WINTER ROOT VEGETABLE SOUP



Winter Root Vegetable Soup image

2 celery stalks, diced
1 large wite onion, diced
2 garlic cloves, diced
2 parsnips, cut in 1/2 inch pieces
1 rutabaga, peeled and cubed
4 turnips, peeled and cubed
2 carrots, cut in 1/2 inch pieces
6 cups stock, can use veggie or chicken
2 sprigs fresh rosemary, finely chopped
2 tbps fresh thympe, finely chopped
Salt & Pepper to taste
Pesto and Parmesan for serving
1 parmesean cheese rind

Steps:

  • In a large pan soup pan, saute the onion and celery in butter or olive oil. When the onions are soft, add the garlic and fresh herbs. Mix until the garlic is soft, about a minute. Then add te parmesean cheese rind and chopped root vegetables. Mix well before adding the stock.
  • Once the stock is added, bring the soup to a simmer and reduce the heat. Continue cooking until the vegetables are soft. Season to taste with salt & pepper. Serve the soup with freshly grated Parmesan and a dollop of pesto.
  • To make a creamy version of this soup, take an immersion blender to the mixture and add a mixture of flour and water to help thicken it. About 1 tbsp of flour to 1 tbsp of water. Add some heavy cream and serve!

3 parsnips, peeled and cut into 1/2-inch pieces
3 carrots, peeled and cut into 1/2-inch pieces
1 celery root, peeled and cut into 1/2-inch pieces
2 turnips, quartered
1 sweet potato, peeled and cut into 1/2-inch pieces
1 (2 pound) butternut squash, peeled and cut into 1/2-inch pieces
¼ cup olive oil
1 teaspoon kosher salt
½ teaspoon ground black pepper
3 tablespoons butter
1 stalk celery, diced
½ sweet onion, diced
1 quart vegetable broth
½ cup half-and-half cream
salt and ground black pepper to taste

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Combine parsnips, carrots, celery root, turnips, sweet potato, and butternut squash in a large roasting pan. Drizzle with olive oil, and season with 1 teaspoon of kosher salt and 1/2 teaspoon of pepper. Toss vegetables to evenly distribute seasonings.
  • Roast in the preheated oven until the vegetables are easily pierced with a fork, 30 to 45 minutes, stirring every 15 minutes.
  • Meanwhile, melt the butter in a large pot or Dutch oven over medium heat. Stir in the celery and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Pour in the vegetable broth and bring to a simmer, uncovered. Stir in the roasted vegetables and continue simmering for 10 minutes. Puree the soup using an immersion blender. Stir in the half and half, and season with salt and pepper, if necessary. If the soup becomes too thick, add more vegetable broth.

This recipe is the crock pot adaptation of Mrs Falafel's Lentil and Apricot Soup from the alt.food.vegan newsgroup. It must be one of the most popular recipes ever to come up in that group and it is also superb and even easier in the crock pot. I throw it all together before work and eat it about 8 hours later. The apricots mush down and all it needs is a quick stir before serving. PS. Auto setting on my crockpot is one hour on high and then the rest on low.

1/4 cup all-purpose flour

Steps:

  • Preheat oven to 375 degrees F.
  • In a small bowl, soak the apricots in brandy for 5 minutes.
  • Blend flour, brown sugar, salt and butter until mixture resembles coarse meal.
  • Add oats and almonds and toss.
  • In a 9 inch glass pie dish, toss together apples, apricots and brandy.

1 tablespoon extra virgin olive oil
2 onions, diced
3 carrots, peeled and chopped
1 tablespoon ground cumin
3 cups red lentils, rinsed
10 cups water
12 ounces dried apricots, chopped
salt

Steps:

  • Heat the oil in your soup pot over medium heat, then stir in the onions and carrots. Saute for about 10 minutes. Add the cumin and stir well. Decrease the heat, cover, and let the vegetables sweat for ten minutes.
  • Add the lentils and pour in enough of the water to cover. Bring to a simmer, then reduce the heat to medium low and cook for twenty minutes, or until the lentils and carrots are tender. Add more of the water as needed as the lentils soften and expand.
  • Remove from the heat, stir in the apricots and any remaining water, and season with salt. Use an immersion blender to puree until smooth; alternatively working in batches, puree in a regular blender until smooth. Take care not to over salt this soup. The right amount will bring out the flavor of the apricots but leave the onions in the background. Serve hot.

