Beef short ribs braised in a big red until tender and juicy. I call for chicken stock because of the quality of store bought beef broth. If you have good quality beef broth, then use it, but store bought broth is usually mostly flavoring and tastes metallic.

4 boneless beef short ribs
1/4 cup flour
2 tablespoons canola oil
1 large onion
1 celery rib
1 large carrot
3 garlic cloves
1 cup wine
1 -2 cup chicken stock
2 tablespoons tomato paste
1 bay leaf
1 teaspoon dried thyme
1 teaspoon dried rosemary
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Chop onion, celery and carrot into one inch pieces. Mince garlic. Set aside. Dredge beef in flour seasoned with salt and pepper. Shake off extra flour.
  • Heat dutch oven or other oven/stovetop safe deep pan over high heat till hot. Add oil and immediately add beef.
  • Brown beef till all sides are dark golden brown. Remove from pan and add onion, carrot and celery.
  • Reduce heat to medium and add garlic. Sauté till vegetables start to brown.
  • Add wine and reduce by half.
  • Add tomato paste, chicken stock, thyme, rosemary and bay leaf.
  • Return beef to pan, cover tightly and place in oven. Cook for about two hours or until beef is tender but not falling apart.
  • Remove beef and strain vegetables off of sauce. Return liquid to pan and reduce until desired consistency.
  • Season sauce to taste. Serve over spatzle, noodles or polenta. (or whatever else you please).

3 ½ pounds boneless short ribs (trimmed of excess fat)
2 teaspoons kosher salt
2 tablespoons olive oil
12 oz bacon (chopped)
2 large onions (peeled and sliced)
4 large carrots (peeled and cut into 2-inch pieces)
2 celery ribs (chopped)
1 lb brown mushrooms (Cremini, baby Bella or chestnut mushrooms)
4 medium garlic cloves (peeled)
2 tablespoons flour
2 cups wine (red or white both work)
1 cup beef stock
1 bay leaf
Fresh parsley (chopped)
fresh ground pepper.

Steps:

  • Preheat oven to 300°F and adjust oven rack to lower-middle position and heat oven.
  • Pat the beef dry with paper towels and season with 2 teaspoons salt.
  • Heat 1 tablespoon oil in a large heavy-bottomed oven-safe pot over medium-high heat until hot. Add the chopped bacon and cook until crisp. Using a slotted spoon, remove from the pan, and set aside. Drain all, but 2 tablespoons of fat from the pot.
  • Add half of beef and cook, without moving, until well browned (about 4 to 6 minutes). Turn the beef and continue to cook on the second side until well browned, reducing heat if fat begins to smoke.
  • Transfer beef to a plate and repeat with remaining tablespoon oil and short ribs. Set the browned ribs aside on a dish.
  • Reduce the heat to medium, add the onions, celery, and carrots, and cook, stirring occasionally, until the onions are softened and beginning to brown, 10-12 minutes. (If onions begin to darken too quickly, add 1 to 2 tablespoons water to the pan.)
  • Add the mushrooms and cook until they release their liquid and the liquid cooks off. Add the garlic and cook another minute.
  • Add the flour and coat the mixture well. Cook, stirring constantly, until it browns on the sides and bottom of the pan, about 2 minutes.
  • Increase heat to medium-high, add wine, and simmer, scraping the bottom of the pan with a wooden spoon to loosen browned bits, until reduced by half, 8 to 10 minutes.
  • Add the stock, parsley, pepper, and bay leaf. Add cooked bacon, browned beef, and any accumulated juices to pot; cover and bring to simmer.
  • Transfer pot to oven and cook, until a fork slips easily in and out of meat, 3 to 3½ hours.
  • Using tongs, transfer meat to a cutting board and shred or cut into bite-sized pieces and return to the pot.
  • Taste for seasoning and add salt as needed before serving.

4 English cut beef short ribs, trimmed (roughly 8 ounces each)
Kosher salt and freshly cracked black pepper
3 tablespoons unsalted butter, divided
1 bottle full bodied red wine, such as Cabernet
4 cups low-sodium vegetable stock
4 cloves garlic, peeled and smashed

Steps:

  • Preheat oven to 325 degrees F.
  • Pat ribs dry with paper towels and season with salt and pepper on all sides.
  • Heat 2 tablespoons of butter in a large Dutch oven over medium-high heat. Add the ribs and brown on all sides. Transfer the ribs to a plate, then add the garlic and stir until softened but not brown, about 1 minute. Carefully pour in the wine, bring to a boil and cook until reduced to about 1 cup. Add the ribs and any juices they have released back to the pot along with the stock. Reduce the heat and bring to a simmer, then cover the pot and transfer it to the oven, to braise, until the meat easily falls off the bone, about 3 hours.
  • Transfer the ribs to a plate and tent with foil to keep warm. Strain the braising liquid through a fine mesh sieve into a saucepan set over medium-high heat. Simmer the liquid, skimming fat as necessary, until thickened, about 10 minutes. Remove from the heat and whisk in the remaining 1 tablespoon of butter. Taste for seasoning and adjust, if necessary. Transfer the ribs and sauce to a serving dish and serve.

