1 can (10 3/4 oz) condensed 98% fat-free cream of mushroom soup with 30% less sodium
1/4 cup milk
2 tablespoons dried minced onion
1 1/2 cups Original Bisquick™ mix
3/4 cup milk
1 egg

Steps:

  • Heat oven to 400°F. Reserve 1/2 cup of the wild rice in medium bowl. In ungreased 2-quart casserole, stir remaining wild rice and remaining filling ingredients until mixed.
  • Into reserved 1/2 cup wild rice, stir all topping ingredients with fork just until blended. Pour over turkey mixture.
  • Bake uncovered 25 to 35 minutes or until crust is golden brown.

2 tablespoons extra virgin olive oil
3 tablespoons salted butter
2 small shallots, chopped
2 tablespoons fresh thyme leaves
1/3 cup all-purpose flour
4 cups low sodium chicken broth
1 cup dry white wine, such as Sauvignon Blanc or Pinot Grigio
kosher salt and black pepper
1 parmesan rind
6 carrots, chopped
1 cup roughly chopped kale or spinach
1 cup cooked wild rice
1-2 cups cooked shredded turkey or chicken
zest of 1 lemon
2 pie crust rounds
1 egg, beaten

Steps:

  • 1. Preheat oven to 375 degrees F.2. Melt the butter with the olive oil in a large skillet over medium heat. Add the shallot, and thyme and cook, stirring often, until shallot is fragrant and golden, about 4 minutes. Add the flour and cook 1-2 minutes, until golden.3. Gradually whisk in the broth and wine, and season with salt and pepper. Add the parmesan rind. Bring to a boil, then reduce the heat and simmer, whisking occasionally, until mixture thickens slightly, about 10 minutes. Stir in the carrots and kale, and cook until just tender, about 5 minutes.4. Remove from the heat and add the turkey, wild rice, and lemon zest, season with salt, and pepper. Remove the parmesan rind and discard.5. Transfer mixture to a shallow 2-qt. baking dish or to 6 (8 ounce) ramekins. Alternately, if using a cast iron skillet, you can bake the pie in the skillet.6. Gently roll out the pie crust on a lightly floured surface to just the size of your baking dish. If using ramekins, cut crust into smaller circles to fit. Place over the baking dish. Brush with beaten egg, and cut 2 or 3 slits into the pastry with a sharp knife.7. Place the pies on a baking sheet. Transfer to the oven and bake until the crust is golden brown, 30-40 minutes. Serve with fresh thyme.

1 recipe pastry for a (10 inch) double crust pie
4 tablespoons butter
1 small onion, minced
2 stalks celery, chopped
2 carrots, diced
3 tablespoons dried parsley

3 potatoes, peeled and cubed

2 frozen deep dish pie shell, thawed (or homemade pastry for a double crust pie, or 1 box Pillsbury refrigerated pie crusts)

2 cups water
6 tablespoons butter
¼ cup finely chopped onion

½ teaspoon kosher salt, or to taste
½ teaspoon ground black pepper, or to taste

Steps:

  • Bring the wild rice and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender but not mushy, 40 to 45 minutes. Drain off any excess liquid, fluff the rice with a fork, and cook uncovered 5 minutes more. Set the cooked rice aside.
  • Melt the butter in a soup pot over medium heat. Cook and stir the onion and celery until the onion is translucent, about 5 minutes. Stir in the flour, and cook until it turns a pale yellowish-brown color, 3 to 5 minutes. Gradually whisk in the turkey stock until no lumps of flour remain. Stir in the carrot. I had some left over "Wild Rice with Cranberries and Caramelized Onions" (this can be found on food.com as well), and some leftover turkey in the freezer, as well as store bought pie crust. I decided to play with my food, and make something new for dinner. It turned out amazing. I will now make extra rice just so I can makes this!

2 (10 1/2 ounce) cans 98% fat-free cream of chicken soup
2 cups leftover cooked turkey, cut into chunks
2 -3 cups cooked wild rice, with cranberries and caramelized onions
1 -2 prepared pie crust

Steps:

  • Combine the soup, turkey, and rice in a large bowl.
  • If you want a bottom crust, place the crust in a pie dish, i used a deep dish pie plate.
  • Pour the mixture in to the pie shell, and top with the top crust. Make sure to cut slits for the steam to escape.
  • Bake at 350 degrees for 30-45 minutes, or until crust is golden and the filling is hot.
  • This would also be great with other vegetables added in, I just used the leftovers that I had.
  • Please note: all the measurements are approximate. I didn't think to actually measure them, and just used all the leftovers I had. Adjust as needed!

