ginger (, finely grated (1.5" / 3cm piece))
2 shallots / green onions (, finely chopped (5 tbsp))
1 tbsp light soy sauce ((Note 2))
2 tbsp Chinese cooking wine ((Shaoxing wine) (Note 3))
1/2 tsp salt
2 tbsp sesame oil, toasted ((Note 4))
3 cups / 750 ml chicken broth ((Note 5))
2 garlic cloves (, smashed (6))
⅓" / 1 cm piece of ginger (, sliced (optional, but highly recommended))
1½ tbsp light soy sauce ((Note 2))
2 tsp sugar ((any))
1½ tbsp chinese cooking wine ((Note 3))
¼ - ½ tsp sesame oil
Shallots / scallions (, finely chopped)
Bok choy (, quartered, or Chinese broccoli cut into 10cm /4" lengths (optional))
40 - 50 g / 1.5 - 1.75 oz dried egg noodles per person (, (optional) (8))

Steps:

  • Place Filling ingredients in a bowl. Use a potato masher to mash until fairly smooth - about 20 mashes. Don't turn the prawn into a complete paste, small chunks are good.
  • Use My Way (better Wonton Soup experience!) or the Asian Grocery Store Way (easier to pack for freezing).
  • Lay Wontons on work surface. Use 2 teaspoons to put the Filling on the wontons. Work in batches of 5 if starting out, up to 15 or 20 if confident. Brush 2 edges with water. Fold to seal, pressing out air. Brush water on one corner and bring corners together, pressing to seal.
  • Place wrapped wontons into a container with a lid as you work (so they don't dry out).
  • To cook: bring a large pot of water to boil. Place wontons in water and cook for 4 minutes or until they float. Remove with slotted spoon straight into serving bowls. Ladle over broth.
  • To freeze: Freeze uncooked in airtight containers. Cook from frozen for 6 to 8 minutes. IMPORTANT: Do not freeze if you made this with defrosted frozen prawns. (Note 11)
  • Place Broth ingredients in a saucepan over high heat. Add white ends of scallions/shallots if leftover from Wonton filling.
  • Place lid on, bring to simmer then reduce to medium high and simmer for 5 - 10 minutes to allow the flavours to infuse. Pick garlic and ginger out before using.
  • If using vegetables, blanch in the soup broth and place in serving bowl.
  • Prepare noodles according to packet directions (if using noodles). Place in serving bowl with cooked wontons and blanched vegetables.
  • Ladle over soup. Serve!

WONTON SOUP

Wonton Soup image

Making this classic Chinese soup is a lot of fun and easier than you might think -- it's the perfect snow-day activity.

Coarse salt
3 scallions, thinly sliced on the diagonal

  • Make soup: In a large pot, combine broth, 4 cups water, and 1 teaspoon salt; bring to a boil. Add wontons one at a time; return to a boil. WONTON SOUP

Wonton Soup image

Note: If you plan on saving any of this soup for leftovers, you might consider cooking the wontons in a separate pot of boiling water before adding them to the broth for serving. Because the wontons themselves are coated with cornstarch, they will make the soup cloudy, thick, and starchy, if allowed to sit in the soup for any length of time. You won't have this problem, however, if you choose to serve the soup immediately.

Categories     appetizer

Time 1h30m

Yield about 2 quarts, 6 to 8 servings

Number Of Ingredients 15

1 tablespoon vegetable oil
1 tablespoon plus 1 teaspoon minced garlic
2 tablespoons finely chopped fresh ginger
1/4 cup thinly sliced scallions, plus 3 tablespoons finely chopped
10 cups canned low sodium chicken broth
1/2 pound ground pork
1 egg yolk
2 teaspoons soy sauce
1 1/2 teaspoons rice wine vinegar
1/2 teaspoon sesame oil
1/4 teaspoon crushed red pepper
About 30 wonton wrappers, thawed if frozen
1 1/2 cups thinly sliced bok choy
1/2 cup sliced shiitake mushroom caps
1/4 cup sliced bamboo shoots