2 stalks celery, trimmed and cut into 1-inch (2 cm) pieces
2 medium carrots, peeled, trimmed, and cut into 1-inch (2 cm) pieces
1 medium leek, white and light-green parts only, split lengthwise, thoroughly rinsed, and coarsely chopped
6 cloves garlic, peeled
1 bay leaf
4 sprigs fresh thyme
whole black pepper, to taste
2 tablespoons all-purpose flour
salt, to taste
pepper, to taste
1 bottle cabernet sauvignon
2 tablespoons olive oil
2 tablespoons tomato paste
2 qt unsalted beef broth, or chicken broth

Steps:

  • In a large bowl, add the short ribs, all vegetables, herbs and black pepper to taste for the marinade. Add the wine to cover.
  • Marinate at least 6 hours in the fridge.
  • Remove the meat from the marinade and pat dry with a towel or paper towel.
  • Strain the veggies from the wine. Reserve both the wine and veggies for later.
  • Season the meat with a generous amount of salt and pepper. Coat each side with flour and set aside.
  • In a large ovenproof pot, heat the olive oil over medium-high heat on the stovetop.
  • Preheat the oven to 350F˚(180C˚).
  • When the oil begins smoking, carefully slip ribs into the pot and sear until well-browned, 4 to 5 minutes per side. Transfer ribs to plate.
  • In the same pot, sauté the veggies from the marinade until lightly caramelized and browned, 5 to 7 minutes.
  • Add the wine in the pot, stirring to deglaze. Add tomato paste and stir to dissolve. Bring the liquid to a boil so the alcohol from the wine evaporates.
  • Add beef broth and bring it back to a boil. Add the ribs back to your pot. Spoon the liquid over the ribs to coat them.
  • Cover the pot and transfer to the middle rack of your oven.
  • Bake until meat is tender enough to be pierced easily with fork, about 2½ hours, opening the oven every 30 minutes and carefully skimming the fat from surface.
  • Serve with mashed potatoes, or another side of your choice, and garnish with chopped parsley on top.

3 1/2 lbs boneless beef short ribs, trimmed of excess fat or 7 lbs bone-in beef short ribs, bones removed and trimmed of excess fat and gristle
2 tablespoons vegetable oil
4 cups thinly sliced onions (2 large onions)
1 tablespoon tomato paste
6 medium garlic cloves, peeled
2 cups red wine
1 cup beef broth
4 large carrots, peeled and cut crosswise in 2-inch pieces
4 sprigs fresh thyme
1 bay leaf
1/4 cup cold water
1/2 teaspoon gelatin powder

Steps:

  • Place oven rack in upper-middle position and preheat to 300°F Pat beef dry with paper towels. Stir together salt and pepper and sprinkle over beef. Heat 1 tbsp oil in Dutch oven until smoking. Add half of beef and cook without moving, 4-6 minutes, until well browned. Turn beef over and cook second side until well browned, another 4-6 minutes. If fat begins to smoke, reduce heat. Transfer beef to medium bowl. Repeat with remaining oil and beef.
  • Reduce heat to medium, add onion, and cook, stirring often, until softened and barely browned, 12-15 minutes. (If onions darken too quickly, add 1-2 tbsp water to pan.).
  • Add tomato paste and stir constantly until it browns on sides and bottom of pan, about 2 minutes. Add garlic and cook unitl fragrant, 30-60 seconds. Turn heat up to medium-high, add wine, and simmer, scraping up fond from sides and bottom. Simmer until reduced by half, 8-10 minutes. Add beef broth, carrots, thyme, and bay leaf. Add beef and any juices in the bowl. Cover and bring to a simmer. Transfer to oven and cook 2 to 2½ hours, turning meat twice with tongs during cooking. When done, a fork will slip easily in and out of meat.
  • Place water in a small bowl and sprinkle with gelatin. Let stand 5 minutes. Using tongs, transfer meat and carrots to serving platter; tent with foil. 1 bunch each fresh thyme, rosemary, and sage leaves, chopped

2 (750-ml) bottles Cabernet Sauvignon
Olive oil, for searing ribs
1 yellow onion, medium dice
2 carrots, peeled and medium dice
2 ribs celery, medium dice

4 quarts veal stock
3 bay leaves
1-ounce dry porcini mushrooms

Steps:

