We tried lobster tails every which way -- steamed, baked, grilled, broiled -- and this is our favorite. Fast and foolproof, this recipe is your ticket to an impressive main course in minutes.

Number Of Ingredients 6

Four 5- to 6-ounce frozen lobster tails, thawed (see Cook's Note)
1 stick (8 tablespoons) unsalted butter, at room temperature
1 tablespoon chopped fresh parsley
1 tablespoon minced shallot
1 teaspoon lemon zest
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the broiler. Place a wire cooling rack inside a rimmed baking sheet. Cut the top shell of the lobster tails lengthwise down the middle with kitchen shears. Then, using a knife, cut all the way through the tails to split into 2 pieces. Place them flesh-side up on the prepared baking sheet.
  • Mix together the butter, parsley, shallot, lemon zest, 1/2 teaspoon salt and a few grinds of pepper in a small bowl until well combined.
  • Spread 2 teaspoons of the compound butter on the flesh of each lobster tail half. Broil until the shells turn a bright orange, the flesh is opaque and cooked through and the tails begin to curl, about 4 minutes.
  • Transfer the tails to a serving platter and top each half with another teaspoon of the compound butter (save the remainder for another use).

BRAISED LOBSTER

Two 1 1/4-pound lobsters
3 ounces chanterelles
Shallots
Salt and pepper to taste
3 ounces Fingerlings
1 bunch thyme
Sliced bay leaves
1 cup onions
3 cloves garlic- peeled and cut in half
3 ounces macaroni
Olive oil
3 ounces Base Broth, recipe follows
2 tablespoons butter
Bunch of oregano- pick leaves, save stems
1 quart shallots
2 bunches of thyme
3 quarts lobster shells
1 quart Chanterelle stems
2 bunch oregano stems
1 gallon white wine
1 quart lemon juice

Steps:

  • Cook lobster (either steam, boil or broil) for 12 minutes- shock in an ice bath to stop cooking. Remove meat from tail. Cut tail in half. Crack claws and remove meat.
  • For chanterelles, clean well, cut down to size. Saute with shallots. Season with salt and pepper. Drain well and reserve liquid. Cool.
  • For Fingerlings cook with thyme, bay leaves, onion and garlic.
  • Cook Macaroni for 10 to 11 minutes. Blanch and shock, toss in olive oil.
  • Once reduced and strained place Broth in saute pan and bring to a simmer. Add lobster meat, chanterelles, fingerlings, and pasta. Reduce sauce. Mount with butter, and garnish with oregano.
  • Put all ingredients in a large pot at medium heat. Reduce by 60 percent. Strain.

BROILED LOBSTER TAIL WITH SAUCE ARMORICAINE

1 (6 pound) spiny lobster
6 tablespoons clarified butter
1/2 cup diced onion
1/4 cup scallion, thinly sliced white part only
1 clove garlic, crushed
1/2 cup diced carrot
4 parsley stalks, finely chopped
1 bay leaf
2 sprigs thyme or 1/2 teaspoon dried thyme
1/4 cup brandy
1/2 cup dry white wine
5/8 cup fish stock
10 ounces tomato, peeled and roughly chopped
Freshly ground salt
Freshly ground black pepper
1 teaspoon curry powder
2 egg yolks
2 tablespoons cream

Steps:

  • Preheat oven to broil. Remove lobster head and rinse well. Remove claws, and legs. Remove meat from claws and cut up roughly. Break up lobster shell. Split lobster tail down the center, careful not to cut all the way through.
  • In a large casserole dish or roasting pan, add 3 tablespoons clarified butter, the onion, scallion, garlic, and carrot. Saute over medium heat for a few minutes. Add parsley stalks, bay leaf, and thyme. Add the lobster head, claws, and legs. Saute until the shells turn bright red.
  • Add the brandy and flambe. Douse the flames with the wine and fish stock. Add tomatoes. Season with salt and pepper, and bring the sauce to a simmer. Simmer for 20 minutes.
  • Meanwhile, brush a broiler rack with rest of clarified butter. Place lobster tail on rack, cut side down. Broil for 8 minutes. Turn, drizzle cut side with a little clarified butter and cook another 6 minutes. Remove the flesh from the shell and cut into chunks. Keep warm on a heated serving dish.
  • Pass the sauce through a sieve into a small, clean pan. Add curry powder. Whisk together egg yolks and cream. Whisk into sauce, stirring quickly to avoid curdling. Pour sauce over lobster pieces to serve.

1 pound flat rice noodles abt 1/4" wide fresh or dried
SEAFOOD AND MARINADE
1/4 pound squid cleaned
1/4 pound raw medium shrimp shelled, deveined, and butterflied
1/4 pound sea scallops halved horizontally
2 teaspoons cornstarch
1/2 teaspoon salt
1/4 teaspoon freshly-ground white pepper
FOR THE SEASONINGS
1 tablespoon oyster-flavoured sauce
2 teaspoons fish sauce
2 teaspoons dark soy sauce
1 teaspoon chili garlic sauce
3/4 teaspoon sugar
FOR THE DISH
2 tablespoons vegetable oil
1 teaspoon minced garlic
1 teaspoon minced ginger
1 cup thinly-sliced onion
2 green onions cut 1" lengths
1/2 red jalapeño chile pepper thinly sliced
1 cup bean sprouts
1 tablespoon toasted sesame seeds