Steps:

  • In a large saucepan or soup pot heat the oil over medium high heat until hot. Add 1 tablespoon of the garlic and 1 tablespoon of the ginger and cook, stirring, until fragrant, 1 to 2 minutes. Add the 1/4 cup of sliced scallions and the chicken broth and bring to a boil. Reduce heat to medium low so that the broth just simmers. Allow broth to simmer for at least 20 to 30 minutes while the wontons are being assembled.
  • In a small mixing bowl combine the remaining teaspoon of minced garlic, remaining tablespoon of chopped ginger, 3 tablespoons of finely chopped scallions, the pork, egg yolk, soy sauce, rice wine vinegar, sesame oil and crushed red pepper. Mix until thoroughly combined.
  • Working on a flat work surface, lay out a few of the wontons. (Keep remaining wonton wrappers covered with plastic wrap.) Fill a small bowl partially with cool water and set aside. Using a teaspoon measure, place a heaping teaspoonful of the meat filling in the center of each wonton. Using your fingers, lightly wet the edges of the wonton. Bring 2 opposite corners of the wonton together to form a triangle and enclose the filling, pressing edges firmly around the mound of filling to eliminate any air pockets and seal. Moisten opposite corners of the long side. Curl moistened corners toward each other, overlapping one on top of the other, and press the edges together to seal. You should now have a rounded stuffed wonton with a triangle poking up at the top. Assemble the remaining wontons in the same manner. When the wontons are all assembled, set aside.
  • Add the sliced bok choy, mushrooms, and bamboo shoots to the broth and cook for 2 to 3 minutes. Using your hands or a slotted spoon, gently add the prepared wontons to the simmering broth. Increase the heat slightly so that the broth returns to a gentle simmer. Cook, stirring occasionally (very gently), until the wontons float and the pork filling is cooked through, about 5 minutes. Serve immediately.

PORK AND SHRIMP WON TONS

Pork and Shrimp Won Tons image

A steaming bowl of won tons is welcome in any season, and making them at home is a fairly easy process. Purchase a package of high-quality won ton skins, which are available everywhere, and then it's just a matter of filling and folding them. Once they hit boiling water they cook for just 2 minutes. The filling - usually a simple mixture of well-seasoned minced meat - may be prepared hours ahead and chilled. This somewhat spicy pork and shrimp filling is particularly delicious, with plenty of ginger and Chinese garlic chives.

Categories     main course

Time 1h

Yield About 30 wontons

Number Of Ingredients 18

1/2 pound ground pork, not too lean
1/2 pound fresh shrimp, peeled, deveined and roughly chopped in 1/4-inch pieces
Salt and pepper
1 tablespoon sweet rice wine, such as Shaoxing rice wine (or use sherry)
1 tablespoon soy sauce
1 tablespoon sugar
1 tablespoon finely grated ginger
2 cloves garlic, minced
1 teaspoon spicy Chinese bean paste, also called chili bean sauce (or use chile paste)
2 serrano chiles, finely chopped
1 1/2 cups chopped Chinese garlic chives (or use 3/4 cup chopped scallions, green and white parts)
36 wonton skins, about 3 by 3 inches, available at Asian markets and many grocery stores
1 small egg, beaten
Cornstarch for dusting
8 ounces baby spinach leaves
1/2 cup chopped cilantro
8 cups good chicken broth, hot, salted to taste
Red pepper oil (optional), see note

Steps:

