WHOLE WHEAT OATMEAL COOKIES

Whole Wheat Oatmeal Cookies image

Whole Wheat Oatmeal Cookies that taste great and are friendly to the Mediterranean diet as well as low fat diets.

Categories     Dessert

Time 26m

Number Of Ingredients 8

Oats- 1 1/2 cups.
Whole Wheat Pastry Flour- 1 cup.
Baking Soda- 1 teaspoon.
Ground Cinnamon- 1 teaspoon.
Canola Oil- 1/2 cup.
Sugar- 3/4 cup.
Egg-1.
Vanilla Extract- 1 teaspoon.

Steps:

  • Preheat your oven to 350 and prep your cookie sheets for nonstick. I like to use parchment paper.
  • In a mixing bowl, combine together the oats, flour, baking soda, and cinnamon.
  • Next, in a large mixing bowl, beat together the oil and the sugar until creamy.
  • Stir in the dry ingredients from the first bowl to the ingredients in the second bowl. I like to do this by adding half of the ingredients, stirring gently, and then add the remaining. Lastly, stir in the egg and the vanilla extract.
  • For a flatter cookie you can flatten the cookies on the baking sheet before baking. Otherwise, use a scoop or spoon and place the cookies far enough apart for spreading.
  • Bake the cookies for 14-16 minutes or until they begin to brown (longer for a more crisp cookie). Allow the cookies to cool for a few minutes before transferring to a cooling rack.

HONEY WHOLE WHEAT OATMEAL COOKIES

Honey Whole Wheat Oatmeal Cookies image

These cookies use honey instead of white granulated sugar. Also, 100% whole wheat flour used instead of all purpose flour. Tempature is lowered on purpose beacause honey burns at higher tempatures. This is suppose to be a healthier alternative to cookies made with white sugar.

WHOLE WHEAT OATMEAL COOKIES WITH EVERYTHING

Whole Wheat Oatmeal Cookies With Everything image

Based on Quaker Oats' Vanishing Oatmeal Cookies Recipe. I made them a few times, and I never thought they were quite good enough. They weren't fluffy enough and they didn't have nearly enough oatmeal! I found out one day when I ran out of white flour, that whole wheat tastes great in oatmeal cookies. I like to pulse the oats in the food processor a few times so they're extra fluffy, but instant oatmeal works very well.

WHOLE WHEAT OATMEAL COOKIES

Whole Wheat Oatmeal Cookies image

This Whole Wheat Oatmeal Cookies recipe is simple to make, made with whole wheat flour and no granulated sugar, and it's perfectly soft and chewy and delicious!

Provided by Ali

Time 40m

Number Of Ingredients 11

1 cup (2 sticks) butter, softened to room temperature
1 1/4 cups packed brown sugar
2 eggs
2 teaspoons vanilla extract, store-bought or homemade
1 1/2 cups white whole wheat flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon cornstarch
1/2 teaspoon salt
3 cups old-fashioned oats
Optional add-ins*: chocolate chips (semisweet, butterscotch, etc.), chopped nuts (walnuts, pecans, etc.), dried fruit (raisins, cranberries, chopped apricots, etc.)

Steps:

  • Preheat oven to 350°F. In the bowl of a stand mixer, use the paddle attachment to cream together the softened butter and sugar on medium-high speed until light and fluffy, about 3 minutes. Add egg and vanilla, and mix until combined, about 1 minute.
  • In a separate bowl, whisk together the flour, cinnamon, baking soda, cornstarch and salt until combined. Add in this flour mixture gradually to the butter mixture, and mix on medium-low speed until combined. Add the oats, and continue mixing on medium-low speed until combined. If you are using any add-ins (up to 2 cups), fold them in on low-speed until just combined. Do not overmix.
  • Use a heaping small cookie scoop (a little over 1 Tablespoon) or a spoon to shape the dough into balls, and place them on a parchment-covered baking sheet. Chill in the refrigerator for at least 10-20 minutes.
  • Bake for 10-12 minutes until the edges are just set and are lightly golden. Cool cookies on the baking sheet for about 5 minutes, then transfer to a wire rack to finish cooling.
  • Serve immediately or store in a sealed container for up to 1 week. You can also freeze the cookies for up to 3-4 months.

HONEY WHOLE WHEAT OATMEAL RAISIN COOKIES RECIPE

Honey Whole Wheat Oatmeal Raisin Cookies Recipe image

Give me all the Oatmeal Raisin Cookies. I love how simple and delicious they are, but these are also healthy, making them feel guilt free.

