BASIC CHICKEN WHITE SAUCE

This is less expensive and healthier than using cream of chicken and other cream soups as the base for certain recipes. Also is a good base for gravies.

3 tablespoons butter or 3 tablespoons margarine
4 tablespoons all-purpose flour
1 dash salt
1 cup chicken broth

Steps:

  • Heat butter in medium sauce pan over low heat. When melted,.
  • Sprinkle in the flour and salt. Whisk for 1 minute. Continue whisking and pour in chicken broth. Whisk constantly, cooking until sauce is thickened. Thin as necessary with water.

I LOVE THIS RECIPE! I used shrimp and thinly sliced (left over) roasted zucchini to jazz up my sauce tonight and it turned out yummier than ever before! Add to any cooked pasta to make an all-in-one meal (just remember to pre- cook any meat or veggies) OR I like useing it as a warm appetizer to dip warmed crusty bread into when I make an italian style dinner. ALSO: I "eye ball" all my measurements so please adjust as necessary. Start with a portion of the measurement and keep adding more little by little til it "looks right" and move on :) DO NOT add salt! There is plenty of salt in the butter, chicken stalk, and cheese to meet your needs! IN FACT you may want to opt for low sodium chicken stalk and/or unsalted butter. I happen to like the salt. :)

1/2 cup salted butter
1/4 cup flour
1 1/3 cups chicken broth
1/2 cup milk
1/3 cup parmesan cheese
1/3 cup asiago cheese
1/4 cup mizithra cheese
2 tablespoons fresh garlic
3 tablespoons fresh parsley
1/2 teaspoon white pepper

Steps:

  • In a large deep sauce or frying pan: Melt butter on MEDIUM LOW heat! Nice and slow! I tend to think mine will get done faster if I turn up the heat a bit and I ALWAYS burn my butter -- Learn from my mistakes! GO SLOW!
  • Whisk in flour til it is a smooth, slightly thickened, liquid. Typically refered to as a "rue". This may take slighly more OR LESS than 1/4 c flour. It should be completely smooth and still liquid though!
  • Add 1/4 c milk (more or less). WHISK! DON'T STOP WHISKING! Your liquid will become an almost immobile mass in your pan. YAY! :) Keep adding milk til you are comfortable with the texture.
  • Add Chicken Broth SLOWLY as with with the milk whisking the whole time. Your looking for a slightly thinner sauce than you'll want over all because the cheeses will begin to thicken it and as it cools, it gets even thicker still. Most will probably already know these steps as it's fairly common procedure but I HAD to list them for those of you who have not experienced this method. Alot of gravy's, soup's, and sauces will call for similar treatment. And who doesn't LOVE butter!? Don't answer that -- My husband doesn't! lol But he loves this recipe!
  • Now add your cheeses, garlic, parsley, and pepper. WHISK! lol
  • TASTE TEST! If your eyes don't close in a quick moment of bliss, you probably need a little more cheese or spice! :) Also: This would be when you add things like pepared diced chicken or shrimp or veggies, just continue on medium low heat til warmed through. ENJOY!

MAGIC WHITE SAUCE (AND VARIATIONS)

Sick of lumpy sauce? Hate making that flour and butter roux? Here's the answer! This is the easiest version of White Sauce ever. You won't believe it works until you try it! You will need a wire balloon whisk for this recipe and you must make sure that all ingredients are cold (or at least at room temperature) to begin with. Thanks to English food writer, Delia Smith, for discovering this all-in-one method. The following are my simplified adaptations for Basic White Sauce, along with variations for Mustard Sauce, Cheese Sauce (Mornay Sauce) and Parsley Sauce.

2 cups milk (low fat or non-fat milk works fine)
100 g butter or 100 g margarine, chopped into small pieces
1/2 cup plain flour
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)

Steps:

  • Pour milk into a saucepan.
  • Add all other ingredients.
  • Place pan over a medium heat, and, using a wire balloon whisk, whisk sauce constantly until butter melts.
  • Be sure to work the whisk into the edges of the pan to incorporate all the flour.
  • Whisk frequently until the mixture comes to a boil.
  • Reduce heat to low and simmer for about 5 minutes, stirring occasionally, until the sauce reaches the desired consistency.
  • Taste and add extra seasoning if required.
  • Variations: Mustard Sauce Make sauce as per recipe, but use 1 ½ cups milk and ½ cup chicken stock.
  • Along with the salt, add 2 teaspoons mustard powder, ¼ teaspoon onion powder and substitute a good pinch of cayenne pepper for the black pepper.
  • Stir in 1 teaspoon lemon juice when sauce is completed.
  • Cheese Sauce Make sauce as per recipe, but use 1 cup milk and 1 cup cream.
  • Along with the salt, add a good pinch of nutmeg and substitute a good pinch of cayenne pepper for black pepper.
  • At the simmering stage stir in 75g- 100g grated tasty cheese (I like a mixture of mature cheddar and parmesan).
  • Stir in 1 teaspoon lemon juice when sauce is completed.
  • Parsley Sauce Make sauce as per recipe, but use 1 ¾ cups milk and ¼ cup cream.
  • When sauce is finished, mix in 4 tablespoons finely chopped parsley and 1 teaspoon lemon juice.

This is a versatile recipe for a quick start white sauce. When making the sauce wou can add cheese or herbs of your choice. Stored in the refrigerator it will keep for months. It can also be stored in smaller containers in the freezer for longer storage.

4 cups nonfat dry milk powder
4 teaspoons salt
1 cup butter, cut up

Steps:

  • Put flour, milk, and salt in a bowl and mix well.
  • Add butter and mix well with pastry cutter (or by hand) until crumbly.
  • Put in a glass jar, cover tightly and store in refrigerator.
  • Makes 7 cups.
  • To make sauce: Combine mix (1/3 cup for thin, 1/2 cup for medium, 1 cup for thick) with 1 cup milk in a small deep heavy saucepan. Cook over medium heat, stirring frequently, for about 2 minutes. Remove from heat and use as desired.

HOWEVER, this method is so easy and so painless, and as long as you allow it to continue to cook for several mins after it thickens (to remove the raw flour taste) it tastes like you spent ages making a roux.

Steps:

  • Place all the ingredients in a saucepan.
  • Whisking continuously, bring to a boil.
  • Reduce heat but continue to whisk and cook for 2 minutes.
  • Add preferred flavouring such as cheese or parsley.
  • Season to taste and serve as desired.