  • Put pork and shrimp in a chilled mixing bowl. Season with salt and pepper and mix briefly with chopsticks, wet hands or wooden spoons. Add rice wine, soy sauce, sugar, ginger, garlic, bean paste, serrano chiles and garlic chives. Mix well to incorporate. Pan-fry a small flat patty in a small amount of oil to check seasoning; taste and adjust. Transfer mixture to a small container, cover and chill at least 30 minutes, or longer if you have time, up to 24 hours.
  • To prepare wontons, remove a few wonton skins from package and lay them on dry work surface. Put 1 teaspoon filling in the center of each square skin. Paint edges of square lightly with egg. Gently fold one side over the other, pinching edges together. You should a have a folded rectangle. Now pull the lower corners in toward each other and pinch together to make the traditional curved wonton shape. Place wontons 1 inch apart on a baking sheet or platter. Dust lightly with cornstarch and refrigerate, uncovered, until ready to cook.
  • Bring a large pot of well-salted water to a boil. Meanwhile, put a small handful of spinach leaves and about 2 tablespoons cilantro in each person's deep wide soup bowl. When water is boiling, drop about 10 wontons into pot and cook for 2 minutes. Remove with wire bamboo spider (or a large fine-meshed sieve with a handle) and divide among bowls. Repeat with remaining wontons. Pour about 11/2 cups hot broth over each serving. Drizzle with red pepper oil if desired.

SIMPLE WONTON SOUP

Simple Wonton Soup image

This simple wonton soup recipe is so delicious and easy to follow. The wontons can be frozen, boiled and added to stock to make wonton soup any time of day.

Provided by Sarah

Categories     Soups and Stocks

Time 2h

Number Of Ingredients 10

10 oz. baby bok choy or similar green vegetable
8 oz. ground pork ((225g))
2 1/2 tablespoons sesame oil
1/8 teaspoon white pepper
1 tablespoon soy sauce
½ teaspoon salt
2 tablespoons Shaoxing wine
1 package wonton wrappers
6 cups chicken stock ((about 1.5 liters))
1 scallion ((chopped))

Steps:

  • Start by thoroughly washing the vegetables. Bring a large pot of water to a boil and blanch the vegetables just until wilted, about 60-90 seconds. Drain and rinse in cold water.
  • Grab a good clump of veg and carefully squeeze out as much water as you can. Very finely chop the vegetables (you can also speed up the process by throwing them in the food processor). Repeat until all the vegetables are chopped.
  • In a medium bowl, add the finely chopped vegetables, ground pork, 2 1/2 tablespoons sesame oil, pinch of white pepper, 1 tablespoon soy sauce, 1/2 teaspoon salt, and 1-2 tablespoons Shaoxing wine. Mix very thoroughly until the mixture is totally emulsified-almost like a paste.
  • Now it's time to assemble! Fill a small bowl with water. Grab a wrapper and use your finger to moisten the edges of the wrapper. Add a little over a teaspoon of filling to the middle. Fold the wrapper in half and press the two sides together so you get a firm seal.
  • Hold the bottom two corners of the little rectangle you just made (the side where the filling is) and bring the two corners together. You can use a bit of water to make sure they stick. And that's it!
  • At this point, you can cook (boil) and taste a couple of wontons and adjust the seasoning of your filling to taste--you can always add a little more Shaoxing wine, soy sauce, sesame oil, salt, and/or white pepper to your liking.
  • Once you're happy with the flavor of the filling, keep assembling until all the filling is gone. Place the wontons on a baking sheet or plate lined with parchment paper, and make sure they are not touching (this will prevent sticking).
  • If you'd like to freeze your wontons right away, you can cover the wontons with plastic wrap, put the baking sheet/plate into the freezer, and transfer them to freezer bags once they're frozen. They'll keep for a couple of months in the freezer, and be ready for wonton soup whenever you want it.
  • To make the soup, heat your chicken stock to a simmer and add 2-3 teaspoons sesame oil and white pepper and salt to taste.
  • Bring a separate pot of water to a boil. Carefully add the wontons one at a time to the pot. Pick up the pot and use a swirling, twisting motion to keep the pot moving and prevent the wontons from sticking to the bottom. If they do stick, don't worry, They should come free once they're cooked. Once they're floating, boil them for another 1-2 minutes. Take care not to overcook them - mushy wontons are a sin! Remove the wontons with a slotted spoon and put them in bowls.
  • Pour the soup over the wontons and garnish with scallions. Serve!

