2 (14.5 ounce) cans chicken broth
1 cup uncooked wild rice
½ cup water chestnuts, sliced
¼ cup butter
1 teaspoon salt
½ pound fresh mushrooms, sliced
½ cup onion, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring chicken broth to a boil in a medium saucepan.
  • In a 1 1/2 quart baking dish, mix chicken broth, uncooked wild rice, water chestnuts, 2 tablespoons butter and salt.
  • Cover, and bake in the preheated oven 30 minutes.
  • While rice mixture is baking, melt remaining butter in a medium skillet over medium heat. Place mushrooms and onion in skillet, and slowly cook and stir until tender. Stir mushrooms and onion into the wild rice mixture, cover, and continue baking 30 minutes, or until liquid has been absorbed.

1 Tbsp avocado oil
1/2 medium red onion, chopped
1 lb grass-fed ground beef
4 cloves garlic, minced
1 small red bell pepper, cored and chopped
1 tsp sea salt, to taste
2 tsp dried oregano
1/2 tsp ground paprika
1/4 tsp nutmeg
2/3 cup wild rice
1 1/2 cups beef broth, or chicken broth
1 small bunch rainbow chard, chopped

Steps:

  • Heat the avocado oil to medium-high in a cast iron skillet. Add the onion and saute, stirring occasionally until softened, about 5 minutes.
  • Move onions off to the side and add the hunk of ground beef. Sear the beef for 2 to 3 minutes per side before breaking it up into smaller pieces with a spatula.
  • Add the remaining ingredients except for the rainbow chard and bring to a full boil. Reduce the heat, cover the skillet, and cook at a gentle simmer for 40 minutes, or until much of the liquid has absorbed.
  • Add the chopped rainbow chard, replace the cover and cook until chard has wilted, about 3 minutes. Stir well and serve!

Steps:

  • Brown hamburger, onion, celery and butter. Drain off fat.

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray.
  • In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.

6 oz box long grain and wild rice
1 1/2 lbs lean ground beef
8 oz button mushrooms (sliced, or cremini mushrooms)
1/2 yellow onion (diced)
1 clove garlic (minced)
1 Tbsp all-purpose flour
1 cup beef broth (or chicken broth)
1/4 tsp ground thyme
1/2 tsp paprika
1/2 tsp dried oregano
1 cup milk
1 cup Parmesan cheese (grated)
1 cup Italian blend shredded cheese

Steps:

  • Preheat oven to 350 degrees then coat 9" x 13" casserole dish with non-stick spray. Prepare long grain and wild rice according to box directions then fluff it with a fork and set aside.
  • Place large skillet over medium-high heat then add ground beef. Cook 5-7 minutes or until no pink remains, breaking meat into small pieces as it cooks.
  • Add mushrooms, onion and garlic then cook 4-5 minutes until the onion becomes translucent and mushrooms soften.
  • Drain excess grease from skillet, return to stove then reduce heat to medium. Sprinkle flour over meat mixture then mix until flour has dissolved completely. Cook 2 minutes, stirring frequently then add beef broth. Stir to combine, scraping up any brown bits stuck to the bottom of the pan.
  • Bring liquid to boil then add thyme, paprika and oregano. Reduce heat to medium-low then simmer for about 5 minutes. Stir in milk, return to boil then reduce heat once again and simmer 5-6 minutes or until the sauce thickens slightly.
  • Add Parmesan cheese and prepared rice blend to the beef. Stir to combine then adjust seasoning with salt and pepper if necessary. Transfer mixture to prepared casserole dish then top with Italian cheese blend.
  • Bake uncovered 20-25 minutes or until the center is hot and the sides are nice and bubbly. Let casserole cool for 10 minutes before serving.

¾ cup uncooked wild rice
1 ¼ cups uncooked brown rice
2 bay leaves
½ cup butter
1 medium onion, chopped

1 (4 ounce) can water chestnuts, drained and chopped
2 teaspoons soy sauce
1 teaspoon curry powder
2 cups shredded Cheddar cheese

Steps:

  • In a medium pot, bring the chicken broth to a boil, and mix in the wild rice, brown rice, and bay leaves. Reduce heat to low, cover, and simmer 45 minutes, until most of the broth has been absorbed.
  • In a skillet, melt the butter, and saute onion until tender. Stir in the ground beef, and cook until evenly brown. Mix in the mushrooms, water chestnuts, soy sauce, and curry powder, and continue to cook and stir until heated through.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the beef mixture into the rice mixture, and remove the bay leaf. Transfer to a 9x13 inch baking dish. Top with Cheddar cheese.

I made this casserole for the holidays when my girls were young and, loved it. I have cooked this recipe in the microwave also, and comes out great. Just adjust power levels and cook time.