Steps:

  • If using the dried rice noodles, pour enough warm water over them in a medium bowl to cover completely. Let them soak until softened, about 30 minutes. Drain completely. If using the fresh rice noodles, run them under warm water while separating the strands. Drain completely. For the Seafood and Marinade: Separate the squid tentacles from the bodies. Leave the tentacles whole. Cut the bodies open along one side so they lie flat on the cutting board and lightly score the inner side in a small crisscross pattern. Cut the scored bodies into 1 1/2- by 2-inch pieces. Marinate the seafood: In a bowl, combine the squid, shrimp, scallops, cornstarch, salt and white pepper; stir until evenly coated. Let stand for 10 minutes. For the Seasonings: Stir the oyster-flavored sauce, fish sauce, soy sauce, chili garlic sauce and sugar together in a bowl. For the Dish: Bring a 2-quart saucepan of water to a boil. Slide the seafood into the boiling water; cook until the seafood are opaque on the surface, about 2 minutes. Remove the seafood from the water and drain. Heat a wok over high heat until hot. Add 1 tablespoon of the oil, swirling to coat the sides. Add the soaked or fresh rice noodles and stir-fry until the noodles are lightly browned along the edges, about 2 minutes. Scoop the noodles onto a plate and set aside. Add the remaining tablespoon of oil to wok; swirl to coat the sides. Add the garlic, ginger, onion and red jalapeño pepper; cook, stirring, until fragrant and the onion is tender, about 1 1/2 minutes. Slide the noodles into the wok, scatter the bean sprouts and seafood over them and pour in the seasonings. Toss until the mixture is heated through and the seafood is coated evenly with the seasonings, about 2 1/2 to 3 minutes. Sprinkle with the sesame seeds, scoop the noodles onto a warm serving plate and serve.

Steps:

  • Preheat broiler.
  • To prepare lobster tails for broiling, cut away upper shell and crack lower shell to prevent curling under heat.
  • Arrange on a broiling rack unshelled side up.
  • Sprinkle each tail with rum and dot it with butter.
  • Broil 3 inches away from heat 8 minutes.
  • While lobster tails are broiling, prepare sauce.
  • Place 1 lobster tail on each dinner plate and top with sauce.

LOBSTER BROTH:
2 tablespoons minced shallot
2 tablespoons butter
2 cups vermouth or chicken stock
6 tablespoons flour
3 cups lobster broth (see below)
or use 3 cups of clam juice
1/4 teaspoon dry mustard
3 cups half-and-half
1 cup cooked pureed spinach
1 1/2 teaspoons salt
1/2 teaspoon freshly-ground black pepper
Lobster shells and unusable legs
1 celery stalk
1 small onion
1 bay leaf
GARNISH:
Cooked lobster or crab meat or shrimp
Grated Parmesan cheese (optional)

Steps:

  • For the Lobster (or Crab or Shrimp) Broth: Simmer lobster shells with unusable legs in cups of water with the celery, onion and bay leaf for 30 to 40 minutes. Remove from heat, skim, and strain. In a saucepan, saute shallots in butter until golden. Add wine or chicken stock and simmer until reduced by half. Whisk in 6 tablespoons of flour. Then add the lobster broth or clam juice and the dry mustard. Stir until the mixture returns to simmering and is thickened. Next add the half-and-half, the pureed spinach, salt, and pepper. Do not boil again. Serve immediately (to serve at later time, keep hot in a double boiler.) At serving time garnish with chunks of cooked lobster meat, crab, or shrimp. Sprinkle with Parmesan cheese (optional). This recipe yields 6 to 8 servings.

Wok-Braised Lobster Tails In Creamy Rum Sauce Recipe image

2 lobsters tails - (8 oz ea)
1/4 cup butter
1 cup finely-diced onion
1/2 teaspoon freshly-cracked black pepper
1 cup fish or chicken stock (or canned chicken broth)
1/2 cup evaporated milk
2 tablespoons oyster-flavoured sauce
1 teaspoon fish sauce
1/3 cup light rum
2 tablespoons whole cilantro leaves
1/4 cup whole basil leaves
Fresh cilantro sprig

Steps:

  • Butterfly the lobster tails: Clip off the fins along outer edges of the shell. Bend the tail backwards -- against its natural curve -- cracking several joints in the shell. (That will prevent the tails from curling during cooking.) Place the tail, shell-side up, on a cutting board. Using a large, sturdy knife and starting from the thick end of the tail, cut through the top shell and into the meat. Don’t cut all the way through to the bottom, thinner shell. Open up the lobster shell to expose the meat. Melt the butter in a wok over high heat until bubbling. Quickly add the onion and pepper and cook, stirring, until the onion is soft but not browned, about 1 minute. Pour the fish stock, evaporated milk, oyster-flavored sauce and fish sauce into the wok and bring to a boil. Adjust the heat so the liquid is simmering and place the lobster tails, meat-side down, on top of the onion broth. Cover and simmer until the lobster meat is opaque, 6 to 8 minutes. Transfer the lobster to a plate and set aside. Pour the rum into the wok and increase the heat to high. Boil until the sauce is reduced by half, 30 seconds to 2 minutes, or until the sauce is as thick and rich as you like. This recipe yields 4 servings.
