I always get compliments when I serve this quiche to my hungry crew. Our grandchildren especially love it for breakfast. The sweet flavor of the Swiss cheese and squash really comes through.-Mary Detweiler, Middlefield, Ohio

2 tablespoons chopped onion
2 teaspoons vegetable oil
2 cups shredded Swiss cheese
1-1/2 cups whole milk
1 cup mashed cooked winter squash
3 large eggs
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg

Steps:

  • In a skillet, saute onion in oil until tender. Transfer to a greased 9-in. pie plate. Sprinkle with cheese. , In a bowl, whisk milk, squash, eggs, salt, pepper and nutmeg until smooth; pour over cheese. , Bake at 325° for 50-60 minutes or until a knife inserted in the center comes out clean.

A lovely and savory combination of flavors, this recipe appeared the day before Thanksgiving in our local newspaper, *The Bangor Daily News*. Made it several days later to serve with leftover turkey, using Swiss rather than Gruyere to save money. We were more than satisfied!

2 cups acorn squash or 2 cups butternut squash, mashed
1 small onion, diced
olive oil
1 pie crust (store-bought or home-made)
1 teaspoon rosemary
1 garlic clove, chopped
1/2 teaspoon salt
fresh ground pepper, to taste
4 eggs
milk
3/4 cup gruyere cheese or 3/4 cup swiss cheese, grated

Steps:

  • Preheat oven to 375 degrees. Heat small amount of olive oil in pan and saute diced onion until slightly translucent.
  • Fold onions into squash with rosemary, garlic, salt and pepper.
  • Crack eggs into 2-cup measuring cup. Add enough milk to make 2 cups. Whisk eggs and milk together. Add to squash mixture; blend well.
  • Place crust in pie pan and prick bottom with fork. Spread small amount of cheese on bottom of crust. Pour in squash and onion mixture. Top with rest of the cheese. Bake for 40 minutes, until quiche is set and cheese is golden and bubbling.

This is the only quiche my family cares for-and the only way I can ever get them to eat squash! It's chock full of flavor and fresh veggies, and guests never fail to give it star billing at my holiday brunch.

1 unbaked pastry shell (9 inches)
2 medium zucchini, peeled and shredded
2 medium yellow summer squash, peeled and shredded
2 medium carrots, shredded
1 medium onion, grated
2 tablespoons butter
3 large eggs, beaten
1 cup shredded Swiss cheese
3/4 cup sour cream
1/3 cup evaporated milk
1/4 teaspoon salt
1/4 teaspoon white pepper
Dash dried thyme

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 5 minutes; remove foil. Bake 5 minutes longer; set aside. Reduce heat to 350°, In a large saucepan, cover and cook the zucchini, yellow squash, carrots and onion in butter over low heat for 10-15 minutes or until tender, stirring occasionally. , In a small bowl, combine the eggs, cheese, sour cream, milk, salt, pepper and thyme. Spoon vegetable mixture into crust; top with egg mixture., Bake for 40-45 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

Make this hearty squash pie to serve as an alternative vegetarian Christmas centrepiece. It's festive and contains plenty of herby flavour

250g plain spelt flour , plus a little extra for dusting
125g cold unsalted butter , cubed
a few sprigs each of rosemary and thyme, leaves picked and finely chopped
1 lemon , zested
25g mature cheddar , grated
1 medium egg yolk
700g butternut squash , peeled and cut into 2cm cubes
2 tbsp olive oil
3 bulbs of garlic , cloves separated and peeled
1 tsp balsamic vinegar
1 tbsp runny honey
2 sprigs each of rosemary and thyme, leaves picked and finely chopped, plus extra to serve
220g lancashire cheese or mature cheddar, crumbled or cut into cubes
150g crème fraîche
½ lemon , juiced
1 tbsp wholegrain mustard
small bunch of parsley , finely chopped
dash of vegetarian Worcestershire sauce (optional)
2 large eggs , beaten
2 x 400g cans butter beans , rinsed and drained
a drizzle of olive oil
1 lemon , zested
2 sage sprigs, leaves picked and finely chopped, plus extra to serve

Steps:

  • Put the flour in a mixing bowl, and add the butter and ½ tsp fine salt. Rub gently with your fingertips until the mixture resembles fine breadcrumbs, or blitz in a food processor. Stir through the herbs, lemon zest and cheddar. Beat the egg yolk with 50ml cold water, add to the bowl and mix until it forms a dough. Add more water, 1 tsp at a time, until it comes together into a smooth dough. Wrap and chill in the fridge while you make the filling.
  • Heat the oven to 180C/160C fan/gas 4. Toss the squash pieces with 1 tbsp olive oil and some seasoning. Tip onto a baking tray and roast for 25-30 mins until golden and tender. Leave to cool.
  • Meanwhile, put the cloves of garlic in a saucepan, cover with cold water and bring to a simmer. Cook for 2-3 mins, then drain. Wipe the pan dry, add the garlic back in with 1 tbsp olive oil and fry on a high heat for 2 mins until golden. Add the balsamic vinegar and 100ml boiling water, bring back to the boil then turn down and simmer for 10 mins.
  • Add the honey, most of the rosemary and thyme and a good pinch of salt. Continue to cook on a medium heat for a further 3-5 mins, or until most of the liquid has evaporated and the garlic cloves are coated in a dark syrup.
  • Tip the cooled squash into a bowl and add the cheese, crème fraîche, lemon juice, mustard, parsley, a splash of Worcestershire sauce and the beaten eggs. Add a good pinch of salt and black pepper and gently fold in the garlic cloves.
  • Roll out the pastry on a work surface dusted with flour to 3-4mm thick. Line a 23cm-diameter springform or loose-based cake tin with the pastry, ensuring a little spills over the edges (the pastry is quite short - you can patch up when lining the tin, if needed). Pour the filling into the pastry case.
  • Pat the drained beans dry using kitchen paper and dress with a little olive oil, most of the lemon zest and a good pinch of salt, then scatter over the squash filling. Finish with the reserved rosemary and thyme, the sage, and a drizzle of olive oil. Bake for 1 hr-1 hr 10 mins or until the filling has set and the beans have popped and are crisp. Trim the edge of the pastry to neaten.
  • Remove from the oven and leave to cool a little (about 20 mins), then take it out of the tin. Scatter the remaning lemon zest and more herbs on top and serve warm. Leftovers are great cold, too.
