MINNESOTA WILD RICE SALAD



Minnesota Wild Rice Salad image

Everyone thinks this is one of my best salads because it features wild rice-a major crop in my home state of Minnesota. Cashews give a subtle nutty flavor.

Number Of Ingredients 10

6 cups water
3/4 cup uncooked wild rice
3/4 teaspoon salt, divided
2-1/2 cups cubed cooked chicken
1 can (8 ounces) pineapple chunks, drained and halved
2 cups sliced celery
1-1/2 cups seedless grapes, halved
3/4 cup mayonnaise
1/2 cup chutney
3/4 cup cashew pieces

Steps:

  • In a medium saucepan, bring water to a boil. Add rice and 1/4 teaspoon salt. Cover tightly and simmer for 50 minutes. Cool; drain if necessary. In a large bowl, combine rice, chicken, pineapple, celery, grapes, mayonnaise, chutney and remaining salt. Cover and chill until ready to serve; toss with cashews.

This is an update on an old favorite from way up North. This rich and creamy soup is extremely satisfying and completely vegetarian.

⅓ cup olive oil
¼ cup minced onion
½ cup diced celery
2 tablespoons minced garlic
1 cup all-purpose flour
6 cups vegetable broth
4 cups cooked wild rice
1 cup grated carrot
¼ cup sliced almonds
1 pinch red pepper flakes
2 cups half-and-half
salt and pepper to taste

Steps:

  • Heat oil in a large pot over medium heat. Stir in garlic, onion, and celery, and cook until the onion has softened and turned translucent, about 5 minutes. Stir in flour, and cook for 3 minutes more. Pour in the vegetable broth, then bring to a boil. Reduce heat to medium-low, and simmer for 10 minutes, stirring frequently.
  • Stir in wild rice, carrot, almonds, and red pepper flakes; return to a simmer, and cook until the carrots are tender, about 5 minutes. Stir in half and half, and cook until warmed through. Season to taste with salt and pepper before serving.

I love wild rice and this is an extremely easy way to prepare it. I don't know why this is called 'Minnesota Style' since this is the way it's done in Wisconsin as well! This goes great with roast duck, chicken and cornish hens. Adapted from 'The New York Times Cook Book'.

4 -5 cups chicken stock
1 1/2 cups wild rice, washed
1 1/2 cups finely chopped celery
3/4 cup chopped onion
1/4 lb mushroom, chopped
1 pimiento, chopped
salt & freshly ground black pepper

Steps:

  • Preheat oven to 375°F.
  • Place all ingredients except 1 cup of the stock into a 6-cup greased casserole.
  • Cover tightly and bake about 1 1/2 hours, adding more stock as necessary.

4 slices bacon, cut into 1-inch pieces
1 cup onion, chopped
1 cup celery, chopped
1/2 lb mushroom, sliced
1 (4 ounce) package wild rice, cooked according to package directions
2 cups breadcrumbs
1/2 lb breakfast sausage, cooked
1 teaspoon dried oregano
1/2 teaspoon dried sage
salt
pepper

Steps:

  • In medium-size skillet, over medium heat, sauté bacon until almost crisp.
  • Add onion, celery and mushrooms; continue cooking until vegetables are tender.
  • In large bowl combine bacon mixture, wild rice, bread crumbs, sausage, oregano and sage.
  • Season to taste with salt and pepper if desired.
  • Spoon dressing into lightly greased 2-quart casserole dish.
  • Bake, covered, at 325 degrees F 35-40 minutes.

1 1/2 cups old-fashioned oatmeal
1/2 cup dried cherries or 1/2 cup raisins
3/4 teaspoon salt
1/4 cup milk
maple sugar or maple syrup

Steps:

  • Steam the wild rice or boil it covered by 2 inches of water; it is ready when tender but pleasantly chewy, with many burst kernels, after about 45 minutes; drain rice.
  • Combine the oats with the dried cherries, salt, and 3 cups water in a saucepan; cook over medium heat for about 5 minutes, until soft and thick.
  • Stir in the wild rice and milk.
  • Serve steaming hot in large bowls, topped lightly with sugar or syrup.

I live on a lake where the Native Americans used to harvest the rice. This recipe is excellent as a side dish during the holidays and makes a wonderful stuffing for turkey, chicken or cornish game hens. Also good with wild game.

1 lb wild rice, cooked according to packaging
1 cup cooked white rice (cooked separately from wild rice)
1 lb bacon
1 medium onion, chopped fine
1/2 lb fresh mushrooms, sliced thin
1 stalk celery, sliced
1 medium carrot, peeled and diced small
1 tablespoon chicken bouillon concentrate or 2 -3 chicken bouillon cubes
1/4 cup butter, melted (optional)
salt and pepper

Steps:

  • (Properly cooked wild rice should be split and soft.).
  • Fry all the bacon until very crisp. Drain and save some of the fat. Crumble the bacon into little pieces.
  • In some of the reserved bacon fat sauté the vegetables until soft.
  • To the sauteed vegetables, add the chicken bouillon and mix. Then add all the other ingredients. Combine and mix.
  • If the mixture seems dry, add the melted butter.
  • Add salt and pepper to taste (remember, the bacon is salty).
  • Place mixture into a glass casserole dish. Bake for 30 to 45 minutes or until warmed through.