Steps:

  • Cook bacon in 10 inch skillet over medium heat.
  • Once bacon is browned, add onion, carrot and celery.
  • Cook an additional minutes; drain off excess fat.
  • In a medium mixing bowl, combine one can chicken broth and soup; blend with a metal whisk.
  • Once blended, add additional can of chicken broth and spices.
  • Pour sauce into crock pot.
  • Add rice and turkey; blend well.
  • Cook on High for 30 minutes and then reduce heat to Low.
  • Cook for 6 to 7 hours or until rice is tender and liquid is absorbed.

I came up with this after Thanksgiving trying to use what I had on hand. Very simple recipe, gets those leftovers used, and can be easily modified to accommodate what you have on hand. Prep time includes preparing potatoes and dicing/shredding turkey.

  • Preheat oven to 425 degrees.
  • In a large bowl add potatoes, turkey gravy, mixed vegetables, diced turkey, salt, and pepper. Mix well.
  • In deep dish pie plate arrange the refrigerated pie crust. I find the crust works better when left in the refrigerator until ready for use.
  • Add filling to crust.
  • Bake for 10 minutes at 425 degrees.
  • Reduce heat to 350 degrees and bake for 30 minutes longer. Filling should be bubbly.
  • Serve immediately. Do not expect perfect slices, the filling will not allow it.
  • Variations:.
  • a) Heavy cream can be added to filling for a creamier gravy.
  • b) Chicken can be substituted for turkey.
  • c) Country gravy can be used instead of turkey gravy.
  • d) A 2nd pie crust can be placed over the top for a more traditional pot pie look.

2 slices bacon, cut into 1/2-inch pieces
6 ounces turkey breast tenderloins, cut into 3/4-inch pieces
1/2 cup chopped celery
1/3 cup chopped carrot
1/4 cup chopped onion
1 3/4 cups Progresso™ chicken broth (from 32-ounce carton)
1/8 teaspoon dried marjoram leaves
1/8 teaspoon pepper
1/2 cup uncooked wild rice, rinsed and drained
1/2 cup sour cream

Steps:

  • In 8-inch skillet, cook bacon over medium heat, stirring occasionally, until crisp. Stir in turkey. Cook 3 to 5 minutes, stirring occasionally, until turkey is brown. Stir in celery, carrot and onion. Cook 2 minutes, stirring occasionally; drain.
  • In 2 1/2- to 3 1/2-quart slow cooker, mix turkey mixture and remaining ingredients except sour cream.
  • Cover and cook on high heat setting 30 minutes.
  • Reduce heat to low setting. Cook 6 to 7 hours or until rice is tender and liquid is absorbed; stir in sour cream.

My dear friend Shirley shared this recipe with me several years ago. Every time I think of her, I make the soup. I sometimes add a cup of cheddar cheese at the end and melt it in for an extra measure of comfort. -Carol Brault, Woodville, Wisconsin

1/2 cup uncooked wild rice
4 cups water
1/2 cup butter, cubed
8 ounces red potatoes (about 2 medium), chopped
1 medium onion, chopped
1 celery rib, chopped
1 medium carrot, chopped
2 garlic cloves, minced
1/2 cup all-purpose flour
3 cups chicken broth
2 cups half-and-half cream
1 teaspoon salt
1/2 teaspoon dried rosemary, crushed
2 cups cubed cooked turkey or chicken

Steps:

  • In a saucepan, combine rice and water; bring to a boil over high heat. Reduce heat; simmer, covered, 30 minutes., Meanwhile, in a Dutch oven, heat butter over medium heat. Add potatoes, onion, celery and carrot; cook and stir 6-8 minutes or until almost tender. Add garlic; cook 1 minute longer., Stir in flour until blended; cook and stir 2 minutes. Gradually stir in broth and undrained rice. Bring to a boil over medium-high heat; cook and stir 1-2 minutes or until slightly thickened., Add cream, salt and rosemary; return to a boil. Simmer, uncovered, 15-20 minutes or until rice is tender, stirring occasionally. Stir in turkey; heat through.