Provided by Camille Beckstrand

Categories     Dessert

Time 20m

Number Of Ingredients 14

2 cups whole wheat flour
½ teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
½ cup butter (melted)
½ cup coconut oil (melted)
2 large eggs
⅞ cup honey
1½ Tablespoons molasses
1 Tablespoon vanilla extract
3 Tablespoons milk
3 cups old fashioned oats
1 cup raisins

Steps:

  • Preheat oven to 320 degrees F. Lightly spray cookie sheet with non-stick cooking spray or use a baking liner. Set sheet aside.
  • In a large bowl, mix together flour, salt, cinnamon, baking powder, and baking soda. Add in butter, oil, eggs, honey, molasses, vanilla, and milk and stir until all combined.
  • Fold in oats and raisins.
  • Drop heaping tablespoonfuls (these cookies work best if they are a little bit bigger . . . I found that if they are smaller, they burn easily) onto prepared baking sheet.
  • Bake for 8-10 minutes or until cookies are slightly golden. Keep in mind that honey bakes faster than sugar, which is why you cook these at a lower temperature that most cookies. Be sure to not overcook them or they will be crispy (unless you like cookies that way!).

WHOLE WHEAT PEANUT BUTTER OATMEAL COOKIES

Whole Wheat Peanut Butter Oatmeal Cookies image

I love these cookies. They are crunchy and chewy and creamy and warm and good. I have been known to let the kids have them for breakfast when I want to sleep in on a Saturday morning. But that is a secret, so don't tell anyone. ;-)

Provided by Roosie

Categories     Dessert

Time 32m

Yield 2 dozen, 12 serving(s)

Number Of Ingredients 9

1/2 cup margarine, softened
1/2 cup peanut butter
3/4 cup brown sugar
1 egg
1/2 teaspoon vanilla
1/4 teaspoon salt
1/2 teaspoon baking soda
1 1/4 cups rolled oats
3/4 cup whole wheat flour

Steps:

  • In a large bow combine the softened margarine and peanut butter.
  • I measure the peanut butter by packing it tightly into a metal measuring cup.
  • Then I scrape it out with my fingers.
  • Add the sugar or Sucanat and the egg to the bowl.
  • Mix it up really good until it is smooth, fluffy and glossy.
  • I do this with a wire whisk.
  • You could use a big spoon if you prefer.
  • Add the vanilla and stir it in a little.
  • Add the salt, baking soda, oatmeal, and flour.
  • Stir it all up really well.
  • You need a spoon to stir in the dry ingredients.
  • A whisk just won't work for this part because the batter is so thick.
  • Drop the dough by spoonfuls onto an ungreased cookie sheet.
  • These cookies don't spread very well so flatten the cookies with a fork or the flat bottom of a cup which has been dipped into flour.
  • Bake at 350°F for about 12 minutes.
  • Half a cup of chocolate chips may be added to the batter if desired.

WHOLE WHEAT OATMEAL AND CHOCOLATE CHIP COOKIES

Whole Wheat Oatmeal and Chocolate Chip Cookies image

I modified this Betty Crocker recipe, and I was surprised by the rave reviews other adults gave it! My friend Darlene asked me for the recipe, so I thought I'd share with all... The whole wheat pastry flour gives it some fiber, without making it as overbearing as regular whole wheat flour.

Provided by SAHMchef

Categories     Dessert

Time 37m

Yield 36 serving(s)

Number Of Ingredients 10

3/4 cup butter (I use Crisco) or 3/4 cup shortening (I use Crisco)
1 cup brown sugar, firmly packed
1/2 cup white sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
2 large eggs (I use Ener-G egg replacer)
1 teaspoon vanilla extract
1 3/4 cups whole wheat pastry flour
2 cups rolled oats
1 cup chocolate chips (Tropical Source chocolate chips for vegans)

Steps:

  • Preheat oven to 375°.
  • Use a mixer to beat butter/shortening in a large mixing bowl; add sugars, baking powder and baking soda, and blend well.
  • Add eggs (or egg replacer) and vanilla, mixing until combined.
  • Finally, mix in the flour, and gradually add the oatmeal and lastly the chocolate chips.
  • If the mixture forms individual dry clumps, try adding a little water (I had that problem when I used egg replacer).
  • Roll dough into tablespoon-sized balls, and place about 2-inches apart on a cookie sheet (I highly recommend the insulated sheets, or use two sheets layered on top of each other with the cookies on the top sheet).
  • Bake for 10-12 minutes until the tops are brown.
  • Let sit for several minutes before removing to cool on a wire rack.