1/4 cup (1/2 stick) butter
4 cups 1/2-inch cubes peeled celery root (from one 1 1/4-pound celery root)
3 cups 1/2-inch cubes peeled cored Granny Smith apples (from about 2 medium)
1 1/2 cups chopped onion (about 1 large)
4 cups (or more) low-salt chicken broth
1/2 cup chopped chives
1/2 cup grapeseed oil
Pinch of salt
3 ounces thinly sliced pancetta (Italian bacon)

Steps:

  • Melt butter in heavy large pot over medium heat. Add celery root, apples, and onion. Cook until apples and some of celery root are translucent (do not brown), stirring often, about 15 minutes. Add 4 cups broth. Cover and bring to simmer. Reduce heat to medium-low; simmer covered until celery root and apples are soft, stirring occasionally, about 25 minutes. Remove from heat; cool slightly.
  • Working in batches, puree soup in blender until smooth, adding more broth by 1/4 cupfuls to thin to desired consistency. Return soup to pot. Season to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Refrigerate uncovered until cold, then cover and keep refrigerated.
  • Puree chives, grapeseed oil, and pinch of salt in blender until smooth.
  • Preheat oven to 375°F. Arrange pancetta slices in single layer on rimmed baking sheet. Roast until pancetta is browned and crispy, about 18 minutes. Transfer to paper towels to drain. Crumble pancetta. DO AHEAD: Chive oil and pancetta can be made 2 hours ahead. Let stand at room temperature.
  • Rewarm soup over medium heat. Divide soup among bowls. Sprinkle pancetta crumbles over each serving. Drizzle each bowl with chive oil.

  • In a large deep saucepan, combine the lentils, onion, tomatoes with their liquid, apricots, ginger, garlic, garam masala and turmeric. Add four cups water. Bring to a boil, reduce the heat, cover and simmer until the lentils are soft, about 30 minutes. Mix in the cilantro. Season to taste with salt and pepper.
  • Meanwhile, heat the oil in a small saucepan over medium-high heat. Mix in the cumin and cook, stirring, until the oil is bubbling and the seeds start to darken in color, about two minutes. Immediately, off the heat, mix in the pomegranate molasses or juice concentrate. Take care, as it will splatter.
  • Divide the soup among four deep soup bowls. Drizzle on the cumin mixture and serve.

MY HONEY'S APPLE AND APRICOT PIE



My Honey's Apple and Apricot Pie image

This recipe makes two wonderfully delicious pies which is great for OAMC. If you want less crumble topping, just double the pie ingredients, and you can make 4 lucious pies. You can freeze them just before baking to enjoy another time, (Just be sure to increase the cook time to 50-55 min for a frozen pie). The crumbled topping stores well in the freezer so you could even make one pie at a time if that is your choosing. We adapted this from Chef #422893's wonderful Recipe #255771 making it lighter (reducing down the calories, fat, and carbs) and revised it into a pie form. We have made this using Sunmaid dried fruit bits in place of the apricots (which requires no re-hydration). Enjoy. :)

300 g carrots, diced into cubes
200 g sliced mushrooms
3 minced garlic cloves
1 tablespoon olive oil
40 g flour
40 g margarine
2 vegetable bouillon cubes
450 ml boiling water
150 ml soya cream
1 tablespoon fresh tarragon
1 tablespoon fresh parsley
1 teaspoon mustard powder
salt and pepper

Steps:

  • Fry the leeks and carrots in a frying pan the olive oil on a moderate heat until they begin to soften.
  • Add the garlic and mushroom cook for a further 5 minutes. Remove the veg mix from the pan.
  • Add the margarine and flour to the frying pan and heat gently stirring into a pasta, cook until golden brown about 5 minutes.
  • Add the boiling water to the bouillon cubes and stir well, add this stock to the flour and margarine gradually whisking in between. When all incorporated and thickened, take of heat and add soya cream and herbs mustard and season with salt and pepper.
  • Mix this with the vegetables and put in an oven proof dish, place in oven gas mark 6 for 40 minutes. Add dumplings if you want on the top and cook for a further 20 minutes.

1 teaspoon ground cumin

450 g carrots (peeled and chopped)
150 g parsnips (peeled and chopped)
200 g celeriac (peeled and chopped)
1 dessert apples (peeled cored and cut into chunks)
1 liter vegetable stock
150 ml natural yoghurt
50 g dried apricots (chopped)
28 g flat leaf parsley (to garnish)

Steps:

  • Melt butter in large saucepan and stir in spices carrots, parsnips, celeriac apple and seasoning. Stir in hot butter for 5 min.
  • Pour in 750ml of hot stock and bring to boil. Reduce heat and simmer partially covered for 25-30 mins or until veg is soft.
  • Leave to cool a little and then blend in blender until smooth, reheat adding enough of the remaining stock ot make soup consistency that you like.
  • Ladle into warm bowls top with swirl of yogurt and some chopped apricots, garnish with parsley and season with black pepper.