HOMEMADE WONTON SOUP

Homemade Wonton Soup image

A homemade wonton soup recipe that's fun and easy to make, with a flavorful filling of shrimp, pork, shallot, and Asian seasoning.

Provided by Unpeeled

Categories     Appetizer     dinner     lunch

Number Of Ingredients 18

30 wonton wrappers
1/2 pound fresh ground pork
1/4 pound peeled and deveined shrimp (if frozen, thaw and pat dry)
1-inch knob peeled fresh ginger, chopped
1 large shallot, peeled and chopped
2 teaspoons soy sauce
1 tablespoon mirin
1 teaspoon rice vinegar
1/2 teaspoon kosher salt
pinch red pepper flakes
2 cups water
1 1/2 quarts unsalted chicken stock (I like Swanson's)
1-inch piece fresh ginger, sliced into matchsticks
1 tablespoon soy sauce
1 tablespoon kosher salt, or to taste
2 teaspoons sugar
4 scallions, sliced thin on the diagonal, to garnish
a few handfuls of fresh spinach or chopped bok choy, optional

Steps:

  • In a food processor, combine the shrimp, ginger, and shallot. Lightly process into a chunky paste. Combine in a mixing bowl with the ground pork, soy sauce, mirin, salt, rice vinegar, and red pepper flakes.
  • Working several at a time, lay a few wonton wrappers on a clean countertop or flat surface. Keep the remaining stack of wonton wrappers loosely covered with a clean kitchen towel or plastic wrap. Lightly brush the four edges of the wonton rappers with water and spoon about a tablespoon of filling into the center of each.
  • Fold the wontons in half into a triangle. Make sure no air gets trapped inside and that the edges are fully sealed. Then, fold the left and right corners across the center of the dumpling and press them together, like arms crossed. You will need to dab them with water to make the "arms" stick together. Repeat with the remaining wrappers and filling.
  • Bring a medium pot of lightly-salted water to a boil. Gently drop a number of dumplings (about 8 to 10 at a time) into the water and boil for about 5 minutes, until they float and are fully cooked. Use a slotted spoon to place them in a shallow bowl as you repeat until all the dumplings are cooked.TIP: You will probably not need all of these dumplings for the soup. You can make them all and enjoy the extra on their own, or freeze about 10 of them, raw, for another time.
  • Combine the 2 cups water, stock, ginger, soy sauce, salt, and sugar and bring to a boil. Simmer for about 5 minutes. Taste for seasoning.
  • Add about 20 dumplings to the soup -- or more if you want, because they're just that good. If using, add the bok choy and spinach and let wilt before ladling into bowls and garnishing with fresh scallions.

Categories     appetizer

Time 25m

Yield 4 servings

Number Of Ingredients 7

6 cups reduced-sodium chicken broth
1 cup shredded cabbage
1/2 cup shredded or diced cooked pork
1 tablespoon soy sauce
1 tablespoon sesame oil
16 wonton wrappers
1/4 cup chopped scallions

Steps:

  • Place broth and cabbage in a large saucepan and set pan over medium-high heat. Bring to a simmer.
  • Meanwhile, in a food processor, combine pork, soy sauce and sesame oil. Pulse 3 or 4 times until the pork is finely minced but not a paste.
  • Arrange 16 wonton wrappers on a flat surface. Spoon filling onto the center of each wrapper, to within 1/4-inch of the edges (about 1 teaspoon per wrapper). Wet your fingers with water and pull up corners of the wontons to create individual "purses". Pinch the edges together (with wet fingers) to seal.
  • Place stuffed wontons in simmering broth. Cook 5 minutes, until wontons are tender and translucent. Remove from heat and stir in scallions.

WONTON NOODLE SOUP (云吞面)

Wonton Noodle Soup (云吞面) image

Learn how to make this classic Cantonese comfort food at home!

