WHOLE WHEAT MEDITERRANEAN COUSCOUS SALAD
Steps:
- Add ½ cup of water to a pot and bring it to boil. Once the water is boiling add ½ teaspoon of salt and ½ of dry couscous to the pot. Stir well, cover the pot and remove it from the stove. Let it sit covered for 5 minutes or until all the water is absorbed by the couscous. Fluff the couscous with a fork and set aside to cool.
- Chop the onion, cucumber and the tomato finely and add them to a salad bowl.
- Chop the parsley and the mint (stems removed) and add them to the same bowl.
- When the couscous is completely cooled down add it to the bowl with the vegetables and herbs and stir well.
- Season the salad with the lemon juice, lemon zest, smoked paprika, dry oregano and olive oil and stir well. Add more salt if needed.
WHOLE WHEAT M'HAMSA COUSCOUS SALAD
Couscous is a great alternative to pasta because it cooks so quickly. This recipe is made with M'hamsa couscous, a hand-rolled sun-dried couscous from Tunisia that has an especially toasty flavor. You could, however, substitute any brand. Delicata squash is wonderful because its skin is edible, but this dish would be just as terrific made with roasted butternut squash. Steps:
- Preheat oven to 425 degrees.
- With a sharp knife, cut delicata in half lengthwise. (Don't worry about peeling; the skin is edible.), scoop out the seeds, and cut each half into 1/2-inch segments, creating moon-shaped pieces that have slight bumps around the curve.
- Arrange pieces in a single layer in a metal baking pan and coat with 2 tablespoons olive oil, salt gently and place in oven; roast 10 minutes. Using a spatula, turn the squash in the pan so that the light sides are now touching the pan and the brown sides are facing up.
- Continue roasting, turning every 7 to 10 minutes until both sides of the squash pieces are golden, (about 25 to 30 minutes).
- Meanwhile, bring water or broth to a boil over high heat, add couscous, stir, cover and return to boil.
- Turn off heat and let the couscous rest for 7 to 10 minutes, then fluff with fork.
- Toss couscous with remaining olive oil, sun-dried tomatoes, scallions and parsley and mint.
- Add lemon juice and roasted squash, and toss again.
- Season to taste with salt and pepper, and top with feta.

- Bring stock to boil in covered pot. Add couscous, remove from heat and allow to sit for five minutes, until liquid has been absorbed.
- Whisk oil, vinegar, mustard and garlic in a serving bowl. Add orange zest, jalapenos, olives and capers, and mix well. Stir in the red pepper, zucchini, onion and fennel, and season with salt and pepper. Stir in the couscous.
- If not serving immediately, refrigerate without the tomatoes. No more than 30 minutes before serving, cut up the tomatoes and stir in.

WHOLE WHEAT COUSCOUS SALAD
Not only is this lightly spiced salad wholesome and utterly delicious on its own, but it also lends itself to many other serving ideas. Wrap it up in lettuce leaves or tortillas, stuff it into lettuce-lined pita bread, hollowed out tomatoes or cherry tomatoes, or mound on spears of endive. Try leftovers for lunch.

- In large heatproof bowl, combine couscous, raisins, cinnamon, allspice and turmeric .
- Pour in 2 cups (500 mL) boiling water; cover and let stand until absorbed, about 5 minutes. Fluff with fork. Let cool.
- Add chickpeas, red pepper, green onions, pistachios, vinegar, mint, salt and pepper; toss with fork to combine.

- Heat the olive oil in a sautee pan, add the couscous and cook for about 3 minutes until the couscous is golden. Add 200ml of water and stir, once the couscous has absorbed the water add another 100ml + another 100ml and cook until the couscous is soft, about 15 minutes. Once cooked leave to cool.
- Add the vegetables and herbs to a large serving bowl and mix. Mix in the couscous once it has cooled then add the feta.
- Pour the dressing over the couscous and vegetables. Gently mix everything together. Serve on it's own or with some really good crusty bread.