  • Season the ribs liberally with herbs and salt and pepper. Place in a large non-reactive bowl or deep container and cover with wine. Marinate for 12 hours in the refrigerator.
  • Preheat oven to 375 degrees F.
  • Remove ribs from marinade, pour all the wine into a sauce pot, and reduce by half. Meanwhile, heat a layer of olive oil in a large cast iron pan over medium-high heat. Sear ribs on all sides until well browned. Place browned ribs into a braising or deep roasting pan. Brown onion, carrots, celery, and garlic in the same cast iron pan, adding more oil as needed. Scatter browned vegetables over the ribs. Add the reduced wine, the stock, bay leaves, and mushrooms. Cover the pan with parchment paper and foil and place in the oven for 5 hours. Transfer from the oven and allow the ribs to rest for 1 hour before removing the bones. Skim any fat from the sauce. Remove vegetables from the pan and set aside. 1 tablespoon Diamond Crystal kosher salt
1/2 teaspoon black pepper
2 tablespoons apple cider vinegar

1/2 teaspoon dried thyme

Steps:

  • Preheat your oven to 300 degrees F. Cut the short ribs in half as shown in the photo above and arrange them in a lightly greased 13-by-9-inch baking dish. Season them with salt and pepper.
  • In a small jar, add the vinegar, hot pepper sauce, smoked paprika, garlic powder and thyme. Whisk or shake well to combine. Pour the sauce over the ribs and use your hands to toss and coat all the pieces.
  • Cover the pan tightly with a double layer of aluminum foil. Bake the ribs until cooked through and tender, 2.5 hours.
  • Remove the foil (careful - hot steam will escape). Baste the tops of the short ribs with the braising liquid, and continue baking them for 30 more minutes, allowing the tops to brown.
  • Serve with the braising liquid. I like to place a small bowl filled with the braising liquid on each plate. This allows the diners to dip their meat into the yummy liquid.

  • Uncover pot. Simmer ribs 30 minutes, occasionally spooning fat from surface; reserve 2 tablespoons fat. Stir reserved flour-coating mixture and reserved 2 tablespoons fat in small bowl until smooth; mix paste into sauce around ribs. Simmer until meat is very tender and gravy thickens, about 45 minutes longer. Season with salt and pepper.
  • Transfer short ribs and gravy to large bowl. Sprinkle with celery leaves.

And while it truly embodies the concept of a one-pot meal, we do like to roast the vegetables separately so they retain their individual flavor, creating even greater depth of flavor.

For the short ribs:
1 tablespoon ghee or olive oil
3 pounds boneless short ribs, trimmed
1 tablespoon sea salt
1 onion, peeled and chopped
1 carrot, scrubbed and chopped
1 celery stalk, chopped
1 cup port or red wine
6 sprigs fresh thyme
4 whole garlic cloves
2 cups Beef Bone Broth
Chopped fresh flat-leaf parsley, for serving
For the vegetables:
2 potatoes, diced
2 carrots, peeled and diced
8 shiitake mushrooms, stems removed, caps chopped
1 tablesepoon ghee or olive oil
1 teaspoon sea salt

Steps:

  • Prepare the short ribs: In a large oven-safe pot or Dutch oven over medium-high heat, heat the ghee or olive oil.
  • Pat the short ribs dry with paper towels and season with the sea salt. Gently place the short ribs in the hot ghee or oil and sear on all sides until golden brown, about 4 minutes per side, turning as needed and searing in batches if needed to avoid overcrowding the pot. Transfer to a plate.
  • To the same pot, add the onion, carrot and celery and cook until the veggies begin to brown, stirring as needed to avoid burning, about 5 minutes.
  • Add the wine and deglaze the pot, scraping the browned bits loose from the bottom of the pot. Add the thyme and garlic and bring to a simmer. Let the wine reduce by half, about 10 minutes, then remove the pot form the heat.
  • Place the browned short ribs into the wine reduction along with the bone broth and let marinate for 1 hour in the refrigerator. Alternatively, you can prepare this dish in advance by letting the ribs marinate for a full 24 hours-well worth it in our opinion.
  • Preheat the oven to 350°F.
  • Remove the pot from the refrigerator, cover with a lid or aluminum foil, and transfer to the oven to braise for 2 1/2 hours.
  • At the 2 hour mark, when 30 minutes remain on the cooking time for the short ribs, prepare the vegetables: On a baking sheet, toss the potatoes, carrots, and mushrooms with the ghee or oil and sea salt. Spread out in and even layer and roast in the oven for 20 to 25 minutes, until the potatoes and carrots are knife-tender.
  • Remove the pot with the short ribs from the oven, uncover, and transfer the meat to a plate. Strain the braising liquid into a deep serving dish; discard the solids from the liquid. Add the roasted veggies to the serving dish and stir to distribute evenly. Using your hands or a fork, break the short ribs into chunks and stir in as well. Garnish with a little chopped fresh parsley and serve family style.
  • The stew or any leftovers can be refrigerated for up to 1 week, or frozen for up to 6 months.

