The waffles are very good without the blueberries, but hey, why not shoot the works? Should I mention that this is a healthy breakfast? Baking time is actually however long it takes your waffle iron.

Steps:
- Mix all of the above ingredients together, except blueberries and syrup.
- Bake in a preheated waffle iron.
- Place a blueberry in each of the waffles "cups" and top with syrup.

- In a mixing bowl, mix flours, baking powder, baking soda, salt and sugar.
- Add in the eggs, buttermilk, melted butter and vanilla.
- Gently fold in blueberries.
- Spray waffle iron with Pam.
- Pour approximately 1 cup of batter onto a preheated waffle iron.
- Cook until steaming stops and waffles are nicely browned and crisp.

THE BEST BUTTERMILK WAFFLES
In creating this recipe, we tried out many different methods-folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

Steps:
- Preheat a waffle iron to medium-high.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
- In a medium bowl, whisk together the buttermilk, eggs and vanilla. Whisk the buttermilk mixture into the flour mixture until a batter is formed. Whisk in the butter until incorporated, being careful not to overmix the batter.
- Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. (Take into consideration that the batter will spread once the lid is closed.) Close the iron and cook until the waffles are a deep golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron has a well-seasoned or nonstick surface, it may not be necessary to spray it between each batch.)
- Serve the waffles immediately with butter, syrup, jam, berries or yogurt.
WHOLE WHEAT BLUEBERRY WAFFLES
This is a variation I invented on my easy waffle recipe. It makes a quick, hearty breakfast, and is delicious with fruit syrup. Even with a non-stick waffle iron, I suggest spraying a cooking spray onto the plates between each waffles. Blueberries don't understand the meaning of "non-stick". The blueberries also mess up the auto-sensor on my waffle iron, so they need to come out before the waffle iron thinks they are done--I look to see when they stop steaming.

- Separate the eggs, then beat the whites until they reach the soft peak stage. Set aside.
- sift together the flour, salt, and powder.

WHOLE WHEAT-OATMEAL AND BUTTERMILK BLUEBERRY MUFFINS
We developed this recipe years ago. Just remember to not over-mix the batter once you've added the wet to the dry. And we use Splenda, but you can use sugar. We also use the foil liners for the muffin pans, but use your favorite method. If you chose to use white flour, decrease the buttermilk by 1/4 cup.

- Preheat oven to 400 degrees.
- Prepare muffin pans with foils, papers or grease and flour, whichever you prefer. Rinse fresh berries and set to drain.
- In a large mixing bowl, combine flour, oats, powder, soda and salt using a wire whisk or your (clean) fingers.
- In a smaller mixing bowl, beat the eggs, oil, sweetener and buttermilk together well.
- Pour the wet mixture onto the dry mixture, and add the berries. Gently fold the mixture together, being careful not to break the berries and to just wet all the dry ingredients.
- The batter should be fluffy. Fill the wells in the muffin pans very full. If you only do the typical 2/3rds full, you'll need another half muffin pan to accommodate all the batter.
- Bake about 20 minutes at 400 degrees. If using foils or papers, remove the muffins from the pan as soon as you can. We find if we don't, any berry juice that has seeped out and touches the pan becomes like glue when cool.
