If you are a lover spicy food and buffalo wings then you might want to give this recipe a try, you may of coarse double or triple this recipe but because of the spices and cayenne you will need to make each recipe in a separate bowl (10 wings in each bowl) the amount of cayenne may be adjusted to suit heat level, plan ahead the coated wings *must* be refrigerated 2 hours before frying, this is important so do not skip ;-) Serve the wings with a blue cheese dip see recipe#181552 or use your own favorite recipe

1/4 cup butter
1/4 cup Frank's red hot sauce (original flavor, or use your own favorite brand hot sauce)
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1 pinch salt (or to taste)
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4-1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon seasoning salt
10 chicken wings
oil, for deep-frying

Steps:

  • For the sauce; in a small saucepan combine the butter, hot sauce, black pepper, salt and 1/2 teaspoon garlic powder; bring to a simmer over medium-low heat.
  • Reduce heat to low and simmer uncovered for about 20 minutes stirring occasionally; remove from heat and set aside to be coated with the wings later.
  • For the wings; in a bowl combine flour, paprika, cayenne (you may adjust cayenne to suit heat level) 1/2 teaspoon garlic powder, onion powder and seasoned salt.
  • Place the wings in a shallow dish and sprinkle the flour mixture over; mix using hands to coat evenly and completely (I use disposable rubber gloves for this!).
  • Cover the dish and refrigerate for 2 hours (THIS IS IMPORTANT, the wings must be refrigerated for that amount of time!).
  • Heat oil in a deep-fryer to 375 degrees F (the oil should be just enough to cover the wings completely, about 1-1/2-inches or more).
  • Fry the flour-coated wings in hot oil for about 10-15 minutes or until parts of the wings begin to turn brown.
  • Remove from heat then place wings in a serving bowl; add in prepared hot sauce mixture and turn the wings to coat with the sauce.
  • You may serve the wings as is or place on a baking sheet and bake in a 250 degree oven for 10 minutes.
  • Serve with a blue cheese dip.

This sauce tastes similar to the sauce used on the sticky fingers at one of my favorite restaurants. It is easy to make and has endless possibilities for modification. Try adding a bit of cinnamon or cloves to it. Honey is used to thicken the sauce, but isn't necessary. If not using the honey, just use extra brown sugar.

If you know someone from Buffalo, they know someone who told them the secret ingredients to the Anchor Bar's famous Buffalo chicken wings. I know people from Buffalo. This is my version, as described to me many years ago, over almost as many beers.

⅔ cup hot pepper sauce (such as Frank's RedHot®)
½ cup cold unsalted butter

Steps:

  • Combine the hot sauce, butter, vinegar, Worcestershire sauce, cayenne pepper, garlic powder, and salt in a pot and place over medium heat. Bring to a simmer while stirring with a whisk. As soon as the liquid begins to bubble on the sides of the pot, remove from heat, stir with the whisk, and set aside for use.

2 cups soy sauce
2 cups brown sugar
2 tablespoons garlic powder
5 pounds chicken wings, split and tips discarded

Steps:

  • Stir the soy sauce, brown sugar, and garlic powder together in a saucepan over medium heat; cook and stir until the sugar melts completely. Remove from heat and allow to cool.
  • Place the chicken wings in a large bowl. Pour the soy sauce mixture over the wings and toss to coat evenly. Cover the bowl with plastic wrap. Allow chicken to marinate in refrigerator overnight or 8 hours.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Pour the chicken wings and marinade into a 9x13-inch baking dish. Cover the baking dish with aluminum foil.
  • Bake in the preheated oven until thoroughly hot, about 45 minutes. Remove the aluminum foil from the baking dish and continue baking uncovered another 15 minutes. Serve hot.

