1 cup whole wheat flour
1 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
¼ cup canola oil
¾ cup unsweetened soy milk

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C).
  • Stir together the whole wheat flour, all-purpose flour, baking powder, and salt. Combine the oil and soy milk in a measuring cup. Pour into the dry ingredients all at once, and stir just until the dough pulls away from the sides of the bowl. Drop by heaping spoonfuls onto a baking sheet.
  • Bake for 8 to10 minutes in the preheated oven, until the biscuits are browned on the top and bottom.

1 1/2 cups whole wheat flour
1/2 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons margarine or 2 tablespoons butter
1 cup skim milk
1/4 teaspoon basil
1/4 teaspoon cilantro
1 teaspoon dried parsley

Steps:

  • Combine flours, baking powder and salt in a bowl.
  • Cut in margarine with a pastry blender or 2 knives.
  • Add milk, mix quickly.
  • Turn out onto a floured board.
  • Knead 6 to 8 times.
  • Roll 1/4 inch thick.
  • Cut into 12, 2 inch round biscuits or into wedges or squares.
  • Place on a lightly greased baking sheet.
  • Bake in a 425°F oven 12 to 15 minutes until lightly browned.
  • For herb biscuits, add basil, thyme and parsley to dry ingredients.
  • (These make great dumplings).

Add buttermilk to dry ingredients, stirring until dry ingredients are moistened. Turn dough out onto a lightly floured surface and knead lightly 4 to 5 times. Roll or pat dough out to about 1-inch thickness. Cut with a biscuit cutter and place on an ungreased baking sheet. Bake for about 12 to 14 minutes or until brown.

1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 cup unsalted butter
1/2 cup buttermilk (cold) or 1/2 cup yogurt (cold)
1/3 cup cold milk or 1/3 cup cream
1/4 cup flour (for dusting)

Steps:

  • Preheat oven to 475 degrees and grease a loaf pan (or if doubling the recipe, a round cake pan should work).
  • Melt butter in microwave and let cool for about 5 minutes.
  • Meanwhile, mix flour, baking powder, baking soda, sugar, and salt in large bowl. Mix cold buttermilk and milk with butter, stirring until butter forms small clumps.
  • Add wet mixture to dry ingredients and stir until just incorporated. Do not overmix.
  • Pour extra flour onto a plate or shallow bowl. Rub your hands in the flour to dust them well. Spoon a lump of wet dough (around 1/4 cup) into the flour, and sprinkle some flour over it to coat well. Gently pick it up and shape it into a soft round by tossing the dough gently back and forth between your hands. Place biscuit in pan and repeat with remaining dough, ensuring biscuits touch each other. This keeps them soft and ensures they rise nicely.

2 cups whole-wheat flour
4 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons 1/2 stick cold butter
1 cup cold milk

Steps:

  • Preheat the oven to 450°F.
  • In a medium bowl, combine the flour, baking powder, and salt. Mix well with a whisk or a fork.
  • Cut the butter into little pea-size pieces and scatter them over the flour mixture.
  • Mix the flour and butter together, using the back of a fork to mash the butter pieces into the flour until the mixture resembles coarse crumbs. (You can also just forget the fork and use your fingers to mash the butter into the flour. It's okay if the outcome just looks like pea-size pieces of butter covered with flour.)
  • Add the milk and mix together thoroughly without overmixing. Knead the dough with your hands 8 to 10 times, then turn the dough out onto a floured counter or cutting board.
  • Pat the dough out flat with your hands until it's about ¾ inch thick. If the dough sticks to your fingers, sprinkle a little flour on the top and bottom. If it's too dry (not holding together), add a splash or two of milk or water.
  • Using a cookie cutter (any shape) or upside-down drinking glass, cut out biscuit rounds. Gently press together the scrap dough and cut another biscuit or two, taking care not to over-handle the dough.
  • Place the biscuits on an ungreased baking sheet and bake for 10 to 12 minutes, or until lightly browned.

2 cups whole-wheat flour (or whole-wheat pastry flour)
4 teaspoons baking powder
½ teaspoon salt
4 tablespoons butter (cold, unsalted)
1 cup milk (any kind)

Steps:

  • In a medium sized bowl combine the dry ingredients. Mix well with whisk or fork.
  • Cut the ½ stick butter into little pea sized pieces and then mix the pieces into the flour mixture.
  • Using a fork or pastry blender, try to mash the butter pieces as you mix it together with the flour until the mixture resembles coarse crumbs. It is okay if the outcome just looks like the same pea sized pieces of butter covered with flour.
  • Then pour in the milk and mix it all together. Knead the dough with your hands 8 to 10 times (for best results do not over-knead the dough) and then turn out onto a floured surface (like a counter or cutting board).
  • Pat it out flat with your hands until the dough is a somewhat even ¾-inch thickness (sprinkle with a little flour if necessary).
  • Turn a drinking glass upside down and cut out biscuit rounds. I have also used shaped cookie cutters (like a heart or star) if you have little ones helping you!
  • Then place biscuits on an ungreased baking sheet or in a cast iron skillet and bake at 450 degrees for 10-12 minutes or until golden brown. Enjoy!

2 cups Self-rising white flour

Steps:

  • Preheat your oven to 400 degrees. Combine 2 cups of flour and 2 cups of heavy whipping cream. Stir until mixed. Scoop out onto the floured countertop and knead 10-12 times. Sprinkle with flour so the dough is not sticky, as needed. Then roll out the biscuit dough 1/2 inch thick with a floured rolling pin. Cut out the biscuits and place them on a greased cookie sheet. Bake for 15-20 minutes or until light golden brown. Serve with butter, jam, or honey. Enjoy. They will melt in your melt, I promise.
  • If you only have Bread FLOUR: You can use bread flour but you will have to add 1-1/2 teaspoons of baking powder and 1/4 teaspoon of salt to EACH CUP of flour. This recipe calls for 2 cups of flour so you would add 3 teaspoons of baking powder and 1/2 teaspoon of salt to the recipe.
