Precooked quinoa helps keep this healthy salad recipe quick and simple. Loaded with black beans, kale, and avocado, this recipe is as filling as it is nutritious. You can also make the sweet potatoes and dressing ahead.

- Preheat oven to 400 degrees F.
- Toss sweet potato and 1 tsp. oil on a large rimmed baking sheet. Roast, stirring once halfway through, until tender, about 25 minutes.
- Meanwhile, combine the remaining 1 1/2 tsp. oil, avocado, lime juice, garlic, cumin, salt, pepper, and 1 Tbsp. water in a blender or food processor; process until smooth. Add 1 Tbsp. water, if needed, to reach desired consistency.
- Combine the sweet potato, quinoa, black beans, and kale in a medium bowl. Drizzle with the avocado dressing and gently toss to coat. Top with pepitas and scallion.

WINTER KALE AND QUINOA SALAD
This Winter Kale and Quinoa Salad makes the perfect healthy holiday side dish that is sweet, crunchy and super easy to make!

Steps:
- To make the quinoa, add 1/2 cup of water to a small saucepan and add quinoa. Bring to a boil, cover and reduce heat and simmer for about 13 minutes. Remove from heat, keeping quinoa covered, and allow it to sit for about 5 minutes then fluff quinoa with a fork.
- In a large bowl, mix together the kale, quinoa, pomegranate seeds, dried cranberries and walnuts.
- To make the dressing, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt and pepper in a small bowl.
- Pour dressing over the salad and toss together until evenly coated. Top with additional pomegranates, cranberries and walnuts as desired, serve and enjoy!

WINTER KALE QUINOA SALAD WITH LEMON TAHINI DRESSING
Steps:
- To make the Salad:
- Wash and remove thick stems from Kale leaves.
- Chop Kale leaves into bite size pieces and add to a large salad bowl.
- Massage Kale leaves 1-2 minutes (this helps soften the leaves).
- Add cooked Quinoa to Kale (make sure it's cooled, I make mine ahead of time and store it in the fridge until ready to use).
- Add in Radishes, Tomatoes, Carrots, and Almonds.
- To make the Dressing:
- Add Tahini, Lemon Juice, EVOO, Garlic, Salt, and Pepper to a food processor or high speed blender.
- Pulse or blend for about 30 seconds until it's a dressing consistency.
- Pour dressing over salad and mix well.
- Enjoy!

Steps:
- Bring water to a boil in a saucepan. Stir quinoa into the boiling water, reduce heat to medium-low, place cover on the saucepan, and cook until water absorbs into the quinoa, about 12 minutes. Remove saucepan from heat and let rest covered for 5 minutes. Remove cover and allow quinoa to cool completely.
- Put kale in a large mixing bowl.
- Whisk olive oil, lemon juice, Dijon mustard, garlic, pepper, and salt together in a bowl until oil emulsifies into the mixture; drizzle over kale. Add cooled quinoa, pecans, currants, and feta cheese to the dressed kale and toss to incorporate.