5 pounds very meaty bone-in beef short ribs, cut into 2-inch chunks
Good olive oil
Kosher salt and freshly ground black pepper
3 cups chopped leeks, white and light green parts (3 leeks)
3 cups chopped celery (5 to 6 ribs)
2 cups chopped yellow onions (2 onions)
2 cups chopped unpeeled carrots (6 carrots)
1 1/2 tablespoons minced garlic (5 cloves)
1 (750-milliliter) bottle Burgundy, Cotes du Rhone, Chianti, or other dry red wine
4 cups beef stock, preferably homemade or College Inn
1 cup canned crushed tomatoes, such as San Marzano
1 (11.2-ounce) bottle Guinness draught stout
6 sprigs fresh thyme, tied with kitchen string
Toasted baguette, for serving

Steps:

  • Preheat the oven to 425 degrees F. Place the short ribs on a sheet pan, brush the tops with olive oil, and sprinkle with 1 1/2 tablespoons salt and 1 1/2 teaspoons pepper. Roast for 20 minutes and remove from the oven. Reduce the temperature to 325 degrees F.
  • Meanwhile, heat 1/4 cup olive oil in a large (12-inch) Dutch oven, such as Le Creuset, over medium heat. Add the leeks, celery, onions, and carrots and cook over medium to medium-high heat for 20 minutes, stirring occasionally. Add the garlic and cook for one minute. Add the wine, bring to a boil, lower the heat, and simmer over medium heat for 10 minutes, until the liquid is reduced. Add the stock, tomatoes, Guinness, thyme, 1 tablespoon salt, and 1 1/2 teaspoons pepper.
  • Place the ribs in the pot, along with the juices and seasonings from the sheet pan. Bring to a boil, cover, and cook in the oven for one hour. Uncover and cook for one more hour, until the meat is very tender.
  • Remove the short ribs to a plate with a slotted spoon and discard the thyme bundle and any bones that have separated from the meat. Simmer the sauce on the stove for 20 minutes, until reduced. 2 Tablespoons olive oil
3 1/2 lbs. bone in short ribs *see note
Kosher salt and fresh cracked pepper
2 large sweet yellow onions, sliced
5 cloves garlic, minced
2 cups Cabernet Sauvignon (or other full bodied red wine)
2 cups beef broth
1 bay leaf
1 sprig fresh thyme
2 sprigs fresh rosemary

Steps:

  • Preheat oven to 325 degrees. Generously season the short ribs with fresh cracked pepper and Kosher salt, rubbing it over all sides. Heat the oil in a large dutch oven over medium high heat. Add the short ribs to the pan in a single layer and sear, leaving the ribs in place for several minutes before turning. Repeat on all sides. Remove the short ribs to a plate. Drain off any excess fat from the pan, leaving 1 Tablespoon in the pan. Lower the heat to medium. Add the onions and saute until softened, 5-7 minutes. Add the garlic and saute an additional minute, until fragrant. Pour in the wine and use a wooden spoon or spatula to scrape up any browned bits from the bottom of the pan. Bring to a simmer and cook for an additional 5 minutes, or until reduced slightly. Nestle the short ribs back in the pan, then pour in the beef broth. They should be just barely covered. Place the rosemary, thyme, and bay leaf in the liquid surrounding the beef. Cover the pot and place in the oven. Bake for 2 1/2 to 3 hours or until beef is very tender. Remove from the oven and allow to rest before serving. Optional but recommended: Place the pot in the fridge overnight. When you're ready to reheat, scrape off the hard layer of fat on top and discard. Reheat the beef in a 400 degree oven for 15-20 minutes or on the stove top over low heat. I recommend serving the beef with the liquid and onions over mashed potatoes, polenta, or egg noodles.

6 large Boneless Beef Chuck Ribs (well-marbled)(or 8 meaty bone-in beef short ribs)
3 tablespoons Canola Oil
1 large Onion (thinly sliced)
3 Carrots (peeled and cut in thirds)
1 cup Dry Red Wine (good quality)
3 large Garlic Cloves (peeled and crushed)
8 oz crushed tomatoes
1 tablespoons Thyme (chopped)
1 tablespoons Oregano (chopped)

1/4 cup Flat leaf parsley (chopped)

Steps:

