Buying a large piece of beef chuck and portioning it at home instead of buying cubed stew meat is a great way to infuse more flavor in to this hearty meal.

5 pounds beef chuck, trimmed of excess fat and gristle, cut into 2-inch chunks
1/4 cup all-purpose flour
Coarse salt and ground pepper
2 to 3 tablespoons vegetable oil, such as safflower
1 large onion, coarsely chopped
2 celery stalks, sliced
2 garlic cloves, smashed
1/4 cup tomato paste
1 cup dry red wine, such as Merlot
1 can (28 ounces) crushed tomatoes
1/2 teaspoon dried thyme
2 dried bay leaves
3 pounds winter vegetables, such as potatoes, carrots, turnips, and parsnips, peeled and cut into 1 1/2-inch chunks

Steps:

  • In a large bowl, toss beef with flour; season with salt and pepper. In a large (at least 7-quart) Dutch oven or heavy pot, heat 2 tablespoons oil over medium-high. Working in two batches, shake off excess flour, and sear beef on all sides until browned, 8 to 10 minutes (use more oil for second batch, if needed). Transfer beef to a plate, and set aside (reserve pot).
  • Add onion, celery, and garlic to pot; cook, stirring occasionally, until softened, 3 to 5 minutes. Add tomato paste, and cook, stirring, until slightly darkened, 1 to 2 minutes. Add wine, and cook, scraping up browned bits from bottom of pot, until liquid is reduced by half, 2 to 3 minutes.
  • Return browned beef to pot. Stir in tomatoes, thyme, bay leaves, and 8 cups water. Bring to a boil, reduce heat to medium-low, and simmer, partially covered, stirring occasionally, 2 hours. (If liquid reduces too quickly, add a little more water.)
  • With tongs or a slotted spoon, transfer beef to a large bowl. Pass remaining contents of pot through a fine-mesh sieve into another bowl; discard solids. Return beef and strained liquid to pot; stir in winter vegetables. Simmer over medium-low, partially covered, until beef and vegetables are fork-tender, 1 to 1 1/2 hours more, stirring occasionally.

3 tablespoons olive oil
1 tablespoon butter
2 pounds beef stew meat
3 cloves garlic, minced
1 medium onion, diced
1 can or bottle beer
4 cups beef broth, more as needed
1 tablespoon Worcestershire sauce
2 to 3 tablespoons tomato paste
1 1/2 teaspoons sugar
1/2 teaspoon paprika
1/2 teaspoon kosher salt
Freshly ground black pepper
2 carrots, roughly sliced
2 parsnips, roughly sliced
1 small turnip, roughly sliced
2 tablespoons all-purpose flour, optional
Minced fresh parsley, for garnish

Steps:

  • Heat the oil and butter in a pan and brown the beef. Remove the beef from the pan, throw in the garlic and onions and cook until softened, about 3 minutes. Pour in the beer, beef broth, Worcestershire sauce, tomato paste, sugar, paprika, salt and some pepper. Then return the beef to the pan, cover and simmer on a low heat until the meat is very tender, 1 1/2 to 2 hours. If the liquid level gets too low, add more broth as needed.
  • Add the carrots, parsnips and turnips and continue to simmer until the vegetables are tender and the liquid is reduced, about 30 minutes.
  • If the stew is still too liquidy, remove a cup of cooking liquid from the pan and stir in the flour. Add the flour mixture back into the pan and stir. Simmer for 10 minutes until the stew is thick. The meat should be very tender; if it's tough, let it continue to cook.
  • To finish, add the parsley and stir through the stew.

This variation of beef stew is hearty, easy to make and low in fat. You can substitute venison for the beef. If you want to stretch out the recipe, try serving over cooked noodles.