1 c wild rice, uncooked
2 lb ground beef
1 c chopped celery
1 c chopped onion
1 pkg lipton onion soup mix
2 can(s) chicken rice soup
1 can(s) cream of mushroom soup
1 Tbsp worcestershire sauce
2 Tbsp soy sauce

Steps:

  • 1. Wash and cook wild rice on simmer about 45 minutes.
  • 2. Pre heat oven to 350 degrees
  • 3. Brown hamburger meat with chopped onion. When no longer pink drain off liquid.
  • 4. Add remaining ingredients along with cooked Wild Rice, to cooked ground meat, stir well.
  • 5. Spray casserole dish with cooking spray. Add ground meat and rice mixture.
  • 6. Cover and bake 2 hours at 350 degrees.
  • 7. The above steps are the original way of making this recipe, but I have tweeked it for the microwave which makes it quicker to prepare.
  • 8. Follow first 5 steps. Poor casserole into prepared dish and cover, place in Microwave cook on high for 15 minutes.
  • 9. Reduce Microwave to 50 percent for 30 minutes.
  • 10. After cook time is complete, allow to sit in dish for a few minutes to sit, and cool.

1 1/2 pounds ground beef or lean ground turkey
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons butter
1 medium yellow onion (diced)
2 cloves garlic (finely minced)
8 ounces white button mushrooms (sliced)
1/4 cup flour
1 1/2 cups chicken (beef or vegetable broth)
1 1/2 cups milk
1 teaspoon seasoning salt
1/4 teaspoon pepper
2 teaspoons dried parsley
1/2 teaspoon dried thyme
1/2 teaspoon paprika
1 bay leaf
1/2 cup sliced almonds

Steps:

  • In a small bowl, cover the wild rice with cold water and let it soak for 15 minutes while you prepare the rest of the dish.
  • Preheat the oven to 350 degrees.
  • In a large non-stick skillet (12-inch) over medium heat, brown the ground beef with the salt and pepper until no longer pink. Drain the grease from the meat. Transfer the meat to a paper-towel lined plate and wipe out the skillet with a paper towel. Return the skillet to the stovetop and melt the butter over medium heat. Add the onion, garlic and mushrooms. Cook, until the onions are translucent and the most of the liquid has evaporated from the mushrooms, about 5-7 minutes. Sprinkle the flour over the vegetables and stir to combine. Continue stirring and cook the mixture for about 1 minute over medium heat until it is cooked and golden.
  • Slowly pour in the broth and milk and whisk to incorporate. Add the seasoning salt, pepper, parsley, thyme and paprika and bay leaf. Stir to combine.
  • Drain the wild rice. Stir it in to the sauce with the browned hamburger. Transfer the mixture to a lightly greased 9X13-inch baking dish.
  • Cover the dish tightly with foil and bake for 1 1/2 hours. Remove the foil, sprinkle with the almonds and bake for another 10-15 minutes until the almonds are golden and toasted and the rice is tender. Serve immediately.

1 can cream of chicken soup
fresh mushrooms
1/2 cup slivered almonds
1/2 cup butter
1/2 cup water
2 cups herb-seasoned stuffing cubes

Steps:

  • Cook ground beef and drain.
  • Add onions, rice and 1 cup water, stir.
  • Cook in microwave for 3 minutes in 2-quart glass bowl.
  • Add soup and mushrooms.
  • In another bowl, heat butter with the 1/2 cup of water for 1 minute on high.
  • Stir in stuffing cubes, blend until moist.
  • Spoon stuffing mixture over meat.
  • Top with almonds.
  • Cook on high 12-14 minutes and then let stand and set for 10 minutes before serving.
  • Enjoy!

1 pound lean ground beef
1 onion (diced)
1 can mushrooms (sliced, drained)
1 clove garlic (minced)
½ teaspoon oregano
10 ounces spinach (chopped, frozen and squeezed dry)
1 cup instant rice
1 ¼ cup water
10 ½ ounces cream of celery soup (condensed)
⅓ cup sour cream
salt & pepper to taste
1 cup mozzarella cheese (shredded)
½ cup frozen veggies

Steps:

  • Preheat oven to 350°F.
  • Brown beef, onion and garlic until no pink remains. Drain any fat.
  • Combine beef mixture with all remaining ingredients except cheese.
  • Spread mixture into a 9x13 pan and bake covered for 40-45 minutes or until rice is tender.
  • Add cheese, broil for 3 mins or until golden.

1 cup wild rice
1 can cream of mushroom soup
1 can cream of chicken soup
1 can sliced mushrooms (drained)
2 beef bouillon cubes
1/4 teaspoon celery salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon onion salt
1/4 teaspoon paprika
3/4 cup Chopped Celery
6 tablespoons chopped onion
2 tablespoons butter
1 1/2 pounds Ground Beef
1/2 cup slivered almonds

Steps:

  • Pour 4 cups boiling water over uncooked wild rice and let stand 15 minutes. Drain rice and add mushroom soup, cream of chicken soup, mushrooms, beef bouillon cubes dissolved in one cup boiling water, celery salt, garlic powder, pepper, onion salt and paprika. Sauté chopped celery and onion in 2 T butter and add to the above mixture. Brown ground beef. Drain and add to the rest of the ingredients. Put in casserole dish and sprinkle with slivered almonds; refrigerate until time to bake. Bake covered for 1 1/2 hours at 350 degrees F.

2 soup cans water

Steps:

  • In a skillet, brown ground beef with onion until the beef is browned and the onion is tender; drain. Place in a 3-qt. casserole. Add all remaining ingredients and mix well. Cover and bake at 375° for 1 hour and 20 minutes, stirring often.
