Whole Grain Pancakes with Blackberries image

With all due respect to diner breakfasts and box mixes, the average pancake is about as satisfying as a bag of marshmallows. We'll take ours skillet-size, burnished from whole wheat flour and studded with cooked grains, because we want them flavorful and with a hardy texture.

3/4 cup whole wheat flour
1/2 cup all-purpose flour
2 Tbsp. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. kosher salt
1 large egg
1 1/2 cups buttermilk
2 cups mixed cooked whole grains (such as barley, farro, rye, spelt, kamut, and/or quinoa)
Melted unsalted butter (for pan)
Room-temperature butter, fresh blackberries, and pure maple syrup (for serving)

Steps:

  • Whisk whole wheat and all-purpose flours, sugar, baking powder, baking soda, and salt in a large bowl. Whisk egg and buttermilk in a medium bowl just to incorporate. Using a few swift strokes, whisk egg mixture into dry ingredients just to combine. Stir grains into batter (you can pulse the grains in a food processor first if you prefer them in smaller pieces).
  • Heat a large nonstick skillet over medium-high. Lightly brush with butter. Add half of batter to skillet, spreading into an even layer as wide as the skillet. Cook pancake until bubbles have formed and broken across the entire surface and underside is golden brown, about 5 minutes. Using 2 spatulas (or sliding onto a flat plate before inverting back into skillet), flip pancake. Continue to cook until lightly browned underneath, about 1 minute. Transfer pancake to a plate. Repeat with remaining batter.
  • Serve pancakes topped with butter, fruit, and syrup.

  • Whisk whole wheat flour, sugar, baking powder, baking soda, and salt in a bowl. Whisk buttermilk, eggs, and vegetable oil in a separate bowl; pour buttermilk mixture into dry ingredients. Stir just until combined (batter may seem a bit thick).
  • Heat a cast iron skillet over medium-low heat for 5 minutes. Pour 1/3 cup of batter onto hot skillet and use a spoon to spread the pancake a bit. Cook until browned and bubbles appear on top, 1 1/2 to 2 minutes. Flip and cook until browned and set in the middle, about 2 more minutes. Repeat with remaining batter.

  • Sift together flour and baking powder, set aside. Beat together the egg, milk, salt and artificial sweetener in a bowl. Stir in flour until just moistened, add blueberries, and stir to incorporate.

Edit: to get a little more while food, I replaced the sugar with organic pure maple syrup and now use whole milk. I also replaced 2/3 c flour with ground flax meal. Still a family favorite! I make a large batch and freeze for busy mornings - pop them in the toaster oven for a few minutes, and breakfast is portable! Our family's favorite recipe - I converted it to whole wheat a few years ago, and no one noticed! I use organic milk and organic sugar and eggs; it makes a real difference.

3 cups organic whole wheat flour (or 2 1/3 c flour and 2/3 c ground flax meal)
4 tablespoons sugar (or 4 tbs organic pure maple syrup)
3 1/2 teaspoons baking powder
2 teaspoons sea salt
6 tablespoons butter
2 1/2 cups milk
4 eggs

Steps:

  • Pre-heat electric skillet to 350.
  • Sift dry ingredients together.
  • Melt butter.
  • Beat eggs, add milk (and syrup, if using), mix well. Whisk in melted butter.
  • Stir into dry ingredients until just incorporated. Allow batter to rest for 15 minutes.
  • Pour approx 2/3 c batter per pancake onto skillet.
  • Cook approximately 4 minutes, until batter rises and small bubbles start to appear on the surface.

This is a refresh of a Wholeliving.com recipe. Martha Stewart's gang opts for low-fat buttermilk, but I never have that on hand so I trade in 2% milk or vanilla soymilk -- depending on what's in the fridge.The added wheat germ supplies some potassium and iron (it has more than any other food). I also add a teaspoon of cinnamon (because I love it) and cut the whole wheat flour with some all purpose flour so they don't taste too "nutty." To make the compote, you can use fresh or frozen blueberries -- up the lemon juice for more tartness and up the sugar for more sweetness.