1 pound cubed beef stew meat
1 tablespoon vegetable oil
1 onion, thinly sliced
1 (6 ounce) can tomato paste
1 (14.5 ounce) can low fat, low sodium beef broth
1 cup chopped carrots
3 potatoes, cubed
1 sprig fresh rosemary
1 teaspoon dried thyme
1 bay leaf
¼ teaspoon crushed red pepper flakes
10 ounces button mushrooms, quartered
1 (10 ounce) package frozen green peas, thawed

Steps:

  • Remove any bits of fat from the meat. Heat the oil in a large pot over medium high heat. Saute the meat in the oil for 10 minutes, or until browned on all sides. Remove meat and set aside.
  • Add the onion and tomato paste to the pot and saute over medium heat for 5 minutes, or until onion is tender, stirring often. Return the meat to the skillet along with the beef broth, combining with the onion and tomato paste mixture. Reduce heat to low, cover and simmer for 1 to 1 1/2 hours, or until meat is tender.
  • Add the carrots, potatoes, rosemary, thyme, bay leaf and crushed red pepper flakes and simmer, covered, for another 45 minutes. (Note: It may be necessary to add some water if the stew seems too thick.)
  • Finally, add the mushrooms and the peas and allow stew to heat through, about another 10 to 15 minutes. Remove bay leaf and rosemary sprig before serving.

Steps:

  • Pour dressing over stew meat in resealable plastic bag. Seal bag; turn to evenly coat meat with dressing. Refrigerate 30 min. to marinate.
  • Cook bacon in large saucepan on medium heat 5 min. or until crisp, stirring occasionally. Use slotted spoon to remove bacon from pan, reserving drippings in pan; drain bacon on paper towels.

1/4 cup extra-virgin olive oil, for frying, plus more to drizzle
3 tablespoons butter
2 cups all-purpose flour
2 to 3 pounds beef chuck shoulder roast, cut into 2-inch pieces (this cut is also called chuck shoulder pot roast and chuck roast boneless)
Sea salt and freshly ground black pepper
1 bottle good quality dry red wine (recommended: Burgundy)
8 fresh thyme sprigs
6 garlic cloves, smashed
1 orange, zest removed in three 1-inch strips
1/4 teaspoon ground cloves
2 bay leaves
2 1/2 cups beef stock
9 small new potatoes, scrubbed clean and cut in 1/2
1/2 pound carrots, peeled and sliced
2 cups frozen pearl onions, a large handful
1 pound white mushrooms, cut in 1/2
1/2 pound garden peas frozen or fresh
Fresh flat-leaf parsley, chopped, for garnish
Horseradish Sour Cream, recipe follows, for garnish

1 tablespoon prepared horseradish

1 loaf peasant bread, sliced into 1/2-inch pieces
Extra-virgin olive oil
4 garlic cloves, halved
Chopped parsley leaves

Steps:

  • Preheat a large heavy-bottomed saucepan or Dutch oven over medium-high heat with the oil and butter.
  • While the pan is heating, arrange the flour on a large dish. Season the cubed beef with some salt and freshly ground black pepper and then toss in the flour to coat. Shake off the excess flour and add the beef chunks in a single layer to the hot pan, being careful not to over crowd the pan, you might have to work in batches. Thoroughly brown all of the cubes on all sides. Once all the meat has been browned remove it to a plate and reserve.
  • Add the wine to the pan and bring up to a simmer while you scrape the bottom of the pan with a wooden spoon being sure to loosen up all those tasty bits. Once the wine has gotten hot add the browned meat, thyme, smashed garlic, orange zest strip, ground cloves, freshly ground black pepper and salt, to taste, bay leaves and beef stock. Bring the mixture up to a boil and then reduce the heat to a simmer and cook uncovered until the liquids start to thicken, about 15 to 20 minutes. Cover and cook on low heat for 2 1/2 hours.
  • After 2 hours add halved potatoes, sliced carrots, pearl onions and mushrooms, along with a pinch of sugar to balance out the acid from the red wine. Turn the heat up slightly and simmer, uncovered, for 30 minutes more, until the vegetables and meat are tender. Add the frozen peas during the last minute of cooking. Season with salt and pepper and remove the thyme sprigs.
  • To serve, place the stew in a soup bowl, garnish with parsley, drizzle with olive oil and add a dollop of Horseradish Sour Cream. Right before serving add a slice of Toasted Peasant Bread, half way submerged in the stew.
  • Combine sour cream, prepared horseradish and a drizzle of olive oil in a small bowl and mix until thoroughly combined. Season with salt and pepper. Add a dollop of the mixture on top of the stew and garnish with chopped chives.
  • Preheat the oven to 500 degrees F.
  • Put a sheet pan in the oven so that it gets good and hot.
  • Place the bread slices on the hot sheet pan. Drizzle the bread with the extra-virgin olive oil bake for 5 minutes, until the bread is nicely toasted. Rub the bread slices with the garlic cloves, and discard garlic. Sprinkle with parsley and serve.

