1 cup whole wheat flour (120 g)
1 tbsp baking powder
1/2 tsp sea salt
1 cup unsweetened almond milk (250 ml)
2 tbsp pure maple syrup (30 ml)
1/2 tsp cinnamon, optional
1 tsp pure vanilla extract, optional

Steps:

  • Mix together the whole wheat flour, baking powder, sea salt and cinnamon (if using) in medium mixing bowl using a fork or whisk to help break up any lumps of flour and distribute the baking powder and salt.
  • Add the wet ingredients (non-dairy milk and maple syrup) and gently mix until all the flour has been mixed in. The batter will be thick and slightly lumpy.
  • Let the batter rest for at least 5 minutes while you heat a nonstick skillet or griddle over medium heat.
  • If needed, lightly oil the pan with coconut oil or olive oil or spray with a light coating of non-stick cooking spray, then scoop approximately 1/3 cup portions of the batter onto the pan.
  • Cook the pancakes until the edges look dry, firm and golden brown and bubbles are appearing, then flip and cook for another 30-90 seconds until thick, fluffy and browned on both sides.
  • Repeat with the remaining batter then serve right away with your favourite pancake toppings like fresh fruit and maple syrup.

1 cup buttermilk
1 egg
2 tbsp melted butter

Steps:

  • In a large bowl, using a whisk combine dry ingredients: whole wheat flour, baking powder, baking soda, and salt.
  • In another bowl, use a whisk to combine the wet ingredients: buttermilk, egg, and melted butter.
  • Add the wet mixture into the dry ingredients, and stir the two together until just barely mixed and leaving some lumps.
  • Preheat a nonstick griddle to 375 degrees F and grease the surface with butter.
  • Add small scoops of pancake batter (the batter will be thick) and use a cookie scoop to gently smooth the scoop into a flatter circle.
  • Cook for a few minutes, until you see little bubbles forming on the surface.
  • Flip the pancakes and cook for a couple minutes on the other side. If you peek underneath, the bottom should be golden brown.

½ tsp Double-Acting Baking Powder
2 packets Natural Sweetener
pinch of Salt
1 large Egg
1 large Egg White
½ tsp Vanilla Extract
Mini Semi-Sweet Chocolate Chips
Ground Cinnamon
½ tsp Natural Butter Flavor

Steps:

  • Spray a nonstick griddle with cooking spray and place over medium heat.
  • In a small bowl, whisk together the whole wheat pastry flour, baking powder, sweetener, and salt.
  • In a medium-sized bowl, whisk together the egg, egg white, and vanilla extract. Add the dry ingredients and fold together. Do not overmix, otherwise the pancakes will turn out tough and dry.
  • Scoop ~⅓ cup of the batter onto the griddle. Cook until bubbles appear on the surface of the pancake and the edges appear dry. Flip and cook the other side. Do this until all the batter is used up.

2 cups white whole wheat flour (I use King Arthur)
4 1/2 tsp baking powder
1/2 tsp kosher salt
2 tsp ground cinnamon
2 tsp sugar
2 large eggs
2 cups + 2 tbsp fat free milk
2 tsp vanilla extract
cooking spray

Steps:

  • Mix all dry ingredients in a bowl. Add wet ingredients to the mixing bowl and mix well with a spoon until there are no more dry spots; don't over-mix.
  • Heat a large skillet on medium heat. Lightly spray oil to coat and pour 1/4 cup of pancake batter. When the pancake starts to bubble, you may add your fruit if you wish. When the bubbles settle and the edges begin to set, flip the pancakes. Repeat with the remainder of the batter. Makes 14 pancakes.

These low fat whole wheat banana pancakes are low in calories and fat, but not in taste. If you like, you can add blueberries (I recommend wild blueberries, you can buy them frozen and put them directly into the batter frozen). I haven't tried the pancakes with both blueberries and the cocoa powder, so you may want to remove the cocoa powder from the recipe below if you add blueberries. (New addition: I tried them with double the cocoa and using frozen raspberries and they were even better. I broke the frozen raspberries up into smaller pieces after adding them to the batter.) I've actually never used sugar in this recipe--I've always used Splenda. If you prefer thicker pancakes, you can lessen or eliminate the water in the recipe completely. My kids (5 and 2) like to help with this recipe. I have them each mash one of the bananas, and then pour half of the wet ingredients into each of their bowls to mix. Then, when they're added to the dry ingredients, they each get a turn to mix them into the dry ingredients. Also note: I really like vanilla; if you don't, reduce it to 1/2 tsp. FYI--My wife and I lost 45 lbs each recently, and this is one of the recipes I made regularly during our diet.

This recipe has a bit of a convoluted history! It was originally posted by a poster who left, and then was put up for "adoption." Since I'd made it before and loved it, I took it on as my own! I did change a few things when I made it; I had some apples to use up, so I cored nd sliced them and when I poured the batter on the griddle, I arranged the apple slices decoratively on top. That way, when I flipped the pancake, the slices got cooked into the pancake. It was yummy and added even more fiber and vitamins! Anyway, here's the original poster's description: Healthy pancakes to get you going in the morning. They aren't very sweet, so add some sugar or honey if you like your pancakes sweet. I like to eat these topped with plain yogurt and a bit of syrup. Freezes well.