  • Pre-heat the oven to 325 degrees.
  • Pat the ribs very dry and season with salt and pepper on both sides.
  • In a large skillet, heat the 3 tablespoons of oil until shimmering.
  • Working in batches, add the ribs to the skillet being careful not to crowd them.
  • Brown the beef on all sides over medium high heat, you want to get a good sear.
  • As they are seared, remove the ribs with a slotted spoon and place them in a single layer in a large oven-proof casserole or baking dish.
  • Saute the onion slices in the skillet until they start to brown.
  • Add the sauteed onions, carrots and bay leaves to the beef ribs.
  • Add the garlic cloves, crushed tomatoes and wine to the pan.
  • Bring to a boil, scraping the bits from the bottom of the skillet.
  • Pour the heated liquid into the casserole, you should have enough liquid to cover the ribs halfway up.
  • Sprinkle with herbs and parsley.
  • Cover the casserole tightly with aluminum foil and place in pre-heated oven for 3 hours.
  • Allow the ribs to cool in the casserole and refrigerate overnight.
  • 1 hour before serving, pre-heat the oven to 325 degrees. Remove the casserole from the refrigerator and skim the hardened fat from the ribs.
  • Re-heat the ribs for 1 hour.
  • Serve over pureed potatoes, sprinkle with fresh chopped parsley.

It's preparations are endless, it can flavored with an Asian flair, a robust BBQ but this version is a take on the flavors reminiscent of a Grandma's pot roast.

1 shallot
2 large garlic cloves
4 medium carrots
2 sprigs fresh rosemary
1 cup red wine
2 1/2 cups beef broth

Steps:

  • Preparation.
  • Preheat oven to 350 degrees
  • In small bowl, combine the garlic salt, italian seasoning, salt and pepper. Blend well.
  • Apply generously the spice rub ingredients you just prepared to both sides of the short ribs.
  • In oven proof roasting pot, coat bottom of pan with olive oil and brown each side of the rib (approximately 3 minutes per side) on a medium heat cooktop.
  • Remove ribs and set aside
  • Add carrots, onions, garlic and rosemary to same pot that you just browned the ribs in and saute until translucent.
  • Add red wine and 2 Cups of the beef broth and and bring to a boil, then remove from heat.
  • Return ribs to roaster and cover.
  • Place in oven and cook for 3 hours. Periodically check to ensure liquid is still present. If needed, add more beef broth and red wine.
  • After 3 hours, reduce heat to 325 degrees and bake for an additional 30 minutes.
  • Turn oven to 175 degrees and remove 1/2 cup of braising liquid from pan and degrease. An easy method of separating the grease is by adding ice cubes and the grease sticks to the ice cube. Just don't let the ice melt, remove the cubes as you go.
  • In a small pot, on medium heat whisk braising liquid, 1/2 cup beef broth and contents of gravy mix until thickened.
  • Serve short ribs and drizzle sauce to taste.

2 lb. boneless short ribs (about 4)
1 medium carrot (peeled and quite finely diced)
1 medium onion (diced)
1 Tbsp all purpose flour
1 Tbsp tomato paste
1 1/2 cups dry red wine (*see notes)
1 1/2 cups chicken broth (or beef broth)
5 sprigs flat-leaf parsley (or 2 tsp dried parsley)
4 sprigs fresh thyme (or 1/2 tsp dried thyme)
1 sprig fresh rosemary (or 1/2 tsp dried rosemary)
1 bay leaf
Salt and freshly ground pepper
8-10 mini potatoes (halved)
1 large carrot (peeled, halved and cut into 2-inch slices)

Steps:

  • Preheat oven to 350F.
  • In a Dutch oven or large, oven-safe pot with a lid, heat oil over medium-high heat. Add short ribs and sear on all sides until golden. Remove from pot to a plate.
  • Remove most of the oil from the pot. Add the diced carrots and onions and cook, stirring, over medium heat until the onions are softened, about 5 minutes. Add the flour and tomato paste to the pot and continue cooking, stirring constantly, for another minute. Add the wine to the pot. Bring to a boil then reduce heat to medium low and simmer until wine reduces by half (about 20-25 minutes) *Don't rush this step! When the wine has reduced, add the broth and the herbs to the pot and stir to combine. Return the short ribs to the pot. Cover pot with lid and cook in preheated oven for 1 1/4 hours.
  • After 1 1/4 hours in the oven, remove from oven and stir in the large pieces of carrots and potatoes, if using. Return to the oven, covered, for another 1 1/4 hours or until meat pulls apart easily and vegetables are tender. *Make sure there's a good bit of liquid in the pot at this point, to cook the vegetables. If not, add a bit more broth, wine or both.
  • Remove from oven. Remove herbs and discard. Taste sauce and season with salt and freshly ground pepper, as needed. Remove short ribs and vegetables to a plate. Allow sauce to stand undisturbed for 10-15 minutes. The fat in the gravy should rise to the top, where you can spoon it off and discard. Return the short ribs and vegetables to the pot and re-warm on the stove-top with the gravy.