Provided by Made With Lau

Categories     main course

Time 30m

Yield 4

Number Of Ingredients 12

15 oz wonton noodles
30 wontons
12 oz bok choy
1 piece green onion
8 pieces shrimp
14 oz chicken broth
4 cups water
1 tsp salt
1 tbsp olive oil
1 tbsp fish sauce
1 tsp sesame oil
0.25 tsp white pepper

Steps:

  • We'll start by washing and cutting our bok choy into quarters along the stem.
  • Set the stove to high heat and bring a pot of water to a boil. We'll want to use more water so that the noodles cook faster, which leads to a more chewy, springy texture.
  • For our broth, we'll add water and chicken broth to the pot, and bring it to a boil.
  • We'll dump the shrimp in as we start plating the bok choy on top of the noodles.
  • We have a whole recipe and video on this, but if you're starting with raw wontons, you'll boil them for about 3-5 minutes until they start floating. We have some additional pro-tips for cooking in our wonton video so be sure to check the video out if you haven't seen it already.
  • Transfer the wontons onto the bowl of noodles, and carefully pour in the soup broth. Garnish with green onions.

WONTON SOUP

Wonton Soup image

On chilly days, these delicate one-bite pork wontons served in a soothing chicken broth will warm you through.

Provided by Vivian Jao

Categories     Dinner     Soup

Time 3h40m

Yield 8

Number Of Ingredients 27

For the chicken broth
1 (4-pound) whole chicken
15 cups cold water
1 medium yellow onion, halved
3 cloves garlic, smashed
3 scallions, halved crosswise
1-inch fresh ginger, cut into 1/4-inch coins and smashed
1 tablespoon Tianjin preserved vegetables , finely chopped (optional)
Kosher salt, for seasoning the broth to taste
For the wontons
1 pound ground pork
2 scallions, minced
1 clove garlic, minced
1/4-inch fresh ginger, peeled and minced
1 large egg
1 tablespoon Shaoxing wine
3 tablespoons water
1 tablespoon toasted sesame oil
1 1/2 teaspoons cornstarch
1 teaspoon sugar
1 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
All-purpose flour, for dusting the sheet pan (optional)
80 square wonton wrappers
To serve
1 scallion, thinly sliced
1 tablespoon toasted sesame oil

Steps:

  • Chill the wonton filling: Transfer the filling into two small, lidded containers (like plastic deli pint containers) and chill until ready to use. The filling can be used immediately but it will be easier to work with when chilled for about 30 minutes. You will work with one container at a time while the other stays chilled.
  • Boil water: Bring the large pot of water on the stove to a boil over high heat while you wrap the wontons.
  • Cook the wontons: Gently slide half of the wontons into the pot of boiling water. Stir with a wooden spoon to separate them and to make sure they don't stick to the bottom of the pot. The wontons should freely fan and float around as they cook. Once the water returns to a boil and the wontons rise to the water's surface, allow them to cook for 1 minute.
  • Test for doneness: Scoop out one wonton and cut it open to make sure the filling is cooked through. It should no longer be pink and look raw in the center. If not, allow them to simmer for another minute. Be careful not to overcook them or they'll fall apart.

WONTON SOUP

Wonton Soup image

Light, delicious, and unassuming, the humble wonton packs a punch of flavor in a small one-bite package and is especially delicious when served in soup.

