WOKED SPICY CHILI-GARLIC CHICKEN
I love woking food. It's so primitive and barbaric it just feels right. Simply blast it on high heat until the oil be smokin' then toss in yer gredients and yer good to go. This is one of my favorite dishes when I don't have a lot of time yet want a good dose of spicy protein. If you have a favorite Teriyaki sauce you can add that in as well to give it some sweetness at the end.

Steps:
- Fire up the wok on high and put your fave oil in (you can do this in a pan too but the wok is way more fun and impressive lookin').
- Get you some fresh chicken and slice em up to pieces about the size of yer thumb.
- When the oil is smoking dump the chicken in and enjoy the sizzle noise.
- Add some soy sauce (enough to cover the bottom of the wok).
- Stir it until it's not all raw then dump in a ton of the Chili Garlic sauce. I like it spicy so I am generous on the sauce.
- After about 5 mins I like to add in some minced garlic, ginger powder and some salt & pepper.
- Toss in some cashews with 1 minute to go then mix it all around like a pro.
- Serve into a bowl and sprinkle with sesame seeds. Nuff said.

HOT CHICKEN IN GARLIC SAUCE
This is a very spicy chicken stir-fry, with a wonderfully tastey garlic overlay! With broccoli and carrots, it is very colorful and tastey. It is good served over rice or pasta.

Steps:
- Cut the chicken lengthwise into 1/4-inch strips. Set chicken aside.
- Pour oil around the top of a preheated wok or skillet with sloped sides; heat at medium-high (375) for 2 minutes. Add chile pepper pods, and stir-fry 2 to 3 minutes. Remove chile pepper pods from the wok; set aside. Add the reserved chicken, and stir-fry for 7 minutes or until lightly browned. Remove chicken from the wok; drain well, and set aside.
- Add the celery, water chestnuts, broccoli flowerets, carrot, garlic, and gingerroot to the wok, and stir-fry 3 to 5 minutes.
- Add the reserved chile pepper pods, reserved chicken, and green onion to the wok. Combine wine and chili paste (if using); add to the wok and stir-fry until thoroughly heated. Serve over hot cooked rice or pasta.

HOT & SPICY GARLIC CHICKEN
The title say it all! This recipe actually takes longer to type in than it does to cook! It is ready to eat in less than an hour - and that includes the marinating time...

Steps:
- Marinade the chicken with all the marinade ingredients, and set aside for 30 minute.
- Heat 4 Tbsp oil in a wok and stir fry the chicken for 10 min over a medium heat.
- Drain and set aside.
- In the same oil add garlic and red chilli powder.
- Fry for 3 minutes and add tomato puree, bell pepper, onion and spring onion.
- Stir fry for 3 minutes on high heat.
- Add fried chicken.
- Stir-fry and add salt, sugar and chicken stock.
- Mix the cornflour in 1/4 cup water and add to chicken slowly, stirring continuously to thicken the sauce.
- Finish with the vinegar.
- Serve with fried rice or noodles.

SPICY CHICKEN & BROCCOLI IN CHILI GARLIC SAUCE (LOW CARB)
Always on the quest to find good low carb meals, this is one that we all love. Adjust the amount of the Chili Garlic Sauce you use depending on how spicy you like this dish. You can always add more at the table but you can't take it out!! :-) If we are able to have Dreamfield's pasta, I serve this over their spaghetti noodles and it is delicious (add 5 grams of digestible carbs for Dreamfield's). OR it is great just like it is for super low carb!

Steps:
- In a large skillet, heat oil over medium high then add the broccoli in a single layer. .
- Saute for 3 - 4 minutes without stirring until broccoli gets lightly browned.
- Stir broccoli, add garlic and ginger and saute for another minute or two.
- Stir in chicken. Cover pan and allow to steam for two minutes.
- Remove lid and stir in the Chili Garlic sauce, soy sauce, chicken broth and splenda.
- Stir and simmer until sauce reduces a bit and is not soupy.
- Serve with extra Chili Garlic sauce and soy sauce on the side.
