4 pounds small red potatoes, cut into wedges
1/3 cup olive oil, divided
16 unpeeled garlic cloves
2 tablespoons minced fresh rosemary or 2 teaspoons dried rosemary, crushed
1 teaspoon salt
1/3 cup white vinegar
4 teaspoons Dijon mustard
3 teaspoons sugar
1/4 teaspoon pepper
1/3 cup chopped green onions

Steps:

  • In a large bowl, combine the potatoes, 1 tablespoon of oil, garlic, rosemary and salt. Pour into two 15x10x1-in. baking pans coated with cooking spray. Bake, uncovered, at 450° for 25-30 minutes or until potatoes are tender, stirring every 10 minutes., In a small bowl, combine the vinegar, mustard, sugar, pepper and remaining oil until smooth. Squeeze roasted garlic into vinegar mixture (discard skins). Pour over potatoes and toss to coat. Sprinkle with onions.

3 large russet potatoes, scrubbed and cut into wedges
4 tablespoons olive oil
½ cup grated Parmesan cheese
2 teaspoons Italian seasoning
2 teaspoons garlic powder
1 teaspoon paprika
salt to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place potato wedges in a large bowl. Drizzle with olive oil and toss to coat. Sprinkle potato wedges with Parmesan cheese and toss again.

This was a last-minute-what-can-I-do-with-some-potatoes recipe I threw together for a 4th of July picnic. I used Indiana Nurse's Baked Potato Wedges (#38183) as a starting point. I had no idea how they were going to turn out. However, there were no leftovers. LOL One change I'll make in the future is to add granulated garlic to the melted butter before coating the wedges. Note - "garlic granules," was inserted in place of granulated garlic/granulated garlic powder by Recipezaar in the list of ingredients. They are NOT the same thing. GRANULATED GARLIC is what to use.

Steps:

  • Preheat oven to 400 degrees.
  • Cut potatoes length-wise into wedges and place in large bowl.
  • Pour melted butter over wedges and stir to coat well.

  • Cut each potato in half, then continue to cut each half into four wedges, so you have 8 wedges total from each potato.

  • Melt butter in a medium bowl or glass measuring cup; add olive oil to melted butter and whisk in salt, Italian Seasoning, garlic powder, paprika, onion powder, and black pepper.

2 tablespoons olive oil
1 garlic clove, finely chopped
2 teaspoons salt
2 heads garlic, bulbs separated into cloves

5 tablespoons sour cream or 5 tablespoons strained plain yogurt
4 tablespoons mayonnaise

Steps:

  • MAKE THE ROASTED GARLIC DIP:
  • Preheat the oven to 400°. Place the garlic cloves in an ovenproof dish, then pour in the olive oil and toss to coat. Spread out in a single layer and roast in the preheated oven of 25 min or until tender. Remove from the oven and let stand until cool enough to handle.
  • Peel the garlic cloves, then place on a heavy cutting board and sprinkle with a little salt. Mash well with a fork until smooth. Scrape into a bowl and stir in the sour cream and mayonnaise. Steps:

  • Preheat oven to 400°F.
  • Line 2 baking pans with parchment paper; set aside.
  • Scrub potatoes and slice each in half lengthwise; slice each of those halves into 4 equal wedges. Place potatoes in a large bowl and add enough cold water to cover. (Tip: You can use cold tap water here.) Let potatoes soak for 15 minutes.