Provided by Morgan Baker

Categories     Dinner     Lunch     Soup

Time 1h5m

Number Of Ingredients 21

For the Wontons:
40 wonton wrappers (store-bought or homemade)
1 pound boneless lean pork (chopped finely)
1 tablespoon soy sauce
1 tablespoon oyster sauce
5 drops sesame oil
1 teaspoon sherry
1/2 teaspoon sugar
2 green onions (finely minced)
1 tablespoon minced ginger
1 teaspoon salt
1 teaspoon cornstarch
For the Soup Base:
4 1/2 to 5 cups chicken stock
4 teaspoons soy sauce
3 tablespoons sesame oil
For the Toppings:
10 to 12 pieces baby bok choy
Chopped green onion
Chili oil
Sesame Oil

Steps:

  • Gather the ingredients.
  • In a medium bowl, add all of the wonton ingredients except for the wrappers and mix with a fork until fully combined and the mixture feels sticky.
  • Place a wonton wrapper in one hand and adjust to look like a diamond shape. Scoop 1 teaspoon of wonton filling into the bottom half of the wonton wrapper. Fold the bottom side over the filling, then fold once more so the top part of the diamond is left open.
  • Fold the left side over then fold the right to create a seal. You may need to brush a thin layer of water onto the wonton and press. As you're making the wontons, use a damp paper towel to prevent them from drying out.
  • Meanwhile, combine the chicken stock and soy sauce in a pot and bring to a rolling boil. Allow the mixture to boil for 5 minutes, then add about 12 wontons at a time and boil over medium heat until wontons are floating on the surface of the water. Continue to boil until the wrappers are swollen, about 2 minutes. To check for doneness, use a slotted spoon to remove a wonton and split it with a fork. If the wonton is cooked through, stop heat immediately and transfer the wontons to individual serving bowls. If not, continue to boil until cooked through. Once you've cooked the wontons, add the bok choy and allow to cook until tender, about 5 minutes. Remove from the pot and add to your serving bowl.
  • To your serving bowl, add chopped green onion, a dash of soy sauce and sesame oil. Pour in 1 and 1/2 cups hot broth. Garnish with chili oil and serve hot.

  • Without a food processor: Combine ground pork, shrimp, ginger, green onion, soy sauce, Shaoxing wine, salt and sesame oil in a big bowl. Mix well with a fork until everything combines well together and the mixture feels a bit sticky.
  • To make wontons, place a wonton wrapper in one hand, scoop a teaspoon of wonton filling and place it near the narrow side of the wonton wrapper (you can add more filling to the wonton if you like, as long as you can still wrap it). Fold the narrow side over the filling, then roll the filling all the way through the other side of the wrapper. Bind both ends and press together to lock the filling inside the wrapper. Brush a thin layer of water onto the wonton wrapper and press the ends together.
  • Combine the chicken stock, ginger, and soy sauce in a pot. Bring to a boil. Let boil for 10 minutes. Turn to lowest heat to keep warm and start cooking wontons (see below).

  • Start by making the filling. Add the pork, 3/4 teaspoon salt, sugar, sesame oil, white pepper, wine, oil, water, and cornstarch to a bowl and whip everything together by hand for 15 minutes, or in a food processor for 5 minutes. You want the pork to look like a paste. Mix in the chopped shrimp.
  • To make the wontons, take a wrapper, and add only about a teaspoon of filling. Use your finger to coat the edges with water (this helps the two sides seal together), and fold in half so you have a triangle shape. Bring together the two outer corners, and press to seal. Continue assembling until you've used up the filling (this recipe should make about 3 dozen wontons).
  • To assemble the dish, heat up the chicken broth in a medium pot. Adjust seasoning by adding salt, to taste.
  • Bring a large pot of water to a boil and boil the noodles just until al dente. Divide among 6 bowls. Add the wontons and boil for about 4-5 minutes until they float and the filling is cooked through. Divide wontons among the bowls, and cover with hot broth. Serve!

Whisk the cornstarch with 2 teaspoons of water and mix into the filling until the pork forms a paste. Mix in the shrimp.Optional: Massage the shrimp with 1 teaspoon baking soda and 1/2 teaspoon salt and let it sit for 30 minutes before rinsing throughly, chopping, and mixing into the wonton filling.

Bring the opposite ends of the wrapper together and use a dab of water to seal. Alternatively, just wet the edges of the wrapper and bring together and pinch into a small pouch. Keep the wrappers and finished wonton covered with saran wrap as you work, to keep them from drying out.