Steps:

  • Heat oil in a heavy large deep pan or dutch oven over medium high heat.
  • Season the ribs with salt and pepper and sear until browned on all sides. About 30 seconds on each side. Remove them to a plate.
  • Leaving the brown bits in the pan, add the vegetables and garlic. Stir them, and continue to cook until just softened. Now, Add the tomato paste, and stir for another minute.
  • Pour in the red wine, and the beef stock. Bring the mixture to a soft boil, and add the seared short ribs back to the pan.
  • Add the fresh thyme and dried bay leaves to the pan.
  • Place the lid on the pan, reduce the heat to a low simmer; you should see minimal movement in the liquid. Place the pan in a preheated 300 degrees F. oven if you prefer the oven method. Allow the meat to braise until very tender.
  • While the short ribs braise, cook the pasta according to the directions on the package.
  • Remove the beef to a plate. Strain the liquid in the pan. Wipe out the pan, and return half of the strained liquid to the pan. Allow the liquid to reduce by half.
  • Place the short ribs over the pasta, drizzle on a bit of the reduced braising liquid, and garnish with fresh parsley.

4 pounds boneless short ribs, trimmed of excess fat and silver skin, cut into 3-in chunks (see note)
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons olive oil
2 medium yellow onions, diced
6 cloves garlic, roughly chopped
1½ tablespoons tomato paste
¼ cup all-purpose flour
2⅓ cups red wine (see note)
1 cup beef broth
2 teaspoons sugar
1 bay leaf
5 sprigs fresh thyme
2 large carrots, sliced ½-in-thick diagonally

Steps:

  • Adjust an oven rack to the lower-middle position and preheat the oven to 325°F. Season the short ribs all over with salt and pepper. Heat 1 tablespoon of the oil in a large heavy-bottomed Dutch oven or oven-safe pot over medium-high heat until shimmering. Add half of the short ribs and cook, without moving, until well browned on one side only, 3 to 5 minutes. Transfer the beef to a large plate. Repeat with the remaining tablespoon of oil and short ribs. (Note: Browning the beef adds flavor. It might seem odd to brown on one side only but I find that it saves time and does the job just as well.)
  • Pour off all but one tablespoon of fat, return the pot to the stove, and reduce the heat to medium-low. Add the onions and cook, stirring occasionally, until soft and translucent, about 5 minutes. (If the onions begin to darken too quickly, add 1 to 2 tablespoons of water to the pan.) Add the garlic and cook, stirring occasionally, 2 minutes more. Add the tomato paste and cook, stirring constantly, for 1 minute. Add the flour and cook, stirring constantly, until fully absorbed by the onion-tomato mixture, about 1 minute.
  • Add the wine, broth, sugar, bay leaf and thyme sprigs; increase the heat to high and bring to a boil, scraping the bottom of the pan to loosen browned bits. Add the short ribs and any accumulated juices to the pot and return to a boil. Cover the pot with a lid, transfer to the oven, and cook for 2 hours.
  • Carefully remove the pot from the oven. Stir in the carrots. Cover and return the pot to the oven and cook 45 to 60 minutes more, or until the carrots and meat are tender. Remove the bay leaf and thyme sprigs. Skim any grease off the surface of the sauce, if necessary. Taste the sauce and adjust seasoning, if necessary. Spoon the short ribs and sauce into bowls over egg noodles, mashed potatoes, or creamy polenta.
  • Note: It's very important to trim all excess fat off of the exterior of the short ribs (although leave the marbling that goes throughout the meat alone), otherwise your sauce will be greasy. It's also a good idea to remove any silver skin, which is the thin, white/silvery membrane on the surface of the meat.
  • Note: In selecting wine for this recipe, look for an inexpensive bottle that's still good enough to drink: a Pinot Noir or Merlot in the $8 - $12 range would be ideal.
  • Make-Ahead Instructions: The short ribs can be made up to 2 days ahead of time. Reheat, covered, over medium-low heat on the stovetop or in a 325°F oven.
  • Freezer-Friendly Instructions: The short ribs can be frozen for up to 3 months. Before serving, defrost in the refrigerator for 24 hours and then reheat, covered, over medium-low heat on the stovetop or in a 325°F oven.

One 750-milliliter bottle red wine (use a good-quality wine you would drink)
3 tablespoons sugar
2 cups beef broth

Steps:

  • Preheat the oven to 300 degrees F.
  • Season the short ribs generously with the flour, salt and pepper. Heat a large Dutch oven or heavy-bottomed pot over high heat and add the oil. Add the short ribs in batches and brown on all sides, about 3 minutes per side. Transfer the ribs to a plate.
  • Meanwhile, add the carrots, celery and onion to a food processor and pulse until the vegetables are almost a puree, about 30 seconds.

2 tbsp tomato paste
1 tbsp olive oil

Rosemary & Thyme - optional (I like to throw in a few sprigs if both for the earthiness but they can easily be omitted)
Serving Suggestion: we love it with a thick pasta (1/2 - 1lb) such as fettuccine or parpadelle. But it also goes well with gnocchi (1 lb) (roasted, boiled or pan seared), cauliflower gnocchi or cauliflower purée. See post notes above for more ideas.

