WHOLEMEAL CHEESE & MARMITE SCONES

Wholemeal cheese & Marmite scones image

Delicious warm from the oven, these scones are good way to introduce wholemeal flour into your baking

Provided by Lesley Waters

Categories     Afternoon tea, Buffet, Side dish, Snack, Supper, Treat

Time 35m

Number Of Ingredients 9

140g self-raising flour
140g wholemeal flour
1 tsp baking powder
50g cold butter cut into small cubes
85g mature cheddar grated
1 egg
1 tbsp Marmite
2 tbsp Greek or natural yogurt
3 tbsp milk plus extra to glaze

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Mix the flours and baking powder in a mixing bowl with a pinch of salt, if you like. Add the butter and rub with your fingertips until mixture resembles fine breadcrumbs (or use a food processor). Stir in ½ of the cheese and make a well in the centre.
  • Whisk the remaining ingredients together and pour into the well. With a cutlery knife, bring the mixture together to make a soft, but not sticky dough. Add a little more milk if the dough is too dry.
  • Turn onto a floured surface, then roll out to about 2cm thick. Stamp out 4 scones using a round cutter, then gather the trimmings and repeat until all the dough has been used. Put on a baking sheet, brush with milk and scatter over remaining cheese. Bake for 10-12 mins until golden. Cool on a wire rack.

WHOLEMEAL FRUIT YOGHURT SCONES

Wholemeal Fruit Yoghurt Scones image

This is an Edmonds Cookbook recipe (New Zealand woman's cooking bible) that I have modified slightly. You can use any type of fruit yoghurt, although stuff with a lot of pips wouldn't be good. Please note that these will not rise as high as regular scones (probably due to the yoghurt & wholemeal flour).

Provided by LilKiwiChicken

Categories     Scones

Time 20m

Yield 12 serving(s)

Number Of Ingredients 6

2 cups whole wheat flour
1 teaspoon baking soda
3 teaspoons baking powder
50 g butter
1/2 cup fruit yogurt
milk

Steps:

  • Turn the oven on to 220 degrees Celsius.
  • Line an oven tray with baking paper (or lightly dust with flour).
  • Put the flour, baking soda & baking powder into a mixing bowl.
  • Rub the butter through until the mixture resembles breadcrumbs (I use my cake mixer on a low speed cos I am lazy).
  • Gently stir through the yoghurt until the mixture is combined. If the dough seems too firm, add milk 1 tablespoon at a time until the dough is soft.
  • Lightly press the scone dough out into a square (approx 1 inch high), then cut into 12 equal pieces.
  • Separate & put onto prepared oven tray. Bake in the middle of the oven at 220 degrees C for 10 mins or until golden.

  • Preheat oven to 375 degrees, line a baking sheet with a spill mat (I love these ones affordable spill mats from Amazon!) or parchment paper and set aside.
  • In a medium to large sized bowl combine flour, white granulated sugar, baking powder, baking soda, and salt. Whisk it all together then set aside.
  • In a large bowl with electric beaters or using a stand mixer, combine 1 egg, entire container of yogurt, and grated butter. Mix lightly until combined.
  • Add your flour mixture to the yogurt mixture and start mixing on low, then slowly increase to medium. The dough will begin to thicken and clump together. You want to keep mixing until it forms a single ball and is no longer crumbly. This may take a few minutes! It will get there.

  • Preheat the oven to 350°F. Line a large rimmed baking sheet with parchment paper. In a medium bowl, combine the flour, baking powder, salt, and cinnamon. Whisk to combine.
  • In a 2-cup liquid measuring cup or small bowl, combine the coconut milk, honey, and vanilla. Whisk to blend. Pour the wet ingredients into the flour mixture and mix with a big spoon until you have a cohesive dough. If the dough is sticky and unmanageable, add another tablespoon of flour and stir just until incorporated. Repeat if necessary.
  • Lightly flour your work surface and turn the dough over onto it. Knead the dough a few times, just enough to bring the dough together. Then press the dough into an even round about 1 inch thick all around.
  • Use a sharp chef’s knife to cut the round into 8 even wedges, as you would a pizza. Separate the wedges and place each one on the prepared baking sheet several inches from the next. Brush the tops of the scones liberally with coconut milk and sprinkle them with the turbinado sugar.

  • Arrange oven rack in the center position and preheat oven to 375°F. Line a large baking sheet with parchment paper and set aside.
  • Measure the flour, brown sugar, baking powder, and salt into the bowl of a large food processor; process with five (1-second) pulses until blended. Add the cold butter to the food processor; process with ten (1-second) pulses until the butter is reduced to pea-sized pieces. Add yogurt, egg, and vanilla, and pulse until a ball of dough just begins to form, which should take about about five (1-second) pulses.
  • Transfer the dough to a floured surface. Sprinkle the dough with blueberries and gently press and fold them into the dough, turning the dough over and repeating on the other side, if necessary. Taking care not to overwork the dough, quickly form it into a 1-inch thick circle. Use a scraper, sharp knife, or large pizza cutter to cut it into 8 triangular wedges. Transfer the wedges to the prepared baking sheet, spacing them at least 1 inch apart.
  • Brush the scones with melted butter and sprinkle with coarse sugar. Bake for 18 to 20 minutes or until a toothpick inserted in center comes out clean and the tops are light golden brown. After a couple of minutes, transfer to a rack. Allow to cool for at least 10 minutes before serving, or cool completely before storing in an airtight container.