15 -20 chicken wings cut into drumettes and flats
season salt for coating raw chicken and pepper
do not salt, seasoning salt is enough
GO CRAZY, CREATE YOUR SAUCE.
3 tbsp hot sauce 2tbsp butter
#2 sauce, your choice bbq sauce. add tsp apple cider vinegar for tang. 2 tbsp butter

Steps:

  • 1. Pre cut wings are worth the money. If you cut them just discard the tip. Season well with season salt and pepper. The excess will cook off. Drain in Strainer until they are dry enough to fry.You could prepare the day before and just drain off excess water. If you put them into the 360-375 degree oil too wet, they will POP . I have a fryer that cooks 6 at the time. Your fryer may cook more and save time.
  • 2. Preheat grease to 350 (16) min 375( 10-12) min Add desired amount of chicken leaving room for cooking . When you think they are overdone the sauce will turn the chicken chewy. Very Good texture. An exact timing on when they are done would be too hard due to size of wings. If they are really large make sure they float and stop frying. Check and make sure there is not pink at the bone.
  • 3. While the wings are frying, prepare your sauce. Three tbsp hot sauce and 2 tbsp butter. Melt butter then add hot sauce. You could use buffalo sauce for hotter or any flavor barbque sauce. Just put it in a sauce pan and heat until it thins out and taste good. Butter is the key to sticky sauce.
  • 4. Drain wings after they look crispy and well done. Toss in sauce pan and remove so they will stay crispy. YUM!!!
  • 5. Health TIP :You can always use the oven. Spray a cookie sheet and spray the wings with nonstick spray. Cook for about 10 min @ 375 and drain off excess juice from chicken. This step will keep them dry and crispy. Cook another 10 until you see they are the texture you like. Make sure they are done to the bone. Check the drumstick because they are thicker. This is a really healthy way to cook. Do the sauce of your choice the same way. Just glaze sauce. You could also glaze and put back in oven to make them sticky and crunchy. So many ways to adjust this to your own recipe.

¾ cup all-purpose flour
1 tablespoon salt
1 tablespoon ground black pepper

1 quart vegetable oil for frying

Steps:

  • Rinse chicken wings in cold water; drain and pat dry with paper towels.
  • Mix flour, salt, pepper, and garlic powder together in a 1-gallon resealable bag; add chicken wings. Seal bag and shake to evenly coat chicken.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Remove chicken from bag and shake off any excess coating; fry in the preheated oil until chicken is no longer pink in the center, about 7 minutes. Remove chicken with a slotted spoon and drain on a paper towel-lined plate.
  • Combine hot sauce and butter in saucepan over medium heat; cook until heated through, about 5 minutes. Coat cooked chicken wings with sauce.

This is a fantastic recipe I came across whilst roaming the 'net! It comes from the owner of a popular Korean restaurant where these chicken wings were the most popular of all his special order dishes. Time to make doesn't include chilling time.

1 lb chicken wings (sectioned)
1/3 cup potatoes or 1/3 cup cornstarch
1/2 cup milk
1 teaspoon salt
1 tablespoon ground black pepper
vegetable oil (for deep frying)
2 tablespoons fine ground red chili pepper
2 tablespoons soy sauce
2 tablespoons sugar (or honey, or corn syrup)
1 tablespoon rice vinegar (or wine)
4 cloves peeled garlic
1/2 inch peeled fresh gingerroot
2 tablespoons korean red pepper paste (gochujang)
water, as needed to obtain a thin paste
1 spring onion
1 tablespoon toasted sesame seeds

Steps:

  • Rinse the wings in cold water, then lightly salt and pepper them. Let stand about 10 to 15 minutes. Place wings in a large bowl and pour the milk over them, then place in refrigerator for about one hour, turning three to four times.
  • For the Stir Fry Sauce: Place the ginger and garlic into a blender with just enough water to liquefy the mix. Pour into a small mixing bowl and add all other sauce ingredient & mix well. Finely chop the green/spring onion and set aside.
  • Chicken Wings: Discard the milk and let wing section drain until just damp. Heat oil in a large cooking pot. (350ºF or use the bread test) Roll wings in starch and deep fry until golden brown then drain.
  • Transfer the chicken to a large stir fry pan or wok over medium to medium high heat, add the sauce, and stir fry until all liquid is gone.
  • Place onto a serving tray and garnish with the green onion and sesame seed. Serve as an appetizer or with sticky rice and ban chan for a meal.