Steps:

  • Heat 1 tbsp of olive oil in a large sauté pan over medium-high heat
  • Working in batches season short ribs with salt (pepper optional) and cook them for 1-2 minutes on each side until a dark golden brown crust forms - transfer seared ribs to the slow cooker
  • While the short ribs are searing, mince garlic, measure and whisk remaining ingredients together
  • After you have moved all the seared ribs to the slow cooker add the red wine mixture to your pan, scrap off all of the bits that are stuck to the pan and simmer for 2-3 minutes
  • Pour wine mixture to slow cooker
  • Add herbs if using and cover and cook on low for 8 hours
  • Keep short ribs whole or shred short ribs into desired size to soak up juices - option to remove herb sprigs or leave

8 whole beef short ribs
1 dash kosher salt, & pepper to taste
1/4 cup all-purpose flour
6 pieces pancetta, Diced
2 tablespoons olive oil
1 whole medium onion, Diced
3 whole carrots, Diced

2 cups red wine
2 cups beef broth (enough To Almost Cover Ribs)
2 sprigs thyme

Steps:

  • Salt and pepper ribs, then dredge in flour. Set aside.
  • In a large dutch oven, cook pancetta over medium heat until complete crispy and all fat is rendered. Remove pancetta and set aside. Do not discard grease.
  • Add olive oil to pan with the pancetta grease, and raise heat to high. Brown ribs on all sides, about 45 seconds per side. Remove ribs and set aside. Turn heat to medium.
  • Add onions, carrots, and shallots to pan and cook for 2 minutes. Pour in wine and scrape bottom of pan to release all the flavorful bits of glory. Bring to a boil and cook 2 minutes.
  • Add broth, 1 teaspoon kosher salt, and plenty of freshly ground black pepper. Taste and add more salt if needed. Add ribs to the liquid; they should be almost completely submerged. Add thyme and rosemary sprigs (whole) to the liquid.
  • Put on the lid and place into the oven. Cook at 350 for 2 hours, then reduce heat to 325 and cook for an additional 30 to 45 minutes. Ribs should be fork-tender and falling off the bone. 1/4 cup all-purpose flour
6 thin slices bacon, diced
2 tablespoons olive oil
3 carrots, diced

4 cups beef broth (enough to almost cover the ribs)
2 sprigs fresh thyme
2 sprigs fresh rosemary
Cheese Grits, recipe follows, or regular grits, for serving
2 cups stone-ground grits
1/2 teaspoon salt, plus more if needed
4 large eggs
12 tablespoons (1 1/2 sticks) unsalted butter, cut into tablespoon pieces, plus more for buttering the dish
3 cups grated sharp Cheddar (or other cheese), plus more if needed
1/2 teaspoon cayenne pepper, plus more if needed
4 cloves garlic, finely chopped

Steps:

  • Preheat the oven to 325 degrees F. Salt and pepper the ribs, then dredge them in the flour. Set aside.
  • In a large Dutch oven, cook the bacon over medium heat until completely crispy and all the fat is rendered. Remove the bacon and set aside. Drain off any excess fat.
  • Add the olive oil to the pan with the bacon fat and raise the heat to high. Brown the ribs on all sides, about 45 seconds per side. Remove the ribs and set aside.
  • Lower the heat to medium. Add the carrots, shallots and onions to the pan and cook for 2 minutes. Splash in the wine and scrape the bottom of the pan to release all the flavorful bits of glory. Add the broth, 1 teaspoon kosher salt and plenty of freshly ground black pepper and bring to a boil. Taste and add more salt if needed. Add the ribs to the liquid; they should be almost completely submerged. Add the thyme and rosemary sprigs (whole) to the liquid. Finally, add the cooked bacon.
  • Put on a lid and transfer to the oven. Cook until the ribs are fork-tender and falling off the bone, 2 to 2 1/2 hours. Remove the pan from the oven and allow to sit for at least 20 minutes with the lid on before serving. At the last minute, skim the fat off the top of the liquid. (You can also refrigerate the mixture, then remove the solid fat from the top.)
  • For each serving, arrange 2 ribs on a bed of the grits, spooning a little juice over the top.
  • Cook the grits according to the package instructions, adding the salt with the water. Turn off the heat just before the grits are done.
  • Preheat the oven to 350 degrees F.
  • In a small bowl, whisk together the eggs. To temper the eggs before adding them to the hot grits, throw a couple of spoonfuls of the hot grits into the eggs. Begin stirring immediately and continue stirring until the mixture is well combined.
  • Pour the egg mixture into the grits. Stir constantly to incorporate the eggs into the grits. Add the butter and stir until melted. Next, add the cheese and stir until melted. Add the cayenne and garlic and stir well to combine. Taste and adjust the seasonings, adding more salt or cayenne if necessary. You could also add more cheese if you think that will bring happiness to your life, but keep in mind that some cheeses increase the salt content more than others.
  • Butter a 9-by-13-inch baking dish and pour the grits into the dish. Bake until the grits are hot and bubbly, 30 to 35 minutes. Let stand for 10 minutes before serving. The grits will become firmer as they cool.