1½ pounds stewing beef cut into 1 or 1½ inch cubes (use chuck roast or sirloin tip-try grass fed beef)
2-3 carrots peeled and cut into 2- or 3-inch lengths (or use baby carrots)
1 or 2 yellow sweet onions peeled and cut into quarters or coarse chopped (or use 4 or 5 small white onions or 4 or 5 medium leeks-white part plus 1 inch of green)
1 turnip cubed
2-3 parsnips, peeled and cut into 2- to 3-inch lengths
Optional vegetables, choose from: 2 ribs celery, sliced; 1 cup mushrooms, sliced, quartered or halved depending on size; 6-8 small new potatoes, unpeeled halved or whole depending on size; ½ cup sundried tomatoes (add the last 10 minutes of cooking)
Stock: 4 cups beef stock + ¼ cup Burgundy wine OR combine 1 cup beef stock + 1 cup water + 2 cups dark beer or brown ale
3 teaspoons mixed herbs (use three of these: oregano, marjoram, thyme, or dried basil-if you use sprigs tie stems with kitchen twine)
1 bay leaf
Optional: 3-4 cloves garlic, peeled and coarsely chopped
Salt and freshly ground pepper to taste
⅓ cup or so fresh Italian flat-leaf parsley chopped-as a garnish or add to slow cooker last 10 minutes of cooking and stir in

Steps:

  • In large slow cooker arrange prepared vegetables.
  • Place beef cubes atop vegetables (season beef a day ahead if you like; you can also brown beef in skillet over medium heat in a couple of teaspoons of oil before adding cubes to slow cooker, about 2 minutes to brown all sides).
  • In medium bowl, gently combine stock with herbs.
  • Pour stock evenly over meat and vegetables and add bay leaf.
  • Cook on high for 4 to 6 hours or on low for 8 to 10 hours; cook until vegetables are tender and meat is cooked through but not overdone.
  • Serve in warmed bowls or on warmed plate; serve over rice or noodles, alongside mashed potatoes, or with side of steamed new potatoes and asparagus.

2 lb beef chuck
¼ cup all-purpose flour
1 tsp salt
¼ tsp freshly ground black pepper
3 tbsp extra-virgin olive oil
2 tbsp unsalted butter
1 large coarsely chopped onion
2 large minced cloves garlic
2 tsp or 1 tsp. dried thyme, minced fresh thyme leaves
½ cup dry red wine
2 cup or good quality canned beef broth homemade beef stock
¼ cup balsamic vinegar
1 bay leaf
8 large washed and dried fresh sage leaves
1 lb peeled and cut into 1-inch pieces butternut squash
½ lb peeled and cut into 1-inch pieces parsnips
2 medium peeled and cut into 1-inch chunks carrots
½ lb. cored, blanched briefly in boiling water, peeled, seeded and diced Roma tomatoes
1/4 lb. or bacon, cut into 1/4-inch strips, thinly sliced pancetta
1 lb. trimmed and wiped clean with a damp cloth button mushrooms
2 tbsp. minced fresh parsley

Steps:

  • Cut the beef into 1-inch cubes, trimming away excess fat and any gristle.
  • In a plastic food storage bag large enough to hold all the meat with room to spare, combine the flour, salt and pepper.
  • Add the meat to the bag and shake until all the beef cubes are coated with the flour mixture.
  • In a large, heavy saucepan, heat the oil.
  • Working in batches to prevent overcrowding, brown the beef cubes on all sides, removing from pan as browned.
  • In the same saucepan, melt the butter.
  • Add the onion, garlic and thyme leaves and saute, stirring frequently, until translucent.
  • Add the wine to the pan and bring it to a boil, stirring and scraping with a wooden spoon to deglaze the pan deposits.
  • Return the meat to the pan.
  • Add the stock or broth, balsamic vinegar, and bay leaf.
  • Cover, reduce the heat to maintain a bare simmer, and cook for 1 hour.
  • On a cutting board, stack the sage leaves, roll them up lengthwise into a tight bundle, and, with a sharp knife, cut them crosswise into thin strips.
  • Stir the sage, butternut squash, parsnips, carrots and tomatoes into the stew.
  • Cover and continue simmering until the meat and vegetables are tender, about 20 minutes more.
  • About 10 minutes before serving time, heat a large nonstick saute pan over medium-high heat.
  • Add the pancetta or bacon and saute, stirring continuously, until it renders its fat and begins to brown.
  • Add the mushrooms and saute until lightly browned, about 5 minutes.
  • Remove the bay leaf from the stew.
  • Stir in the mushrooms and pancetta or bacon.
  • Taste the sauce and add more salt and pepper to taste if necessary.
  • Ladle the stew into shallow soup bowls, garnish with parsley, and serve.

