ABSOLUTE BEST LIVER AND ONIONS



Absolute Best Liver and Onions image

This recipe will turn liver haters into converts. Very simple! The three things that will set your liver above all others are: 1) soak in milk, 2)turn liver as little as possible and 3) don't overcook!

2 pounds sliced beef liver
1 ½ cups milk, or as needed
¼ cup butter, divided
2 large Vidalia onions, sliced into rings
2 cups all-purpose flour, or as needed
salt and pepper to taste

Steps:

  • Gently rinse liver slices under cold water, and place in a medium bowl. Pour in enough milk to cover. Let stand while preparing onions. (I like to soak up to an hour or two - whatever you have time for.) This step is SO important in taking the bitter taste of the liver out.
  • Melt 2 tablespoons of butter in a large skillet over medium heat. Separate onion rings, and saute them in butter until soft. Remove onions, and melt remaining butter in the skillet. Season the flour with salt and pepper, and put it in a shallow dish or on a plate. Drain milk from liver, and coat slices in the flour mixture.
  • When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan. Cook until nice and brown on the bottom. Turn, and cook on the other side until browned. Add onions, and reduce heat to medium. Cook a bit longer to taste. Our family prefers the liver to just barely retain a pinkness on the inside when you cut to check. Enjoy!

1/2 lb cooked white rice
1 red bell pepper, strips
1 sliced big head onion
2 tablespoons chopped coriander
1 cup mushroom, chopped into pieces
1 lb beef liver, clean and cut into strips
1/2 on demiglace meat sauce dissolved in half cup cold water (Knorr)
4 tablespoons butter
2 tablespoons sesame
2 tablespoons soy sauce
salt

Steps:

  • Adobe the liver with two tablespoons of soy sauce.
  • Fry in butter onions, red bell peppers and mushrooms for 7 minutes. Remove from skillet. Added to the same skillet over 2 tablespoons of butter and sauté the liver. Again incorporates vegetables and add coriander.
  • To finish cooking, add the Demiglace meat sauce and boil it to low heat until the sauce thickens.
  • Serve the liver on a cradle of rice and decorated with sesame.

Oyster sauce brings out the sweetness of fresh liver in this Chinese take on classic liver and onions.

2 tablespoons oyster sauce
1/2 teaspoon soy sauce
2 teaspoons Shaoxing rice wine
1 teaspoon cornstarch
3 tablespoons vegetable, canola, or peanut oil
10 ounces liver (poultry or pork), cut roughly into 2-inch segments
2 scallions, cut into 1-inch segments
One 1-inch piece ginger, thinly sliced
1 medium onion, thinly sliced

Steps:

  • Combine oyster sauce, soy sauce, wine, and cornstarch in a small bowl and whisk with a fork to combine. Set aside.
  • Heat the oil in a wok over high heat until smoking. Add the liver and stir-fry until the firm but interior is still very pink, 60 to 90 seconds. Remove the liver with a slotted spoon and transfer to a paper towel-lined plate. Set aside.
  • Return wok to high heat. Add the scallions and ginger, and stir-fry until fragrant, about 30 seconds. Add the onions reduce heat to medium, and continue to stir-fry until the onions are soft and slightly caramelized, 5 to 7 minutes.
  • Return liver to wok and add sauce mixture. Stir-fry rapidly to prevent the cornstarch from clumping. Stir-fry the liver until the interior is still pink but no longer rare, about 20 seconds longer. Remove from heat and serve immediately.

THAI STIR-FRIED CHICKEN LIVERS



Thai Stir-Fried Chicken Livers image

This is a very simple and delicious dish to serve over white/jasmine rice for chicken liver lovers! Credit goes to my mommy, Pat.

1 lb chicken liver (drained and rinsed thoroughly)
1 medium onion (cut into slivers)
3 sprigs green onions (cut into 1 inch-long sections)
2 tablespoons vegetable oil (or other cooking oil)
3 tablespoons oyster sauce
1 teaspoon black pepper
1/2 cup chicken broth

Steps:

  • Sauté both types of onions in the vegetable oil over low-medium heat for about 3-5 minutes.
  • Add the (drained and rinsed) chicken livers and turn the heat up to medium-high and sauté livers on each side (turning over once) until the livers darken in color and become opaque looking.
  • Add the chicken broth, oyster sauce and black pepper and stir thoroughly.
  • Then let simmer uncovered for approximately 10-15 more minutes (or until the livers are cooked just all the way through and sauce is thickened).
  • Serve over steamed white/jasmine rice and enjoy!

A poor man's foie gra cooked Asian style. A tad spicy but the pepper does kick some flavor into the dish. Make sure you do not overcook this as chicken liver tastes best when it is slightly moist for that melt-in-the-mouth texture!

250 g chicken livers, cleaned and sliced
1 1/2 tablespoons light soya sauce
1 tablespoon oyster sauce
1 tablespoon dark soya sauce
1/2 teaspoon sugar
1/2 teaspoon salt
1 onion, quartered
2 sprigs spring onions, cut into 2cm length
1 sprig coriander, cut into 2 cm length
1 teaspoon black pepper, coarsely ground
2 tablespoons oil
1 teaspoon sesame oil
1/2 teaspoon garlic, chopped
2 slices young gingerroot

Steps:

  • Marinate chicken liver with soy sauce, oyster sauce, sugar and salt for at least 15 minute.
  • Heat wok with oil and sesame oil. Fry garlic and ginger until fragrant. Add onions and saute for 1-2 minute.
  • Add chicken livers and the marinade. Stir fry over fairly high heat. Toss quickly until the chicken liver loses its pink color.
  • Add spring onion, coriander and stir briskly.
  • Dish out and serve immediately!

  • Cook Brussel Sprouts: Meanwhile, heat a non-stick skillet over medium-high heat, then add 2-3 Tbsp oil and sear brussel sprouts cut side down until lightly browned and cooked through, stirring often. Transfer to a bowl. Wipe the skillet with a paper towell to remove any stuck on burnt bits.
  • Cook beef liver: Add 1-2 Tbsp of oil to the same skillet, then sear livers in batches over medium-high heat until slightly browned and cooked through. Do not overcrowd the pan, so that the livers sear not boil in their own juices. Do not overcook or the lilvers will be chalky. Keep wiping the skillet with a paper towel in between batches and adding oil as needed. Transfer to the bowl with the brussels sprouts.
  • Cook Onion: Optional* - wipe down the skillet, add 2-3 tbsp oil and add 1 onion cut into half rings. Sear over medium-high heat until the onions are slightly charred and transluscent.