2 pounds bone-in short ribs (about 4 [2-inch] ribs)
2 teaspoons kosher salt
3 teaspoons canola oil, for browning
1 small onion, diced
2 small peeled carrots, one diced and one sliced into thin coins
1 clove garlic , minced or pressed
2 teaspoons tomato paste
3/4 cup dry red wine
1 cup low-sodium beef stock
1 bay leaf
1/2 cup frozen pearl onions, thawed
1/2 cup cooked mushrooms
3 grinds freshly ground black pepper
1 teaspoon brown sugar, optional

Steps:

  • Preheat the oven to 300 F.
  • Salt the short ribs liberally on all sides. Coat the bottom of a medium-sized ovenproof Dutch oven with oil and heat over medium-high heat. When the oil shimmers, add the ribs in a single layer without crowding. Brown on all sides (as best you can). Remove and set aside.
  • Add the onion and diced carrot (reserve the other carrot) to the pan and cook, stirring, until the onion pieces separate and the vegetables begin to soften. Add the garlic and cook for another minute.
  • Stir in the tomato paste and cook for a few minutes, until the paste begins to brown slightly. Add the wine and stir, scraping the bottom of the pan to dissolve the browned fond. Bring to a boil and cook for a minute or so, then add the beef stock and bay leaf. Add the ribs; the meat should be mostly but not completely submerged. If the liquid level doesn't come about two-thirds of the way up the ribs, add more beef stock.
  • Cover the dutch oven and place in the oven. Cook for about 90 minutes, or until the meat is tender and is pulling away from the bones (depending on the size of the ribs and your oven, this can take longer. Be patient.) If some or all of the meat falls off the bones completely, don't worry.
  • When the ribs are is done, remove from the sauce and keep them warm in a warming drawer or low oven. Strain the sauce mixture through a coarse strainer into a fat separator and discard the solids. When the fat has separated, pour the sauce back into the pan. If you don't have a fat separator, remove the meat, strain the sauce and let it sauce cool until any fat has risen to the top. Remove as much fat as possible with a spoon or use paper towels to blot it off, then return the sauce to the pan. Note: If you like, you can make the dish to this point and refrigerate overnight before finishing. Don't worry about removing the fat from the sauce; just refrigerate the sauce and meat separately and remove the layer of fat from the sauce before continuing.
  • Over medium-high heat, bring the sauce to a boil. Reduce the heat, keeping the sauce barely boiling. Add the sliced carrot and pearl onions and cook about 6 minutes or until carrots are just tender. If necessary, continue to boil the sauce until it thickens to the consistency of gravy. Add a few grinds of black pepper, and if the sauce is too acidic the brown sugar. Turn the heat down, so the sauce is barely simmering. (*If you've refrigerated the meat and sauce overnight, add the ribs back to the sauce at this point and heat for 7 to 8 minutes before continuing with the final step.)
  • About 5 minutes before serving, add the ribs and mushrooms to the sauce to heat through. Serve over mashed potatoes, grits or noodles.

These Smoked Beef Short Ribs braised in Red Wine might be my favourite smoker recipe to date! The boneless short ribs are smoked for about 7 hours. They start out uncovered are braised in a decadent beef broth and red wine reduction

1/2 cup brown sugar
1 tbsp granulated garlic
1 tbsp black pepper
1 tsbp salt
1 tsp cumin
1 tbsp olive oil
1 medium onion
1/2 cup red wine
1/2 cup beef broth
1 tbsp brown sugar

Steps:

  • Run smoker on smoke setting for 15 minutes before turning to 225 degrees.
  • Meanwhile, prepare room temperature boneless beef short ribs.
  • Slather 1 tbsp of Worcestershire sauce over ribs to act as a glue for the rub.
  • Mix rub ingredients and sprinkle to cover evenly over all sides of ribs.
  • Place ribs directly on smoker for about 3 hours.
  • Remove ribs from smoker, add to smoker-safe pan, and cover in wine mixture for braining (recipe below).
  • Cover pan with heavy duty aluminum foil and return to smoker for another 2-3 hours, or until internal temperature of 204 degrees is reached.
  • Allow to rest for 20-30 minutes or more before serving.
  • Sauté onions in 1 tbsp of olive oil until soft and fragrant.
  • Add red wine, beef broth, and brown sugar.
  • Allow to simmer for 15-20 minutes until mixture is slightly reduced.
  • Pour over ribs half way through smoking.
