WILD MUSHROOM PIEROGIES

Wild Mushroom Pierogies image

Categories     Mushroom     Onion     Vegetable     Brunch     Dinner     Lunch     Fall     Winter     Boil     Gourmet     Vegetarian     Pescatarian     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes 6 (main course) servings

Number Of Ingredients 15

For filling
1 cup boiling water
2/3 oz dried porcini mushrooms
1 medium onion, quartered
2 garlic cloves, crushed
6 oz cremini mushrooms, quartered
1 1/2 tablespoons unsalted butter
1 tablespoon finely chopped fresh flat-leaf parsley
Pierogi and vareniki dough
For onion topping
1 lb onions, chopped
1/2 stick (1/4 cup) unsalted butter
Accompaniment: sour cream
Special Equipment
a 2 1/2-inch round cookie cutter

Steps:

  • Make filling:
  • Pour boiling water over porcini in a small bowl and soak until softened,10 to 20 minutes. Lift porcini out of water, squeezing excess liquid back into bowl, and rinse well to remove any grit. Pour soaking liquid through a paper-towel-lined sieve into a bowl and reserve.
  • Finely chop onion and garlic in a food processor, then add cremini and porcini and pulse until very finely chopped.
  • Heat butter in a skillet over moderate heat until foam subsides, then cook mushroom mixture, stirring frequently, until mushrooms are dry and 1 shade darker, about 8 minutes. Add reserved soaking liquid and simmer, stirring frequently, until mixture is thick, dry, and beginning to brown, about 15 minutes (there will be about 1 cup filling). Stir in parsley and salt and pepper to taste. Cool completely.
  • Roll out dough and fill pierogies:
  • Halve dough and roll out 1 piece on a lightly floured surface into a 15-inch round, keeping remaining dough wrapped. Cut out rounds (about 24) with floured cutter. Put 1 teaspoon filling in center of each round. Working with 1 round at a time, moisten edges with water and fold in half to form a half-moon, pinching edges together to seal. Transfer pierogies as assembled to a flour-dusted kitchen towel. Repeat with remaining rounds, then make more pierogies with remaining dough and filling.
  • Cook onions and pierogies:
  • Cook onions in butter in a large heavy skillet over moderately low heat, stirring frequently, until golden brown, about 30 minutes. Season with salt and pepper and keep warm.
  • Cook pierogies in a large pot of lightly salted boiling water until tender, 12 to 15 minutes. Transfer with a slotted spoon to skillet with onions. Toss gently to coat and serve immediately.

WARM WILD MUSHROOMS

Warm Wild Mushrooms image

Provided by Geoffrey Zakarian

Categories     side-dish

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 9

2 tablespoons extra-virgin olive oil, plus more as necessary
2 pounds mixed wild mushrooms, such as any combination of cremini, shiitake, chanterelle, oyster, and porcini, thickly sliced
1 medium shallot, finely chopped
1 tablespoon chopped fresh tarragon
2 tablespoons red wine vinegar
2 tablespoons chopped fresh Italian parsley
Kosher salt
3 tablespoons unsalted butter, cut into pieces
12 slices toasted baguette

Steps:

  • Preheat the broiler.
  • In a large skillet over medium-high heat, add the oil, and when it is hot, add enough mushrooms just to cover the bottom of the pan (ultimately, you'll probably cook the mushrooms in 2 batches). Cook the mushrooms without stirring until browned on 1 side and then turn the mushrooms. Continue cooking, stirring occasionally, until the mushrooms are well browned on both sides, about 5 minutes. Remove to a plate and repeat with the remaining mushrooms, adding a little more oil to the pan if necessary.
  • Scrape the mushrooms back into the pan. Over medium heat, add the shallot and saute until tender, about 5 minutes.
  • Meanwhile, put the baguette slices on a broiler pan, brush both sides with some olive oil and season with salt and pepper. Broil until toasted, 2 to 3 minutes.
  • Once the shallot is tender, add the tarragon and vinegar and cook until the mushrooms absorb the vinegar. Sprinkle with the parsley and season with salt. Add the butter pieces and swirl the pan until the butter melts and forms a sauce. Serve immediately over the baguette slices.

WILD MUSHROOM SOUP WITH HORSERADISH CREAM

Wild Mushroom Soup with Horseradish Cream image

Provided by Ralph Potter

Categories     Soup/Stew     Dairy     Mushroom     Easter     Horseradish     Fall     Spring     Sour Cream

Yield makes 4-6 servings

Number Of Ingredients 13

1 onion, chopped
2 stalks celery, chopped
1 leek, chopped
1/2 clove garlic, chopped
7oz. unsalted butter
1 lb. morels, sliced
6 cups chicken stock
10 oz. potatoes, peeled
2 tablespoons freshly grated horseradish
4 tablespoons sour cream
salt and freshly ground white pepper
5 oz. porcini mushrooms
1 tablespoon chopped parsley

Steps:

  • In a frying pan or skillet, sweat the onion, celery, and leek in some of the butter over low heat until soft. Add the morels to the pan. Continue to cook over low heat for 5-6 minutes. Add the chicken stock and potatoes to the saucepan and bring to a boil. Simmer for 45 minutes. Puree the soup in a food processor or blender. Don't be tempted to thin the liquid down too much, as the finished soup should be fairly thick. Keep hot.
  • Make the horseradish cream by mixing the horseradish with the sour cream and some pepper.
  • Melt a little butter in a frying pan and quickly fry the porcini mushrooms. Add the parsley, toss together and then strain through a fine-mesh sieve to drain off the butter.
  • To serve, adjust the soup's seasoning with salt and pepper and serve in deep bowls with some of the sauteed porcini mushrooms and a dollop of horseradish cream in the middle.

Provided by Lavender Lynn

Categories     Russian

Time 15m

Yield 5 serving(s)

Number Of Ingredients 6

1 lb mushroom, washed and dried (baby bella&rsquo,s, cremini or button mushrooms)
2 small onion
3 tablespoons olive oil
3 tablespoons sour cream
salt and pepper, to taste
chopped green onion, optional for garnish

Steps:

  • Finely chop your onions. Slice mushrooms into 1/4″ thick slices.
  • In a medium, non-stick pan, saute onions in 1-2 tbsp olive oil for a few minutes or until golden.
  • In a separate, large pan, sauté sliced mushrooms in 1-2 tbsp olive oil until soft.If mushrooms release a lot of juice, drain excess juice; leaving some juices behind. Baby Bella mushrooms don't seem to get as juicy as buttons or cremini so we didn't have to drain.
  • Combine mushrooms and onions. Add in 3 tsp sour cream and salt and pepper to taste.
