This custardy creamed corn casserole recipe is SO good you'll want to scrape the dish clean to get every last bit of caramelized goodness... My favorite of all the corn casserole recipes I've tried, just like my grandma made it!

1/2 cup unsalted butter
1/4 cup all purpose flour
1/4 cup granulated sugar
2 eggs, well beaten
1 cup whole milk
1 (15.25-oz.) can whole kernel sweet corn, drained
1 (14.75-oz.) can creamed-style sweet corn
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees.
  • In a sauce pan, heat the butter slowly over medium-low heat, swirling the pan until it's just melted. Set it aside while you measure out the rest of the ingredients.
  • Whisk the flour into the melted and cooled butter until well incorporated. Then whisk in the sugar, eggs and milk.
  • Stir the creamed corn into the butter mixture, along with the drained whole kernel corn. Season with salt and pepper.
  • Pour into a shallow 8x8" baking dish.
  • Bake uncovered at 350 degrees for approximately 1 hour and 15 minutes, until the center is set and the corn casserole is brown and caramelized on top. Let stand for 5 minutes, serve warm.

Found this recipe about 15 years ago and made it for Thanksgiving. My children expect it now for every holiday. The children that live away have now incorporated this dish into their inlaws holiday meals & it is now a staple for them It is really sinful but don't think I have ever tasted better.

1/2 cup butter
8 ounces cream cheese, softened
1/4 cup sugar
breadcrumbs

Steps:

  • Melt butter; add sugar & stir to dissolve. Add cream cheese, melt & whisk until very creamy. Add corn, stirring to coat well.
  • Put in greased casserole & top with bread crumbs, if desired.
  • Bake at 350 until bread crumbs are browned or until hot & bubbly for about 30 - 40 minutes.

2 teaspoons baking soda

There are several recipes out there for this casserole, but they are all different. This one has no eggs (which seems to be hard to find) and uses only 5 ingredients. It's so easy to make but always a crowd pleaser - try it at a BBQ, alongside chili, or as a Holiday side-dish... ** NOTE: The consistency is supposed to be like a spoonbread, it is a casserole, not like cornbread you would cut into pieces -this is like Chi Chi's corn casserole they served on the side. PS- I make a double batch & bake in a 9x13x2 casserole dish. Lastly, if you add about 3/4 cup of sugar to this, you could serve it as a dessert :-)