This vegan stew with mushrooms, sweet potato, canned tomatoes, and carrots is a rich and cozy winter dinner idea for vegetarians and meat-eaters alike.

1 Tbsp. olive oil
3 carrots, peeled and sliced diagonally into 1cm (½in) slices
4 shallots, peeled and halved
300g (10½ oz.) oyster mushrooms (or use shiitake mushrooms)
2 bay leaves
6 fresh thyme sprigs
2 Tbsp. all-purpose flour
250ml (9 fl oz.) red wine
1 x 400g (14oz) can tomatoes
150g (5½ oz.) sweet potatoes, peeled and roughly cubed
500ml (18 fl oz.) vegetable stock
1 Tbsp. brown rice miso paste
Sea salt and freshly ground black pepper
Handful of fresh curly leaf parsley, roughly chopped, to serve

Steps:

  • Preheat the oven to 400°F.
  • Heat the oil in a large ovenproof pot over a medium heat. Add the carrots and shallots, then increase the heat and cook for 6 minutes until slightly caramelized and brown. Add the mushrooms, bay leaves and fresh thyme, and cook for another 2 minutes. Sprinkle over the flour and mix to combine, then pour in the red wine. Increase the heat to high and cook, stirring now and then, until the wine is reduced by half, roughly 3 minutes.
  • Add the tomatoes, sweet potatoes, vegetable stock and miso paste and mix to combine. Season to taste with salt and a generous amount of black pepper.
  • Transfer to the oven with the lid on and cook for 40 minutes, until the carrots have softened. Top with fresh parsley. Stew will keep in the fridge 3 days, or in the freezer for 3 months.

5 lbs beef chuck, trimmed of fat and cut into bite size pieces
1/2 cup flour
6 tablespoons olive oil (more may be needed)
2 lbs onions, thinly sliced
6 garlic cloves, minced
1/4 red wine vinegar
3 tablespoons brown sugar, packed
2 (14 1/2 ounce) cans beef broth (or homemade, preferably)
3 cups dark beer
1 1/2 lbs baby carrots, washed
1/2 lb parsnip, peeled and cut into bite size pieces
1 lb small baby potatoes, halved
3/4 cup fresh parsley
2 bay leaves
1 tablespoon chopped fresh thyme

Steps:

  • Cook bacon in medium pot over medium high heat until brown and crisp, about 6 or so minutes.
  • Remove bacon using a slotted spoon to a paper towel, to drain.
  • Pour off all but 1/4 cup of the drippings from the pot and remove from heat.

  • Sprinkle with flour, salt and pepper.
  • Toss to coat.
  • Heat reserved drippings in pot over high heat.
  • Working in batches, add beef and brown well.
  • Adding oil by tablespoon as needed.

  • Add onions and garlic: saute 5 minutes.
  • Add vinegar and sugar; stir for 2 minutes.

4 cloves garlic
1/2 teaspoon dried thyme
1/2 teaspoon ground cinnamon
1/4 teaspoon black pepper
3 cups beef broth or 3 cups vegetable broth
3 medium onions, each cut into 6 wedges
1 (28 ounce) can diced tomatoes
1 medium butternut squash, peeled and cut into 1 inch pieces
1 (6 ounce) bag Baby Spinach

Steps:

  • In a resealable bag, Combine the beef, wine, garlic, thyme, cinnamon and pepper.
  • Seal and marinate in the refrigerator over night.
  • The next day, Preheat the oven to 325 degrees.
  • Pleace the meat mixture, broth, onions and tomatoes,with juice,in a dutch oven.
  • Place over high and bring to boil.
  • Cover, and PLACE IN OVEN.
  • Bake 1 hour.
  • Stir in squash, cover and bake for 1 1/2 hours.
  • Remove from oven, and stir in the spinach until it is wilted.
  • Serve.
